SLOW COOKER HAM WITH APPLE SAUCE
Slow Cooker Ham with Apple Sauce is a classic holiday dinner main dish recipe or an easy Sunday supper that comes together in the matter of minutes and slow cooks for 5 hours. Producing the most flavorful ham with a delicious apple sauce to serve alongside.

- In a bowl combine ¼ cup brown sugar and ½ tsp ground cinnamon. Mix well and set to the side.
- Peel and dice 3 of the Granny Smith apples. Place the diced apples in the slow cooker, add 1-1/2 tablespoons raisins, and 1 tablespoon of the brown sugar/ cinnamon mixture. Mix well then pour the apple juice over the apples.
- Peel the remaining Granny Smith apple, using a hand-held mandolin slicer cut 10 slices on the thickest setting (about ¼ inch thick). Put the thinly sliced apples to the side. With the remaining apple, dice it and place it in the slow cooker with the other diced apples.
- Place the ham flat side down in the slow cooker (making sure to remove the plastic insert usually found on the flat part of the ham). If your ham is too tall and sticks out of the height of the slow cooker, carefully trim off that piece until the lid can shut close.
- Sprinkle the remaining cinnamon and sugar mixture on top of the ham. Rub the mixture all over.
- Carefully add thinly sliced apples (evenly spaced) to the top and sides of the ham. Secure each apple slice with 1 whole clove each.
- Place the lid on the slow cooker and cook for 5 hours on low.
- Once warm and internal temperatures reaches at least 140 degrees Fahreheit, remove ham from slow cooker and slice. Mix apples together, (strain juice if desired) and place in a bowl. Serve together immediately.

- Shake flour in the oven roasting bag. Place in an ungreased 13-in. x 9-in. baking pan. Place the apples, apple juice, raisins, brown sugar and cinnamon in the bag; mix well. Place ham in bag. - Preheat broiler.
- Score ham slices on both sides 1/8-inch thick to make a diamond pattern.
- Brush ham with 1 tablespoon of the maple syrup.
- Broil for 3 to 5 minutes per side or until lightly browned.
- Meanwhile, in a large skillet, sauté the apples in the margarine for 10 minutes over medium heat.
- Add the brown sugar and the remaining maple syrup.
- Cook for 1 to 2 minutes.
- Spoon over hot ham steaks.
HAM STEAKS WITH APPLE-MUSTARD CHUTNEY

- For the ham steaks: Heat the oil on a cast-iron griddle over medium-high heat. Add the ham steaks and cook until golden brown on both sides, about 4 minutes per side.
- For the apple-mustard chutney: Melt the butter in a medium saucepan over medium-high heat. Add the apple and onion and cook until softened, about 3 minutes. Add the apple cider vinegar, brown sugar, mustard seeds and some salt and pepper. Cook until thickened, about 5 minutes. Serve the chutney over the ham steaks.
SAUTEED OR GRILLED HAM STEAK WITH APPLES

- Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking. Lightly saute, ham on both sides in butter for 3 to 4 minutes a side. Remove ham steak to a plate.
- Add apple and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated. Add the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

- Remove any excess fat from each ham steak.
- Cut the apples into quarters. Cut away and discard the cores. Peel the quarters.
- Use 2 skillets, preferably nonstick, large enough to hold the ham pieces. Heat 1 tablespoon of butter in each skillet. Add 1 tablespoon of shallots to each skillet. Cook briefly, stirring, and add one ham steak to each skillet.
- Arrange one quartered apple around each steak. Spoon half the Madeira over the apples in each skillet. Cover closely and cook 5 minutes. Transfer the ham steaks to a hot platter and arrange the partly cooked apples around or over the pieces of meat.
