HAWAIIAN TERIYAKI SAUCE



Hawaiian Teriyaki Sauce image

There is regular teriyaki sauce, and then there is Hawaiian Teriyaki Sauce (which is also called Hawaii-Style Teriyaki Sauce and Local Teriyaki Sauce). This Hawaii version is super easy to make, all you need is soy sauce, sugar, and ginger!

1 cup soy sauce
1 cup sugar
2-inch knob of ginger, peeled and grated

Steps:

  • Combine the soy sauce, sugar, and grated ginger in a small saucepan. Bring to a boil, and then simmer for 10 minutes.
  • Remove from heat and pour the sauce into a glass jar. Let cool, cover and store in the fridge. Use as needed (see notes below).

I got this recipe from The Happy Herbivore, and it is excellent. My two children love it! If you use hot sauce cut it back, 1 tbsp will make it very spicy.

1 (15 ounce) can chickpeas, drained and rinsed
1/4 cup teriyaki sauce
1 tablespoon szechuan sauce (optional) or 1 tablespoon hot sauce (optional)
1 tablespoon raw sugar (optional)
1 cup cooked brown rice (or cooked greens)
1 cup mangoes or 1 cup pineapple salsa

Steps:

  • Combine chickpeas, teriyaki sauce, Szechuan sauce, and sugar in a large frying pan.
  • Allow to marinate for at least 5 minutes.
  • Cook over medium heat, stirring regularly, until most of the liquid has absorbed, about 10 minutes.
  • Spoon over cooked rice and top with salsa. (For a lighter dish, you can substitute cooked greens, such as steamed kale, for the rice.).
  • Chef Note: To create your own pineapple/peach/mango salsa mix equal parts chopped fruit with minced red onion, fresh cilantro, and lime juice to taste.

Got this from a friend from my church. This is not a recipe that you would make for dinner unless you have several hours before dinner time. It's well worth the wait and is excellent served over cooked rice.

3 lbs skinless chicken thighs, fat removed (about 8-10 pieces)
1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup sugar
1/2 cup gluten-free soy sauce
1/4 cup vinegar
1 garlic clove, chopped fine
1 1/2 teaspoons fresh ginger, grated
1/4 teaspoon pepper
1 (8 ounce) can crushed pineapple, drained

Steps:

  • Preheat oven to 325°F.
  • Place chicken in a casserole dish.
  • Combine all ingredients (except pineapple) and pour over chicken.
  • Bake covered for 2 hours.
  • Stir several times while baking.
  • Add pineapple just before serving.
  • Serve over cooked rice.
