HAM STEAK WITH BARBECUED BAKED BEANS

Steps:
- In 12-inch nonstick skillet, heat oil over medium heat. Cook ham steak in oil 6 to 8 minutes, turning once, until browned and hot. Remove steak to deep serving platter; cover to keep warm.
- In same skillet, cook bell pepper and onion over medium heat 2 to 4 minutes, stirring frequently, until crisp-tender. Stir in beans and barbecue sauce. Heat until bubbly. Pour beans over ham.

My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.

Steps:
- Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
- Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

- Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 3-quart saucepan, heat ham, barbecue sauce, onion and beans over medium-high heat, stirring occasionally, until thoroughly heated. Pour into baking dish.
- In large bowl, stir 2 pouches muffin mix, milk, butter and eggs just until moistened (batter will be lumpy). Spread over ham and bean mixture to edges of dish.
- Bake uncovered about 20 minutes or until toothpick inserted in center comes out clean and cornbread is golden brown.

- Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Transfer beans to a 6-qt. slow cooker. Add ham hocks. - Combine the beans, 3 cups water, the onion, ketchup, maple syrup, brown sugar, mustard, molasses, worcestershire sauce, vinegar, and 1/4 teaspoons pepper in a 6-qt. slow cooker. Set the ham on top, then cover and cook on high 8 hours.
