HARRINGTON'S FAVORITE HAM AND CHEESE CASSEROLE
I used to get a Harrington's Cob-Smoked Ham from Vermont every Christmas and really looked forward to the delicious leftovers. This was one of my favorite ways to use them.

Steps:
- Spoon cooked rice into greased 3-quart casserole. Layer broccoli over rice. Melt butter in saucepan. Remove 2 T. butter and sprinkle over bread crumbs in a bowl. Set aside.
- Saute onion in remaining 4 T. butter. Blend in flour, salt and pepper. Slowly stir in milk. Cook over medium heat, stirring constantly until thickened. Add ham and heat until bubbly. Pour into casserole. Layer cheese over ham mixture. Sprinkle on crumbs. Bake at 350 degrees for 45 minutes.

Steps:
- Mix bread, ham and cheese in a large mixing bowl with lid, or big ziplock.
- Mix flour and mustard. Sprinkle in the ham mixture and toss.
- Pour into a greased 9x13 dish.
- Pour butter on the mixture and toss.
- Beat eggs with milk and seasonings.
- Pour over dry ingredients.
- Cover and chill at least 4 hours (Overnight is better).
- Bake uncovered at 350 º for 1 hour until puffed and golden. Serve at once.

HAM AND CHEESE CASSEROLE

Steps:
- Preheat oven to 350 degrees F.
- Bring large pot of salted water to a boil.
- Grease 3 quart casserole and set aside.
- In medium saucepan, heat olive oil over medium heat.
- Add onion; cook and stir for 3 minutes.
- Add bell pepper and mushrooms.
- Cook and stir for 3-4 minutes longer until vegetables are crisp-tender.
- Remove pan from heat and let cool for 10 minutes, thin stir in ham and cheese.
- Cook noodles in boiling water until al dente according to package directions.
- Drain well.
- Layer noodles and ham mixture in prepared casserole.
- In small bowl, combine soup with milk and stir until blended.
- Pour over food in casserole.
- Bake for 55-65 minutes or until casserole is bubbly.
