4 Yukon gold potatoes
kosher salt
Freshly ground black pepper
2 tbsp. extra-virgin olive oil
1 lb. ground beef
6 slices bacon, cooked and crumbled
1 1/2 c. shredded Cheddar
1/2 c. sour cream
1 tbsp. chopped fresh chives

Steps:

  • Preheat oven to 350º. Season potatoes with salt and pepper and rub with olive oil. Bake until tender, 1 hour 30 minutes. Raise oven temperature to 450º.
  • Let potatoes cool, then halve lengthwise and scoop out potatoes, leaving 1/4" potato on all sides.
  • Place potato skins facedown and brush with oil. Bake until golden, 10 minutes.
  • Meanwhile, shape ground beef into burgers the same size as buns. Season with salt and pepper and cook until medium, 5 minutes per side.
  • Flip and fill potato skins with bacon and cheese. Return to oven until cheese is melty, 5 minutes.
  • Fill skins with sour cream and chives, then top one with a cooked burger and another potato skin.
  • Serve.

Homemade Potato Skins image

Homemade potato skins are great while watching football or serving at a casual party. There is absolutely no need to deep fry them. As long as the skins are cooked at a high heat, they will be perfectly crispy! After eating these my boyfriend proclaimed, "no need to spend ten bucks at a restaurant anymore!"

6 small russet potatoes, scrubbed
1 tablespoon olive oil, or as needed
1 tablespoon canola oil, or as needed
salt to taste
6 slices center-cut bacon
ground black pepper to taste
½ cup shredded Cheddar cheese, or to taste
¼ cup sour cream, or to taste
2 medium green onions, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Rub potatoes with olive oil and place on a baking sheet.
  • Bake in the preheated oven until tender, about 1 hour. Remove from the oven and let sit until cool enough to handle, about 10 minutes. Increase the oven temperature to 450 degrees F (230 degrees C).
  • Cut potatoes in half lengthwise. Scoop out the flesh, leaving 1/4 inch on the skin. Brush canola oil all over the potato skins, outside and inside, and sprinkle with salt. Reserve flesh for another use.
  • Bake skins in the preheated oven for 10 minutes. Flip and continue to bake for 10 minutes more. Remove from the oven. Turn on the oven's broiler.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Arrange the potato skins flesh-side up on a roasting pan or rack. Sprinkle the insides with pepper, Cheddar cheese, and crumbled bacon. Return to the oven and broil until cheese is bubbly, about 2 minutes. Remove from the oven.
  • Add a dollop of sour cream to each skin and sprinkle with green onions.

Ground Beef- and Corn-Topped Potato Skins image

Super spuds! Stuffed with meat and lots more, these potatoes are a meal in themselves.

2 large baking potatoes
1/4 cup chive-and-onion sour cream potato topper (from 12-oz container)
1/2 lb lean (at least 80%) ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup frozen whole kernel corn
1 can (8 oz) tomato sauce
2 green onions, sliced (about 2 tablespoons)
1 plum (Roma) tomato, chopped
Thinly sliced chives, if desired

Steps:

  • Pierce potatoes with fork; place on microwavable paper towel in microwave oven. Microwave on High 8 to 10 minutes, turning after 4 to 5 minutes, until tender. Let stand about 5 minutes until cool enough to handle.
  • Cut potatoes in half lengthwise. Scoop out about 2 tablespoons of pulp from center of each half; place in medium bowl. Reserve potato shells. Mash potato pulp with fork. Stir in sour cream; set aside.
  • Meanwhile, in 10-inch skillet, cook beef, salt and pepper over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain. Stir in corn, tomato sauce, onions and tomato. Cook 3 to 4 minutes, stirring occasionally, until hot and bubbly.
  • Spoon beef mixture into potato shells. Top each with about 1/4 cup potato and sour cream mixture. Place on microwavable platter. Microwave uncovered on High 4 to 6 minutes or until thoroughly heated. Serve immediately. Top with chives.

BAKED POTATOES
3 large potatoes
olive oil
sea salt
HAMBURGER STUFFING
1 lb ground beef, lean (9% or lower fat content)
6 medium mushrooms
1/2 Tbsp minced garlic
1 can(s) cream of mushroom soup and
approximately 1/4 soup can of milk
1/2 medium onion, chopped
about 1/2 tsp each salt and pepper
MASHED POTATO TOPPING
insides of baked potatoes
2 Tbsp butter, softened
3 Tbsp cream cheese, room temperature
small amount of milk
1 c cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 400 degrees. Clean potatoes. With a fork, poke each potato 3 times on both sides. Generously rub each potato with olive oil then lightly salt entire potato. Place potatoes in oven directly on middle rack. Bake 45 minutes to an hour, or until tender, turn potatoes over ½ way through baking. Baking the potatoes this way will ensure that the skins are crunchy so they won't tear when stuffed.
  • 2. After potatoes are done. Remove them from oven and set aside to cool. Reduce oven temperature to 350 degrees.
  • 3. While potatoes are cooling, in a large skillet brown ground beef and chopped onion on medium heat, breaking ground beef apart into small chunks.
  • 4. Dice the mushrooms into small chunks. Add mushrooms and garlic to cooked ground beef, salt and pepper the mixture. Cook mixture until mushrooms are tender.
  • 5. Mix in cream of mushroom soup and approximately a ¼ of the soup can of milk (to rinse out the remaining soup in the can and thin the soup a little. Add a little more milk if the mixture is too thick to stir easily.). Heat to near boiling then reduce heat to simmer.
  • 6. While the ground beef mixture simmers, slice each potato lengthwise. If possible, try to cut the potatoes so that each half has a flat side so they won't tip over when stuffed.
  • 7. Carefully spoon out the white of the potatoes and place in a mixing bowl. Don't scrape out all of the white, leave a little so that the skins aren't flimsy. Place the skins in a 9.5 x 13.5-inch baking pan and set aside.
  • 8. Add the butter and cream cheese to the potatoes and beat with an electric mixer. Slowly add milk until the potatoes are fluffy and creamy. I test for the correct consistency by taking a spoon full of potatoes and turning the spoon sideways. If the potatoes stick to the spoon, then they're done.
  • 9. Fill each potato skin to the rim with the ground beef mixture. Spoon mashed potatoes on top of each filled potato then top them with the shredded cheese.
  • 10. Bake uncovered for 20 minutes or until the cheese is melted and the mashed potatoes are hot. Sometimes, just before I remove them from the oven, I broil the potatoes to make the cheese a little crispy on top.
