This is a Rachael Ray recipe. This is so good, I just had to sit down and post it. A few modifications: I used ziti, 2% milk, a mexican blend of cheese and quite a bit of sriracha hot sauce. I omited the thyme, simply because I forgot it. It looks and feels like I'm eating creamy mac and cheese, but its better and more sophisticated...and comforting. I usually shy away from her recipes because they have too many ingredients and take way longer than she indicates. I relented as I had all the ingredients on hand. Yum-O. seriously.

1 lb pasta (macaroni or ziti, recommend hollow, ribbed pasta)
2 tablespoons extra virgin olive oil
1 medium onion
3 garlic cloves, chopped
2 tablespoons thyme
3 tablespoons butter
3 tablespoons flour
1 cup chicken stock
1 1/2 cups whole milk
salt and pepper
1 dash nutmeg
1 (12 ounce) package frozen butternut squash, thawed
hot sauce
1 cup parmesan cheese
1 cup sharp cheddar cheese
fresh parsley
1 dash paprika

Steps:

  • Bring water to a boil, season with salt and cook macaroni to al dente.
  • Preheat broiler and place rack in middle of the oven.
  • Heat the extra-virgin olive oil in a sauce pot over medium heat, saute onions and garlic until soft, 6 to 7 minutes and stir in the thyme.
  • Scoot onions off to side of pan and melt butter, whisk flour into butter and combine whisk 1 minute then whisk in stock and milk, season sauce with salt, pepper and nutmeg, and cook until thickened, about 3 to 4 minutes.
  • Stir in butternut squash and a few dashes hot sauce. Reduce heat. When sauce comes to a bubble, stir in Parmigiano. Combine the sauce and macaroni, transfer to a casserole dish and top with shredded yellow Cheddar, chopped parsley and paprika. Brown the macaroni under broiler, 4 to 5 minutes until brown and bubbly.

This is Rachael Ray's recipe, and it is quite tasty! I am posting it the original recipe, but I used a full box of squash for only half the recipe, reduced the oil significantly, used 1% milk, and added sage rather than nutmeg, as I am not a fan of nutmeg. It still has a very creamy texture, without all the cheese of your regular mac and cheese.

1 lb macaroni
2 tablespoons extra virgin olive oil
1 medium onion, finely chopped
3 garlic cloves, finely chopped
2 tablespoons fresh thyme, finely chopped

3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
salt & freshly ground black pepper
nutmeg, grated to taste
1 (10 ounce) box frozen butternut squash, defrosted
2 -3 dashes hot sauce, a few dashes
1 cup parmigiano-reggiano cheese, grated
1 cup cheddar cheese, grated (sharp)
fresh parsley leaves, finely chopped
1 teaspoon sweet paprika

Steps:

  • Bring water to a boil, season with salt and cook macaroni to al dente.
  • Preheat broiler and place rack in middle of the oven.

Simple Syrup, recipe follows
Crushed graham crackers, for the rim
2 ounces vodka
1 1/2 ounces Granny Smith apple juice
1/8 teaspoon pumpkin spice
1/2 ounce pumpkin beer, or more as necessary
1/2 cup sugar

Steps:

  • Put some simple syrup in one saucer and some crushed graham crackers in another. Dip the rim of a martini glass into the simple syrup and then into the crushed graham crackers. Set aside.
  • Add ice to a cocktail shaker. Add the vodka, apple juice, pumpkin spice and 1/2 ounce simple syrup; shake well. Strain into the prepped martini glass. Top off with the pumpkin beer to just below the graham cracker rim.
  • Combine the sugar with 1/2 cup water in a small saucepan and bring to a light simmer. Cook until the sugar is dissolved, then remove from the heat and let cool completely.

8 slices good quality bacon
Salt
1 pound short-cut whole-wheat or whole-grain pasta
8 thick slices beefsteak tomato
3 tablespoons finely chopped scallions or chives
Freshly ground black pepper
Extra-virgin olive oil, for drizzling
4 slices good quality white bread, crusts trimmed
1 stick butter
A handful flat-leaf parsley, chopped
2 large cloves garlic, finely chopped
1 tablespoon hot sauce
1 1/2 tablespoons dry mustard (recommended: Colman's)
3 tablespoons all-purpose flour
1 teaspoon lemon juice
1 generous tablespoon Worcestershire sauce
1 cup ale
1 cup beef or chicken stock
2 1/2 cups shredded extra-sharp yellow Cheddar
2 bundles or about 4 cups loosely packed upland cress or watercress, trimmed and stemmed and washed

