HAMBURGER CASSEROLE
This is a quick and easy way to prepare dinner for the family. It's a hamburger casserole with a Mexican flair. Try it with some shredded cheese sprinkled on top.

Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- In a large skillet over medium heat, combine the ground beef, onion and celery and saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat and set aside.
- In a separate saucepan, cook noodles according to package directions. When cooked, drain the water and stir in the meat mixture, chili, tomatoes, corn, taco sauce, and taco seasoning mix. Mix well and place entire mixture into a 10x15-inch baking dish.
- Bake in the preheated oven until thoroughly heated and bubbling, about 20 minutes.

HAMBURGER CASSEROLE II
These are from a mimeographed, hand bound cookbook given to me by Lioness Joan Nielsen of Marshall, Saskatchewan, about 20 years ago. Marshall isn't quite Alberta, but it's just a few miles east of the border on Highway 16. The book is full of prairie standbys so if you need more, let me know. The can sizes aren't given. Steps:
- Season hamburger with salt and pepper and spread in the bottom of an oven safe 2 quart casserole dish.
- Spread uncooked rice over hamburger.
- Add sliced onions, then sliced potatoes and season with salt and pepper.
- Pour can of tomatoes over all.
- Bake in 350F oven for 1 1/2 to 2 hours.

CHEESEBURGER AND FRIES CASSEROLE II
My original Recipe #221110 is very simple and is a hit with kids especially, but honestly it is not my favorite. I have issues with the flavor of processed cheese (think Cheez Whiz, Velveeta, etc). So I came up with this alternative, which is just as easy as the original, and now I enjoy it too!

Steps:
- Brown ground beef in skillet; drain grease.
- Stir in pepper, garlic powder, mustard, soup mix and water; blend well. Mix in 1 c of the cheddar and the swiss cheese.
- Pour mixture into a 9x13 baking dish; top with french fries.
- Bake 20-25 minutes at 400° until fries are golden brown.
- Top with remaining cheddar cheese and return to oven for 5-10 minutes until cheese is melted.

CHEESEBURGER CASSEROLE
Easy to make cheeseburger casserole, pasta needs no boiling!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Generously grease an 8-cup baking dish. Place baking dish on a cookie sheet.
- Heat a large saucepan over medium-high heat. Cook and stir beef and onions until beef is browned and crumbly, 5 to 7 minutes. Drain off fat.
- Drain liquid from canned tomatoes into a 4-cup measuring cup, adding water if needed, to make 2 1/2 cups of liquid. Add juice, tomatoes, macaroni, corn, bell pepper, garlic, soy sauce, chili powder, Italian seasoning, and pepper to the beef mixture; bring to a boil.
- Pour 1/2 of the beef mixture into the prepared baking dish. Sprinkle with 1 cup of Mexican cheese, add remainder of beef mixture, and sprinkle with remaining cheese.
- Bake, covered, in the preheated oven for 30 minutes. Remove cover and bake for another 15 minutes. Remove from the oven and let sit for 10 minutes before serving.
