Steps:
- Stir both amounts of cranberry sauce, brown sugar, orange juice, orange zest, lemon juice, mustard, honey, and cloves in a saucepan and bring mixture to a boil. Reduce heat to medium and boil until cranberry sauce has melted, brown sugar has dissolved, and the glaze is thickened, 10 minutes.

HAM BALLS IN ORANGE GLAZE

Steps:
- 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. Set aside In a bowl, add the ground ham, pork, onion, mustard, eggs, crackers, salt, pepper and milk - mix well.
- 2. Make balls about the size of a golf ball and place in prepared dish. It's okay if touching.
- 3. Place on oven for 30 minutes or until firm and browning some.
- 4. While ham balls bake, make the glaze. In a dutch oven or large saucepan - mix brown sugar, mustard,cloves and cornstarch. Over medium heat, stir in the orange juice, whisk until well blended and continue cooking until sauce thickens.
- 5. When ham balls are finished baking, drain if need be. Place in the sauce and simmer for 15 minutes.
- 6. Serve hot. I've also prepared these ahead and kept warm for parties in crock pot on low setting.
HAM BALLS IN CRANBERRY-ORANGE SAUCE
I got this recipe out of an old Junior League cook book in my collection. I have never made this, but I am looking forward to giving it a try. Sounds good for the holidays.

Steps:
- Ham Balls: Mix all ingredients for ham balls together and form into 1-inch balls.
- Bake at 375°F for 15-20 minutes.
- Sauce: Mix first four ingredients.
- Stir in cranberry sauce and orange; heat until cranberry sauce melts.
- Pour over ham balls.
- Keep warm in chaffing dish or crock pot.

- Preheat oven to 325°. Line a roasting pan with foil. Place ham on a rack in prepared pan. Bake, covered, 1 hour., Meanwhile, in a small saucepan, whisk remaining ingredients until blended. - To fry the mushrooms, heat the oil and butter in a frying pan over a high heat until the butter is foaming. Add the mushrooms and fry for 4-5 minutes until they're golden.
- To make the sauce, pour in the port or wine to deglaze the pan, then lower the heat and stir in the cranberry sauce until dissolved. Pour in the hot water and fruit juice and sprinkle in the bouillon powder or stock cube. Splash in a spoonful or so of soy sauce and stir well. Turn up the heat and boil the sauce rapidly for a few minutes until it reduces slightly.
- Slide in the ham and heat through for a minute or two. Taste for seasoning and serve.

This is my newest, favorite meatball recipe. If you like a sweet twist, you'll like this one. The meatballs will be slightly pink inside when done because of the pork, so do not overbake them!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
- In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
- Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (73 degrees C).

- Remove skin from ham. Place on a rack in a shallow roasting pan. Combine orange juice and broth; pour over ham. Sprinkle with cloves. Cover and bake at 325° for 1 to 1-1/2 hours. , Combine glaze ingredients; spoon over ham. Bake, uncovered, 20-30 minutes longer or until a thermometer reads 140° and ham is heated through. , Remove ham to a serving platter and keep warm. Strain pan drippings; skim fat. - In a pan of a roasting rack, add about 2 cups of orange juice (cover about 3/4 inches of pan)1 and orange slices from 1 orange. Place foil over the rack and place ham on top. Seal roasting pan tightly with aluminum foil, and bake for about 1 to 1 ½ hours (about 10 minutes per pound), until the center registers 110 degrees F.
- Make the glaze: in a saucepan, combine all ingredients and stir until it boils. Simmer for 10 minutes, until thickened. If too thick, add more orange juice. I you want it sweeter, add 1 to 2 more tablespoons brown sugar. Reserve half for serving.
- Carefully, remove foil. Increase temperature to 400 degrees F. Baste with juices from the pan and brush with glaze, and then bake for 10 minutes, uncovered. Then, baste and brush with glaze and bake again for another ten minutes, until internal temperature reaches 140 degrees F.