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange 2 cooling racks on baking sheets and arrange the bacon on 1 of them. Bacon may also be baked on a slotted broiler pan. Bake the bacon until crisp, about 12 to 15 minutes. Remove the bacon to paper towels to drain.
  • Bring a large pot of water to a boil over medium heat. Salt the water and add the pasta. Undercook the pasta by 1 to 2 minutes, until just shy of al dente. Drain and set aside.
  • While the water comes to a boil, arrange the sliced tomatoes on the second baking rack. Sprinkle with chives, salt and pepper, to taste, and a drizzle of extra-virgin olive oil. Roast them for about 20 minutes. Switch the oven to broil when you remove tomatoes.
  • Process the bread in a food processor they become coarse bread crumbs. Transfer the bread crumbs to a small bowl.
  • Melt butter in sauce pot over medium heat. Pour 1/3 to 1/2 of the butter over the crumbs to moisten, then stir in the parsley. To the remaining butter in the sauce pot, add the garlic and stir for 1 minute, then add the hot sauce and mustard. Stir to combine, then sprinkle in the flour and cook for 1 minute more. Whisk in the lemon juice, Worcestershire sauce and ale. Cook for 30 seconds, then add the stock and bring to a bubble. When the sauce thickens, stir in 2 cups of the cheese in a figure 8 motion and season with salt and pepper, to taste.
  • Add the pasta with to the sauce and toss to coat. Spoon it into crocks or a casserole dish. Top with the bread crumbs and remaining cheese, then put it on the middle rack of the oven. Broil until bubbly and deeply brown on top, about 2 to 3 minutes.
  • Arrange a bed of cress leaves alongside portions of macaroni and cheese or individual crocks. Top the watercress with a thick slice of roasted tomato and crisscrossed bacon strips. Cover with a second slab of tomato and serve.

4 tablespoons unsalted butter
1/2 cup packed light brown sugar
1/4 cup honey
2 cups granola cereal, any store bought
1 cup crispy rice cereal
1/2 cup raisins
1/2 cup thin pretzel stick
1/2 cup semi-sweet chocolate chips

Steps:

  • In a medium saucepan, combine the brown sugar with the honey and butter. Bring the mixture to a boil over medium-high heat, then lower the heat to medium-low and simmer until the sugar dissolves, about 2 minutes.
  • Remove the saucepan from the heat.
  • Add the granola, rice cereal, raisins and pretzels to the saucepan and fold the ingredients to evenly coat with the sauce.
  • Transfer the granola mixture to a 9-by-13-inch ungreased baking pan and press firmly to evenly fill.
  • Gently press the chocolate chips onto the top of the granola.
  • Let the granola mixture set in the refrigerator until firm, about 15 minutes, then cut into 2 1/4-by 3-inch bars.

I saw this on the 10/25/08 episode of 30 Minute Meals and just had to try it. It was WONDERFUL! Even my husband who isn't the biggest fan of squash in general really enjoyed this. The recipe calls for a 10oz box of frozen butternut squash, but I couldn't find that ANYWHERE I looked so I just bought a butternut squash, halved it, seeded it, and roasted it in a 350 degree oven for about an hour and a half and then peeled it and pureed it. I used about a quarter of it for this recipe, and the rest I'll reserve for butternut squash soup this fall. I thought about using jars of butternut squash baby food, but thought better about it for my first attmpt at this, but after pureeing the squash with a little bit of water, I'm sure baby food would work out just fine in this if you're okay with that.

  • Cook pasta according to package directions.
  • Preheat broiler
  • Heat the olive oil in a sauce pan over medium heat and saute onions and garlic until soft, about 6-7 minutes, stir in the thyme.
  • Scoot the onions off to the side of the pan and melt the butter.
  • Combine the flour and the butter, whisk about a minute in the pan.
  • Whisk in the stock and the milk and season the sauce with salt, pepper and nutmeg, cook until thickened about 3-4 minutes.
  • Stir in the butternut squash and a few dashes of hot sauce.
  • Reduce heat, when the sauce comes to a bubble add in the parmesan cheese and stir to melt.
  • Combine the sauce and the pasta and transfer to a casserole dish (9X13 works well) and top with cheddar cheese.
  • Place the dish under the broiler for about 3 minutes or until cheese is bubbling and browned.
  • Top with the chopped parsley and paprika to garnish.
  • Enjoy!
