When I want a filling meal that even the kids enjoy, I toss ham and sugar snap peas with Romano cream sauce and pasta. -C.R. Monachino, Kenmore, New York

1 package (16 ounces) fettuccine
2 tablespoons butter
1-1/2 pounds sliced fully cooked ham, cut into strips (about 5 cups)
2 cups fresh sugar snap peas
2 cups heavy whipping cream
1/2 cup grated Romano cheese
1/4 teaspoon pepper

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, heat butter over medium heat. Add ham and peas; cook and stir 5 minutes. Stir in cream, cheese and pepper; bring to a boil. Reduce heat; simmer, uncovered, 1-2 minutes or until sauce is slightly thickened and peas are crisp-tender., Drain fettuccine; add to skillet and toss to coat. Serve immediately.

1 pound dry fettuccine pasta
1 tablespoon butter
6 ounces diced cooked ham
2 cups heavy cream
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium sauce pan over medium heat, melt butter. Stir in ham and cook 1 minute. Stir in cream and heat through. Stir in Parmesan and cook until thick and smooth. Toss with cooked pasta.

Leftover ham, diced and blended into homemade Alfredo sauce. This is a combination of a couple of recipes. I toss frozen broccoli into the hot water with the pasta when it's almost al dente. The kids loved it asked for seconds.

1 lb fettuccine, prepared according to box
3 tablespoons butter
3 tablespoons flour
2 tablespoons dried parsley
1 teaspoon garlic, garne (garlic seasoning blend, or 1/4 tsp garlic powder)
8 ounces cream cheese
8 ounces 2% low-fat milk
1/4 cup grated parmesan cheese
2 cups diced cooked ham
2 cups broccoli
pepper

Steps:

  • Cook pasta according to directions, adding frozen broccoli at the end to heat through.
  • Melt butter in a small skillet or sauce pan over low heat. Stir and blend in flour, to avoid lumps. When completely blended and a thick yellow paste add parsley and garlic seasoning and stir to blend. Cook over low heat 3-5 minutes. Stir in cream cheese until melted. Mixture may appear grain-y. Stir until smooth. Add 1/2 c milk and blend. Add remaining milk and Parmesan cheese and ham and keep warm over low heat until ready to serve. (You may need to add additional milk to obtain desired consistency.).
  • Drain and pour pasta/broccoli mixture into a large bowl. Toss with pasta/ham mixture and top with pepper and additional Parmesan if desired.

1/2 lb cooked ham, cut into 1/2 inch cubes
8 oz spaghetti
2 c broccoli florets
1 jar(s) alfredo sauce
1/4 tsp red pepper flakes
1/4 c grated parmesan cheese

Steps:

  • 1. Cook spaghetti in a 5-quart saucepan according to the package directions. Add the broccoli florets 2 minutes before spaghetti is al dente. (Use the cooking time given on the spaghetti package as a guideline). Drain and keep warm.
  • 2. Add the ham, Alfredo sauce and pepper flakes to the pan and heat over medium heat until warmed, about 1 minute. Return the spaghetti and broccoli to the pan and toss to mix.
  • 3. Spoon onto individual serving plates. Sprinkle with the Parmesan cheese and freshly grated pepper.

6 cups uncooked penne pasta
2 1/2 cups cooked cubed ham
5 cups raw broccoli florets, broken up small
1/4 cup butter
1/2 cup minced white onion
1 1/2 cups half-and-half
1 -1 1/4 cup milk
1 3/4 cups shredded parmesan cheese
1/4-1/2 teaspoon salt
1/4 teaspoon white pepper
1/4-1/2 teaspoon garlic powder

Steps:

  • Cook penne pasta in boiling water according to package directions. During the last 5 minutes of boiling, add the raw broccoli flowerets; drain.
  • Place cubed ham into empty hot pot; pour cooked penne/broccoli mixture over top and gently toss together.
  • While penne is cooking -- melt butter in a medium saucepan over med-low heat; add minced onion and saute until onions are translucent. Do not burn or brown.
  • Keep heat on med-low and add half and half, milk, parmesan, salt, white pepper and garlic powder. Stir frequently until heated through, cheese is melted and smooth.
  • Pour sauce over cooked penne mixture and gently toss to coat.
  • Serve.
