CHICKEN & CROUTON CASSEROLE
There are a lot of chicken casseroles out there but this is the best I've ever had. My kids love it too. Freezes well (let thaw and then bake) and works well for a covered dish meal. I like to serve it with cranberry sauce on the side. And as a reviewer suggested, I have heard of people adding chilies to this recipe. I usually broil my chicken. The results are much tenderer than boiling it. Thigh meat can also be used if you prefer.

Steps:
- Combine butter and stuffing.
- Line 2 quart casserole dish with half of it.
- Sprinkle chicken over stuffing.
- Combine sour cream, soup and broth.
- Pour over chicken and top with remaining stuffing.
- Bake at 350°F for 25-30 minutes.
- Tip: I prefer broiled and diced chicken breast.

CREAMY HAM CASSEROLE

- Heat oven to 400°F. Spray 2 (8-inch square) glass baking dishes with cooking spray. Cook and drain noodles as directed on package, using minimum cook time.
- In large bowl, stir together soup, cream cheese and milk. Stir in cooked noodles, ham, broccoli, asparagus and carrots. Divide half of the mixture between baking dishes. In medium bowl, mix mozzarella and Cheddar cheeses. Sprinkle half of the cheese mixture over casseroles. Top with remaining ham mixture. Add croutons to remaining cheese mixture; sprinkle over casseroles.
- Bake uncovered 30 minutes or until lightly browned.

Steps:
- Peel potatoes & slice very thinly.
- Pat dry with paper towels & set aside.
- Melt butter in a small heavy saucepan.
- Remove from heat & whisk in flour.
- Gradually whisk in milk & seasonings, return to heat and stir constantly until thickened, about 10 minutes.
- Remove from heat and add the wine.
- Set aside.
- Assemble in layers in the bottom of a lightly greased ovenproof casserole dish- 1/2 of the ham, 1/2 of the potatoes, 1/2 the onions, 1/2 the sauce and 1/2 the cheese.
- Repeat the layers.
- Cover & bake in a preheated 350°F oven for an hour.
- Remove cover & continue baking for another 15 minutes.

- Melt butter; add Italian seasoning and croutons and brown; reserve a few croutons for topping.

- Pour white sauce over layers and top with reserved croutons.
- Bake at 350 for 30 minutes.
