HAND-CUT FRENCH FRIES



Hand-Cut French Fries image

The key to these French fries is to cook them twice. The first time, at a lower temperature, is to cook them through; the second is to get them crispy and golden.

4 russet potatoes
3 cups peanut oil
Ice water
kosher salt
ketchup
hot sauce, Crystal brand preferred

Steps:

  • Slice off about 1/2-inch from the ends of the potatoes. Then cut a thin slice the length of one side, to provide a stable platform while you finish cutting the potato. Now slice the potato lengthwise into 1/2-inch-thick planks, then cut those planks lengthwise into 1/2-inch-wide sticks. Place these fries in a bowl of ice water and agitate them to remove the starch. Rinse, then put in another ice-water bath and agitate again until the water is clear (which means there's no more starch). Spread the fries on a clean dish towel and pat dry.
  • First fry: Pour peanut oil into a cast-iron pot-it should be about 3/4 full. Heat oil to 325 degrees F. Fry in batches until the corners just start to color, about 3-5 minutes. (This "oil blanching" cooks them through.) Remove and let cool to room temperature.
  • Second fry: Heat oil to 375 degrees F. Fry in batches until golden brown and crispy, about 2-3 minutes. Drain on paper towels and season with kosher salt. Serve with ketchup spiked with hot sauce.

BAKED CELERY ROOT FRIES

Oven-roasted celeriac sticks are a lovely accompaniment to your main dish or even alone, just for a snack. The light celery flavor goes well with a spicy homemade ketchup. I tried two different methods to achieve the crispiest fries, and this was the one that I preferred. I served it with homemade harissa ketchup.

½ celeriac, peeled and cut into 1/2-inch sticks
1 tablespoon olive oil
salt and ground black pepper to taste
¼ cup tomato paste
2 tablespoons tomato sauce
1 tablespoon apple cider vinegar
2 teaspoons harissa
2 teaspoons brown rice syrup
¼ teaspoon ground coriander
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
1 pinch fine sea salt
1 teaspoon water

Steps:

  • Preheat the oven to 225 degrees F (99 degrees C). Line a large baking sheet with aluminum foil and place in the oven to preheat.
  • Place celeriac in a bowl; drizzle olive oil over and season with salt and black pepper. Toss fries to coat evenly.
  • Remove baking sheet from the hot oven. Transfer fries to the baking sheet in a single layer with some space between them.
  • Bake in the preheated oven for 20 minutes.
  • While fries bake, combine tomato paste, tomato sauce, apple cider vinegar, harissa, brown rice syrup, coriander, garlic powder, onion powder, and sea salt in a small bowl. Stir to combine until smooth. Add water, 1/4 teaspoon at a time until desired consistency. Set ketchup aside.
  • Remove fries from oven and increase oven temperature to 450 degrees F (230 degrees C). Flip fries and return baking sheet to the hot oven. Bake until crispy, about 15 minutes more.
  • Serve celery root fries with harissa ketchup.

1 teaspoon garlic powder
1 teaspoon ground mustard
1 teaspoon onion powder
1 teaspoon sweet Hungarian paprika
1 teaspoon granulated sugar
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
2 teaspoons kosher salt
4 medium russet potatoes, peeled
Canola oil, for frying

Steps:

  • For the Geechie seasoning: In a small bowl, combine the garlic powder, ground mustard, onion powder, paprika, sugar, salt and pepper.
  • For the chips: Fill a large bowl with water and stir in the salt until dissolved. Thinly slice the potatoes on a mandoline to about 1/8 inch thickness and add to the salted water (see Cook's Note).
  • Drain the potato slices on a baking sheet lined with paper towels or a clean kitchen towel to absorb as much water as possible.
  • In a large Dutch oven, add enough oil to come halfway up the sides (or fill a deep fryer) and heat the oil until a deep-frying thermometer inserted in the oil reaches 365 degrees F. Fry the potato slices in small batches, turning occasionally, until they are golden brown, about 3 minutes. Drain on a baking sheet with a wire rack and sprinkle with the Geechie seasoning while the chips are hot.

