4 celery ribs, chopped
1 medium red onion, chopped
1/2 cup carrot, chopped
1 medium tomatoes, chopped (any variety, I personally prefer Roma)
1/4 cup yellow mustard
1/4 cup Miracle Whip light
1/2 tablespoon red wine vinegar

Steps:

  • Mix all vegetables together in a large serving bowl.
  • Stir in mustard, miracle whip and vinegar.
  • Toss to combine all ingredients.
  • Place bowl in refrigerator and chill before serving.
  • It's a good idea to adjust proportions of dressing (eg. more or less miracle whip) according to personal preferences.
  • Also, try experimenting using different types of vinegar (eg balsamic), mustard (eg. dijon).

This is a great, basic Italian salad and dressing recipe. The recipe was developed by Gwyneth Paltrow, who is not only a great actress but a wonderful cook! Don't forget to steam your green beans first!

1 lettuce head, washed or dried and cut in small pcs. (any leafy green works, but I prefer romaine)
2 scallions, thinly sliced on the bias
1/2 cup cherry tomatoes, halved
3 artichoke hearts, cut into 1/2 inch dice (I usually add a bit more)
4 bocconcini, cut into 1/2 inch dice (small balls of mozzarella)
French haricots vert, 1 large handful (thin green beans)
1 red roasted bell pepper, seeded and cut into 1/2 inch dice (jarred works fine or you can roast your own)
1 tablespoon Dijon mustard
2 teaspoons light agave nectar
5 olive anchovies packed in oil, finely diced
3 tablespoons red wine vinegar
1/2 cup extra virgin olive oil
coarse salt, to taste
fresh ground black pepper, to taste

Steps:

  • Arrange the lettuce on a platter. Scatter the scallions, tomatoes, artichokes, bocconcini, haricots verts and roasted red pepper over the lettuce.
  • Make the dressing:.
  • Whisk together the mustard, agave, anchovies and vinegar. Slowly whisk in the olive oil and season to taste with salt and pepper.
  • Drizzle the dressing over the salad and serve.
  • *Note - not all the dressing needs to be used. Dress your salad lightly or to your preference.

1 head romaine lettuce, leaves left whole
1/4 lb pepperoni, sliced thin
1/4 lb genoa salami, julienned
1/3 cup roasted yellow pepper, drained and sliced into strips
1/3 cup red onion, chopped
1 1/2 cups artichoke hearts, chopped
3 tablespoons red wine vinegar
1/2 cup extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
2 tablespoons grated romano cheese
1/4 cup mixed olive
5 pepperoncini peppers
1/4 cup provolone cheese, cubed

Steps:

  • In a large salad bowl, combine lettuce, pepperoni, salami, roasted peppers, onion and artichoke hearts. Toss everything together to combine.
  • Add vinegar, olive oil, salt, pepper, pepperoncini, Romano, provolone, and olives to the bowl. Toss thoroughly to combine the ingredients.
  • Serve chilled.

TURKISH CHOPPED SALAD

This is my adaptation of a dish that was put on the table when I went to a Turkish restaurant. I would suggest using fresh feta from a Mediterranean/Greek grocer, packaged feta can be overly dry and salty. I also like to make an Italian variation using Ricotta Salata cheese, which is not the soft cheese used in baked ziti but a semi soft cheese made from sheep's milk.This cheese can be found in supermarkets with a good cheese section or at an Italian deli/Salumeria. I prefer not to over dress the salad simply using a little bit of red wine vinegar and a drizzle of olive oil on top. This is great with grilled meats or fish and great for those hot summer days.

1 tablespoon red wine vinegar
1 tablespoon olive oil
2 -3 ripe plum tomatoes, cubed
1 large cucumber, cubed
1/2 red onion, diced
1/4 lb feta cheese
1/4 lb kalamata olive
1 -2 pita bread, cut into triangles (for Italian variation use crusty Italian bread)
1/8 cup fresh Italian parsley (optional)
lemon wedge, as a garnish (optional)

Steps:

  • Chop parsley and set aside.
  • Chop the remaining vegetables, and add them to a bowl.
  • Add olives.
  • Add dressing and parsley, mix thoroughly coating the vegetables.
  • Add additional salt and pepper if you wish.
  • Transfer salad to a platter.
  • Crumble feta cheese on top.
  • Place lemon wedges around platter.
  • Serve with pita triangles (warmed is best).

1 cup small shrimp (optional)
1 cup flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
3/4 cup milk
oil

Steps:

  • Sift flour, baking powder and salt into bowl. Add egg and sufficient milk to make a smooth batter.
  • Stir fish (or prawns) into batter.
