GLAZED HAM WITH CHERRY SAUCE
Every time I serve this delicious smoked ham with its festive cherry sauce, I hear rave reviews. The glaze adds an impressive, glossy shine and gives the ham especially nice flavor.

- Place ham on a rack in large roasting pan. Bake, uncovered, at 325° for 3 hours., In a small saucepan, combine the brown sugar, cornstarch and mustard. Stir in cherry juice until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Spoon over ham. Bake 20-30 minutes longer or until a thermometer reads 140°. Remove from the oven; keep warm. , For cherry sauce, in a large saucepan, combine the brown sugar, cornstarch, cinnamon and cloves. Stir in apple juice and vinegar until smooth. Bring to a boil. Cook and stir for 2 minutes or until thickened. Reduce heat. Stir in cherries and food coloring if desired; heat through. Serve with ham.

- Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Score the surface of ham, making diamond shapes 1/2 in. deep. Bake, uncovered, 2 hours., Meanwhile, in a small saucepan, combine preserves, vinegar, brown sugar, water and spices. Bring to a boil. Reduce heat; cover and simmer 3-4 minutes or until sugar is dissolved., Pour 3/4 cup sauce mixture over the ham. Bake 20-30 minutes longer or until a thermometer reads 140°. CLEMENTINE-GLAZED ROAST HAM WITH DOUBLE MUSTARD SAUCE
Delicious glazed ham, served hot or cold, is a treat for any Christmas celebration. Serve with a creamy mustard sauce and golden, garlicky roasted new potatoes.

- Preheat the oven to 150C/130C Fan/Gas 2.
- Put the gammon in a saucepan that fits snugly. Pour in the orange juice - if the juice doesn't cover the ham, top up with water until it's submerged. Add the bay leaves and cinnamon stick and cover with a lid. Bring to the boil and simmer for 5 minutes. Transfer to the preheated oven for about 2½ hours until cooked through. Remove from the oven and leave to cool in the liquid.
- Meanwhile, make the glaze. Put the marmalade in a shallow saucepan with 4 tablespoons of water. Whisk together over the heat until the marmalade is melted and smooth. Add the clementine discs to the pan and gently simmer for 5 minutes, until softened and sticky.
- Increase the oven temperature to 220C/200C Fan/Gas 7.
- Remove the ham from the cooking liquid and sit it on a wooden board. Carefully remove the skin with a small, sharp knife, leaving a thin layer of fat. Score the fat in a diamond pattern with the same knife. Brush the top of the fat with most of the glaze and arrange the clementine slices in the centre of the top in an overlapping circle, securing with cocktail sticks if needed. Sprinkle with the demerara sugar. Brush with a little extra glaze. Sit the ham in a foil-lined small roasting tin and cover the lean meat with foil, leaving the top exposed.
- Return to the oven for 25-30 minutes, checking halfway through until the top is golden and tinged brown. Brush with extra glaze to give a shining finish.
- To make the sauce, mix the two mustards and sugar together in a bowl. Add the remaining ingredients, season and stir to combine.
- Sit the ham on a board, remove any cocktail sticks and carve into slices, serving with the double mustard sauce and garlic potatoes (see tips below).

Braised carrots, a cucumber salad, and some steamed new potatoes sprinkled with chopped fresh dill are good choices to accompany this Swedish-inspired dish. Holiday cookies and mugs of hot apple cider make a happy ending.

- Sprinkle ham generously with pepper. Melt 1 1/2 tablespoons butter in medium nonstick skillet over medium-high heat. Add ham and sauté until brown at edges, about 2 minutes per side. Transfer ham to plates; tent with foil to keep warm. Reduce heat to medium. Add remaining 1/2 tablespoon butter to same skillet. Add shallots and mustard and stir until shallots begin to soften, about 2 minutes. Mix in lingonberries, water and red wine vinegar. Stir until sauce thickens, about 1 minute; season sauce to taste with salt and pepper. Spoon sauce over ham and serve.

- Preheat the oven to 350 degrees.
- Trim the fat from the edge of the ham slice, if necessary.
- Place the ham slice on a rack in a shallow baking pan and bake for 30 minutes.
- In a small saucepan, combine the cornstarch or arrowroot powder and water.
- Stir in the apricot jam, brown sugar, wine, and lemon juice.

- Heat the oven to 220C/fan 200C/gas 7. Put pastry on a baking sheet and score a line about 3cm inside to create a border. With a fork, prick inside the border only. Brush all over with the beaten egg.
- Bake the pastry for 12 mins until well risen. Spread the creme fraiche within the pastry border, season with pepper and return to the oven for a further 8-10 mins.
- Take from the oven when well coloured, drape the sliced ham over, then sprinkle with the parsley. Serve with a roast vegetable or tomato and red onion salad.

- Move the oven rack to the lowest position and preheat oven to 250 degrees F. Remove the ham from its plastic wrapping and discard the plastic disk that is covering the ham bone. Open the plastic oven bag and place the ham, cut-side down, inside of the bag. Place the ham cut-side down inside of a roasting pan. Cut 3 slits into the top of the roasting bag. Bake the ham until an instant-read thermometer inserted into the center of the ham reaches 100 degrees, about 160-200 minutes.
- While the ham comes up the temperature, pour the cherry juice and vinegar into a small saucepan and cook over medium heat until the mixture is reduced to about 2 tablespoons, this will take about 4-6 minutes. Whisk in the brown sugar, cherry preserves, pepper, cinnamon, and cloves and cook, whisking often, until the mixture is thickened and reduced to about 1 cup, this will take about 7-10 minutes. Set aside.
- Once the ham reaches an internal temperature of 100 degrees F, remove it from the oven and increase the oven temperature to 350 degrees F.