3 large Russet potatoes, well scrubbed
24 ounces vegetable, canola, or peanut oil
Sea salt and malt vinegar
Crab boil seasoning (recommended: Old Bay)
Truffle oil
Parsley
Freshly chopped garlic
Hot sauce
Grated Parmesan
Red chile flakes
Fresh herbs

Steps:

  • Leaving the skin on, cut the potatoes into long thin strips and put in a large bowl of clean water to remove some starch, prevent them from sticking together, and stop the oxidizing process.
  • In a cast iron skillet fitted with a thermometer, or a small fryer, heat the oil until it reaches 275 to 300 degrees F. Remove the potatoes from the water and pat dry. Working in small batches, fry the potatoes until they go from shiny to matte, 3 to 5 minutes (this is also called blanching). Drain well on paper towels. Re-heat the oil until it reaches 350 degrees F and fry the potatoes again, also in small batches, until they are golden brown and crispy on the outside but soft and chewy on the inside.
  • Remove from the oil, drain well, and toss with sea salt and malt vinegar, or any other seasoning you prefer. You can also fry fresh herbs such as rosemary, sage, and thyme with the potatoes. Serve hot.

CHICAGO-STYLE HOT DOG WITH HOMEMADE RELISH



Chicago-Style Hot Dog with Homemade Relish image

4 natural casing all-beef franks
4 fresh hot dog buns
1 small white onion, finely chopped
8 jarred sport pickled peppers (or sub pickled hot peppers)
Homemade Bread and Butter Relish, for serving, recipe follows
Yellow mustard, for slathering
Hand Cut Fries with Celery Salt, for serving, recipe follows
1 cup bread and butter pickles, finely diced
1 tablespoon pickled cherry peppers, finely diced
1 teaspoon sugar
Vegetable oil
4 large russet potatoes, scrubbed
Celery salt, for sprinkling

Steps:

  • Set up a large pot with a steamer insert and steam the franks until warm, about 5 minutes. When the franks are almost done, place the buns on top of the franks to steam, 1 to 2 minutes. Place the franks in the buns and top each with some of the onions, 2 peppers, some Homemade Bread and Butter Relish and slather with mustard. To serve, top the franks with a handful of Hand Cut Fries with Celery Salt, wrap each frank in foil and let steam, 2 to 3 minutes, before eating. Eat on the towel-lined trunk of a car.
  • Combine the pickles, peppers and sugar in a bowl and mix well. Serve.
  • Fill a 6-quart heavy pot or Dutch oven two-thirds of the way full with oil. Heat the oil over medium-high heat until a deep-fat thermometer registers 375 degrees F.
  • Cut the potatoes lengthwise into 1/4-inch-thick sticks. Fry the potatoes in batches, until golden brown, 8 minutes per batch. Transfer the potatoes with a slotted spoon to a paper-towel-lined baking sheet. Sprinkle with celery salt and serve immediately.

HAND CUT RUSSET FRIES WITH DIJON AIOLI

1 egg*
1 egg yolk
2/3 cup Dijon mustard
1 tablespoon garlic puree
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup olive oil
1 1/2 cups vegetable oil
3 teaspoons lemon juice
4 large russet potatoes
1 quart peanut oil
1/4 cup chopped parsley
Salt and pepper

Steps:

  • Place the egg, egg yolk, Dijon mustard, garlic puree, salt, and pepper in a food processor fitted with a metal blade and process until well blended.
  • With the processor running, slowly pour in the oils, gradually increasing the amount added as the sauce thickens. As soon as the sauce is very thick, thin with lemon juice, followed by the remaining oil. Place in a medium bowl and check for seasoning, adding more lemon juice, salt and pepper if necessary.
  • Peel potatoes and slice into 1/4-inch slices. Cut each slice in 1/4-inch strips, and rinse in cold water.
  • Heat the oil to 315 to 325 degrees F.
  • In 4 to 5 small batches, blanch the fries for approximately 8 minutes, or until golden brown. Drain on paper towels.
  • When ready to serve, heat oil to 350 to 375 degrees F.
  • In small batches, fry blanched potatoes for 2 to 3 minutes, until golden brown and crispy. Drain well, and toss in mixing bowl with chopped parsley and salt and pepper. Serve with Dijon aioli.

OVEN-ROASTED CHIPS

Try these oven-roasted chips, far less fatty than their fried cousins

6 large floury potatoes, such as Maris Piper, King Edward, Desirée (about 1.6kg)
2 tbsp olive oil
1 tsp celery salt
sea salt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
  • Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
  • Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

Our family loves oven roasted vegetables and one day DH ask if I could make fries for lunch, not having any potatoes in the house I cut a celery root into fries, seasoned and roast. We really enjoy these even if they are not a true French fry.

Steps:

  • Pre heat oven to 425.
  • Clean, peel and cut celery root into fry size (approximately 1/4" x 1/4" x 2").
  • In a large bowl mix olive oil and Cajun seasoning; add celery root and toss till well coated.
  • Bake 30 to 40 minutes flipping ever 10 to 15 minutes to prevent burning on the bottom and promote even cooking.
