BLACK EYED PEAS RECIPE (WITH HAM)



Black Eyed Peas Recipe (with Ham) image

Tender ham and black eyed peas simmer in an easy broth!

1 meaty smoked ham hock
6 cups water (or low sodium chicken broth)
1 bay leaf
½ teaspoon thyme
6 slices bacon
1 onion (diced)
2 ribs celery (diced)
2 cloves garlic (minced)
1 green bell pepper (diced)
1 pound black eyed peas (dry)
10 ounces diced tomatoes with chilis (canned)

Steps:

  • Rinse black eyed peas and remove any debris. Place in a bowl/pot and soak 8 hours or overnight.
  • In a large pot, combine ham hock, chicken broth, bay leaf and thyme. Bring to a boil over medium high heat. Reduce heat to a simmer and cover for 60-80 minutes.
  • Meanwhile, in a frying pan, cook bacon until crisp. Remove bacon and set aside. Cook onion, celery and garlic in bacon grease until slightly tender.
  • Add onion mixture, black eyed peas and green bell pepper to the pot and simmer an additional 45-65 minutes or until black eyed peas are tender skimming off any foam.
  • Remove ham hock and cut off any meat from the bone. Add meat back to the pot with canned tomatoes (undrained), salt and pepper to taste. Simmer uncovered an additional 20 minutes or until black eyed peas reach desired consistency.
  • Discard bay leaf, stir in bacon and season with salt and pepper if needed. Serve over rice with greens.

3 tablespoons bacon drippings
1 medium yellow onion, diced
3 stalks celery, diced
3 cloves garlic, minced
6 cups chicken broth, or more to taste
1 (16 ounce) package dried black-eyed peas
2 pounds diced smoked ham
1 (8 ounce) can tomato sauce
2 leaf (blank)s bay leaves
2 tablespoons smoked paprika, or to taste
2 tablespoons chili powder, or to taste
1 ½ teaspoons ground white pepper
1 teaspoon dried oregano
salt and ground black pepper to taste

Steps:

  • Heat bacon drippings in a large pot over medium heat. Cook onion and celery in the hot drippings until softened, 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute. Add chicken broth and peas and increase heat to medium-high.
  • Add ham, tomato sauce, bay leaves, and 1/2 of the following spices: paprika, chili powder, white pepper, and oregano; bring to a boil. Reduce heat to low, cover, and simmer until beans are tender, about 1 hour 45 minutes. Add remaining spices and season with salt and black pepper. Cook, uncovered, for 30 minutes.
  • Remove bay leaves before serving.

1 package (16 ounces) dried black-eyed peas, rinsed and sorted
1/2 pound fully cooked boneless ham, finely chopped
1 medium onion, finely chopped
1 medium sweet red pepper, finely chopped
5 bacon strips, cooked and crumbled
1 large jalapeno pepper, seeded and finely chopped
2 garlic cloves, minced
1-1/2 teaspoons ground cumin
1 teaspoon reduced-sodium chicken bouillon granules
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon pepper
6 cups water
Minced fresh cilantro, optional
Hot cooked rice

Steps:

  • Soak peas according to package directions., Transfer peas to a 6-qt. slow cooker; add the next 12 ingredients. Cover and cook on low until peas are tender, 5-7 hours. Sprinkle with cilantro if desired. Serve with rice.

Similar to hoppin' John, this is a great way to turn your New Year's black-eyed peas into a main dish.

1 (16 ounce) package dried black-eyed peas
1 (8 ounce) bone-in ham steak
3 slices thick-cut bacon
1 medium onion, diced
3 stalks celery, thinly sliced
2 cloves garlic, finely chopped
1 (14.5 ounce) can diced tomatoes, undrained
1 medium lemon, juiced
2 leaf (blank)s bay leaves
2 teaspoons Creole seasoning
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
1 ½ cups chicken broth, or as needed to cover
1 ½ cups warm cooked rice
3 stalks green onions, chopped

Steps:

  • Place black-eyed peas into a large container and cover with several inches of cool water; let soak, 8 hours to overnight.
  • Drain peas. Dice ham and reserve the bone.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Reserve for garnish.
  • Saute onion and celery in the bacon drippings over medium heat until softened and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Drain the bacon fat and transfer vegetables to a soup pot.
  • Add peas, diced ham, ham bone, tomatoes, lemon juice, bay leaves, Creole seasoning, cayenne, salt, and pepper. Cover with chicken broth and bring to a boil.
  • Reduce heat to low and simmer until peas are soft, about 2 hours. Remove bay leaves and ham bone.
  • Serve over warm rice with crumbled bacon and green onions sprinkled over top.

