This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

8 frozen hash brown patties
4 cups shredded cheddar cheese
1 pound cubed fully cooked ham (2 cups)
7 large eggs
1 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon ground mustard

Steps:

  • Preheat oven to 350°. Place hash brown patties in a single layer in a greased 13x9-in. baking dish. Sprinkle with cheese and ham. In a large bowl, beat eggs, milk, salt and mustard. Pour over ham. , Cover and bake 1 hour. Uncover; bake until edges are golden brown and a knife inserted in the center comes out clean, about15 minutes longer.

2 pound(s) shredded frozen potatoes
1 pound(s) shredded colby & monterey jack cheeses
1 can(s) 10 1/2 oz. cream of celery soup (lowfat ok)
1 can(s) 10 1/2 oz. cream of chicken soup (lowfat ok)
1 - onion, diced
4 tablespoon(s) butter, unsalted
pinch(es) fresh ground black pepper & lawrey's seasoning salt

Steps:

  • Preheat oven @ 350 degrees, use 13 x 9 glass baking dish well coated with Canola Oil Spray
  • Mix all dry ingredients together, reserving 1/2 lb. of the cheeses.
  • Wisk both cans of soup together, and gently fold into potato mixture until well blended.
  • Spoon evenly into the baking dish, and spread the balance of the cheese on top.
  • Spot butter evenly over top of casserole, bake for 1 hour or to when cheese becomes light brown at tips
