- In a large skillet coated with cooking spray, brown ham steaks in batches over medium heat; remove and keep warm., In same skillet, saute onion until tender. Stir in apple juice and mustard; bring to a boil. Add apples. Reduce heat; cover and simmer for 4 minutes or until apples are tender., Combine cornstarch and water until smooth; stir into apple juice mixture. Bring to a boil; cook and stir for 2 minutes. Stir in sage and pepper. Return steaks to skillet; heat through.

- Heat grill. In small saucepan, combine all ingredients except ham steak. Cook over low heat until jelly is melted, stirring occasionally.
- When ready to grill, oil grill rack. Place ham steak on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush with jelly mixture. Cook 8 to 10 minutes or until thoroughly heated, turning and brushing once with jelly mixture. Serve with remaining jelly mixture.

- Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Cover and bake at 325° for 2 hours., Meanwhile, in a large saucepan, combine the cider, honey, vinegar and mustard; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring frequently. Stir in the butter, chili powder and apple pie spice. - Mix together maple syrup, vinegar and mustard in small bowl.
- Brush one side of ham steak with mixture and place glazed side down in skillet over medium heat.

BAKED HAM WITH BROWN SUGAR AND APPLE GLAZE
This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

- Set oven to 325 degrees.
- Place the ham in a roasting pan and bake until a thermometer reads 150F (about 15 minutes per pound).
- Cool the ham completely (you can cover and refrigerate the cooked ham up to 2 days ahead).
- In a saucepan bring the apple cider and dried apples to a boil over medium heat.
- Boil until the liquid is reduced to about 1-1/2 cups (this should take about 8-10 minutes).
- In a small bowl, whisk together the brown sugar, cider vinegar and mustard until well blended.
- Add to the cider mixture; simmer sauce until reduced to about 2-1/4 cups, stirring occasionally (this shoud take about 5-6 minutes) the sauce can be prepared a day in advance and refrigerated.
- Set oven to 375 degrees.
- Cut 1/2-inch slices from the bone, and place into a glass baking dish.
- Spoon the sauce over the slices.
- Bake in the oven until heated through and the sauce bubbles (about 25-30 minutes).
- Transfer to a platter to serve.

- 1. Place ham steak in an ungreased 13 by 9 inch baking pan; set aside. Mix remaining ingredients together and whisk together. Then pour over ham steak. Bake, uncovered, at 350 degrees for 30 minutes, basting often. I cooked mine in an electric skillet. I think I might increase the amount of liquid smoke next time to 3/4 teaspoon.
