CANNED HAM BITES

Number Of Ingredients 12

1 cup all-purpose flour
5 large eggs
1 cup buttermilk
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
20 saltine crackers
4 cups kettle cooked potato chips
1 can chopped pork and ham product (recommended: Spam)
Handful sliced pickles
2 pounds cream cheese
All-purpose flour for hands
Vegetable oil, for frying

Steps:

  • Batter: Combine all of the ingredients in a medium mixing bowl.
  • Breading: Pulse the crackers and potato chips in a food processor until finely ground. Transfer the mixture to a shallow bowl.
  • Filling: Cut the canned meat into chunks and put it into a food processor with the pickle slices. Pulse until the mixture becomes chunky. Do not overmix.
  • Roll pieces of the cream cheese into 1 1/2-ounce balls with floured hands to avoid sticking. Fatten each ball with the palm of your hand. Portion out the meat mixture to match the amount of cheese balls. Put a portion of the meat into the middle of a cheese ball and fold the cheese over the meat to enclose. Once you have a ball formed, dip it in the batter and then roll it in the cracker mixture. Repeat with the remaining cheese balls and meat.
  • Heat about 1-inch of vegetable oil in a frying pan over medium heat. Gently fry the bites, in batches, until golden brown. Remove them from the oil to a serving platter and enjoy!

What could be better than soft pretzels with ham and cheese inside. Consider a mustardy dipping sauce. However, they are great all alone.

Number Of Ingredients 7

2 tablespoons brown sugar
1 cup warm milk (110-115F)
2 1/2 cups flour
warm milk, mixture
1/4 ounce instant dry yeast
1/2 cup ham, finely chopped (or slices)
1/2 cup mozzarella cheese, finely shredded (or slices. Use another if you want to do so)

Steps:

  • Combine milk and brown sugar in a bowl and stir til sugar is dissolved.
  • Add flour and .25 oz instant dry yeast.
  • Stir until a soft dough forms. Add more flour as needed (up to 1/2 cup).
  • Turn the dough out onto a lightly floured surface and gently knead a few times, forming a smooth ball.
  • Brush the inside of a large clean bowl with olive oil. Transfer the dough to the bowl and cover tightly with plastic wrap. Alow it to rise in a warm, draft-free area for about 2 hours, or until the dough has doubled in size and bubbles appear on the surface.
  • Turn the dough onto a lightly floured surface. Divide it into 4 equal pieces. Lightly dust a rolling pin with flour and roll each piece of dough into roughly a 12x4-inch rectangle.
  • With the long sides facing you, place the ham topped by the cheese onto the bottom third of each piece of dough.
  • Starting with the long edge with ham and cheese, roll tightly into logs.
  • Cut each roll into 12 pieces.
  • Transfer to a silpat (parchment) lined sheet and let them rest for 30 minutes.
  • Preheat oven to 400°F.
  • Bring 6 cups of water to a boil. Add 4 teaspoons of baking soda to the boiling water and reduce the heat to a gentle simmer.
  • Boil the pretzels in batches, cooking for about 20 seconds each and turning once. If you are having casualties, pinch the ends closed just a little.
  • They should look slightly puffed when they are done. Use a slotted spoon to transfer them back to the baking sheet.
  • Bake in the preheated oven until they are puffed and golden, about 15 minutes.
  • Brush with 4 tablespoons of melted butter and sprinkle with 1-2 tablespoons of coarse kosher salt.
  • Best served warm. Or enjoy room temperature.
  • Consider a mustardy dipping sauce.

Steps:

  • Cut crusts from bread slices. With rolling pin, roll out each bread slice to 1/4-inch thickness.
  • Place 1/4 of the ham on each bread slice. Top each with cheese stick; roll up. Place toothpicks at 1-inch intervals, starting 1/2 inch from end. Cut into pieces between toothpicks. Serve with salad dressing for dipping.

3 1/2 cups Original Bisquick™ mix
1 cup milk
12 eggs
2/3 cup grated Cheddar cheese
2/3 cup diced ham
1 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon chopped fresh rosemary leaves, if desired

Steps:

  • Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray
  • In medium bowl, mix Bisquick mix and milk with wooden spoon to form thick dough. Dump out onto floured surface, and use a floured rolling pin to roll it 1/4 inch thick. Cut into rounds with 3- or 4-inch round cutter.
  • Press the rounds into muffin cups. Sprinkle cheese in each cup, followed by a few cubes of ham. Crack the eggs individually into small bowl, then gently slide 1 egg into each muffin cup. Top with remaining cheese and ham. Sprinkle with salt, pepper and rosemary.
  • Bake 20 to 25 minutes or until egg whites are set. Cool in pan 5 minutes, then lift cups out using knife. Serve immediately.
  • Store leftover egg cups in an airtight container in the fridge up to 3 days or in the freezer up to 1 week. Reheat in the microwave.

I got this recipe from my Mom, they are tasty little appetizers. They are made in mini muffin tins. We like to use real bacon bits for this recipe. Watch them disappear!

12 slices bread
3/4 cup mayonnaise
2 cups cheddar cheese, grated or 2 cups monterey jack cheese
1 1/4 cups cooked ham, chopped or 1 1/4 cups bacon bits
1/2 cup green onion, chopped
1 tablespoon lemon juice
1/4 teaspoon hot pepper sauce

Steps:

  • lightly brush mini tart pans with mayonnaise.
  • remove crust from bread, cut each slice into 4 squares, lightly press into tart pans.
  • combine mayonnaise, cheese, onion, ham or bacon, lemon juice and hot pepper sauce
  • spoon into each bread cup, distributing evenly.
  • Bake in 350 degree oven for 15 to 20 minutes until lightly browned.