This is a delicious and hearty winter meal. Serve in deep bowls with a big, green salad at table, and lots of crusty bread and everyone will be happy.

1 lb dried black-eyed peas, soaked overnight (keep 2 cups of the bean liquor left in pot after cooking)
1 bay leaf
8 ounces smoked ham, good-quality, cut into dice
1 medium onion, finely minced
2 garlic cloves, finely minced
1 tablespoon olive oil
1 green bell pepper, diced
1 cup tomato ketchup
1 (12 fluid ounce) can Pepsi
1/2 cup maple syrup
1 1/2 teaspoons celery seeds
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
salt and pepper

Steps:

  • Rinse the black-eyed peas with cold running water and discard any stones or shriveled peas. Into a 6-quart Dutch oven, place the peas, bay leaf and enough water to cover, and heat to boiling over high heat. Reduce heat to low. Cover and simmer for 30 to 40 minutes or until peas are almost tender. Drain peas, keeping 2 cups of the liquid. Discard bay leaf. (Can be done up to 2 days ahead to this point. Refrigerate until ready to proceed with recipe.).
  • Saute onion in olive oil, over medium heat, until partially cooked and translucent, 5-6 minutes.
  • Preheat oven to 350°F Empty peas into a 4-quart baking dish and add all remaining ingredients (including onions and reserved bean water). Stir to distribute ingredients evenly throughout casserole. Taste some of liquid and season with salt and pepper to taste.
  • Bake for 40-50 minutes, or until hot and bubbly. The casserole will be quite 'wet' and should be served in bowls. Even better the next day.

2 tablespoons extra virgin olive oil
2 ounces ham or prosciutto, chopped
1 medium onion, chopped
2 cups cooked, canned, or frozen black-eyed peas
2 cups watercress, washed, trimmed, and chopped
Salt and freshly ground black pepper

Steps:

  • Pour 1 tablespoon of the oil into a deep skillet or casserole and turn the heat to medium-high. Add the meat and cook, stirring, for a minute; then add the onion and cook, stirring occasionally, until it softens and begins to brown, about 10 minutes. Add the peas and 4 cups water and bring to a boil; turn the heat to medium-low and simmer, uncovered, until the peas are completely tender--10 minutes for cooked or canned black-eyed peas, about 30 minutes for frozen.
  • Stir in the watercress and cook, stirring occasionally, for just a couple of minutes, or until it wilts. Add more water, if necessary. Taste and adjust the seasoning, stir in the remaining tablespoon oil, and serve.
  • With Minimal effort: The meat can be prosciutto or ham; you can use bacon or pancetta instead, but cook them a little longer. Instead of onion, you can use garlic, leek, or shallots. Black-eyed peas are the traditional choice, but any legume will work perfectly well. For the watercress, substitute arugula or spinach, or any winter green, like kale, mustard, collards, and turnips, all of which will take a little longer to cook--add them to the soup along with the peas. Liquid condiments, like Tabasco or another hot sauce or vinegar, are good here. Increase the amount of meat to 1/2 pound or so (this is especially good with ham), double the amount of greens, and cook the soup until it's thick; you can call it a stew.

1 pound ground beef
1 medium yellow onion, diced
2 cloves garlic, chopped
3 cups cooked black-eyed peas
1 medium jalapeno, diced
1 (10-ounce) can diced tomatoes (recommended: Ro-tel)
1 (10-ounce) can cream of mushroom soup
1 (10-ounce) can cream of chicken soup
1 (10-ounce) can mild enchilada sauce
A few dashes of Louisiana hot sauce
2 tablespoons Essence, recipe follows
1 package corn tortillas
Butter
2 cups grated cheddar
Chopped green onions, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Brown the ground beef in large skillet. Drain the excess grease and the add onion, garlic, jalapeno and Essence. Cook the mixture for 3 to 5 minutes or until the onion has softened. Add the peas, tomatoes, mushroom soup, chicken soup and enchilada sauce. Add a few dashes of hot sauce. Simmer until warm, about 10 minutes.
  • Preheat oven to 350 degrees F.
  • Tear the tortillas into large pieces. Grease the bottom of a large casserole dish with butter and then line the bottom with the torn tortilla pieces. Spoon on the ground beef mixture into a thin layer and then add a layer of cheese. Add another layer of tortillas and repeat with the beef mixture, finishing with a layer of cheese on top. Cover the casserole dish with foil to prevent the cheese from burning and place in the oven. Cook for 35 to 45 minutes. Remove from the oven, cut slices approximately 2 by 2 inches and serve. Garnish with chopped green onion.
  • Combine all ingredients thoroughly.
