Entered for safe-keeping for ZWT. Posted by Cherihannah on grouprecipes.com, who claims the potato dumplings instead of egg noodles are the "Old Country" way and egg noodles are the (American) Pennsylvanian way. I am still in shock over 1 1/2 cups of butter (3 sticks)!

2 cups mashed potatoes, cooled
2 eggs, well-beaten
salt, to taste
pepper, to taste
1 head of cabbage (medium or large, chopped)
1 1/2 cups butter (or more)
2 large onions, chopped

Steps:

  • PREPARE POTATO DUMPLINGS:.
  • In a large bowl, add mashed potatoes, eggs and blend thoroughly.
  • Add enough flour with a little salt to knead into a soft pliable dough that will not stick.
  • Make into rolls and slice in about 1 inch pieces.
  • Drop dumpling slices into boiling water and boil about 12 minutes. To test for doneness, break one open with fork after you take out of boiling water.
  • Drain in small hole colander. (You can rinse if you prefer. I don't.).
  • SAUTE CABBAGE AND ONIONS:.
  • While boiling the dumplings, sautee (in large fry pan )butter, cabbage and onions until golden brown.
  • Add drained dumplings to fry pan and fry a little longer. Mix it all well while frying but don't overdo so dumplings stay together.

Halusky are Slovak boiled dumplings made with grated raw potatoes, flour, and salt. Whip them up for a tasty side dish or main course.

1 pound bacon (diced)
1 large chopped onion
5 large russet potatoes (peeled and chopped)
2 teaspoons salt
2 1/2 to 3 cups all-purpose flour
Garnish: chopped chives

Steps:

  • Gather the ingredients.
  • Cook bacon cubes in a large skillet over medium-high heat, until browned. If using onion, add it to skillet and fry mixture until bacon is well cooked and onions are transparent, or about 5 to 7 minutes. Set aside.
  • Bring a large pot of salted water to a boil. Meanwhile, add chopped potatoes in a food processor and process until completely puréed.
  • Add salt and flour into potato mixture a little at a time, processing after each addition. The batter is done when a spoon will stick straight up in the dough.
  • Place a third of the thick batter onto a cutting board. Using a knife, scrape about 15 small bits of dough into boiling water.
  • When they all float to the top, remove with a slotted spoon and place in a large colander to drain. Repeat process with all remaining batter on board, and remaining two thirds in food processor.
  • Once all dumplings are cooked, add into large skillet with bacon and combine well. Serve immediately and garnish with chives, if using.

The is from "The Best of Ukrainian Cuisine". I haven't tried it yet. It differs from the halusky recipe in that it doesn't use farina. Times are guesstimates. If you don't have a meat grinder, you can grate the potatoes instead.

1/2 lb potato, unpeeled
1 fresh potato, peeled
1 egg
1 onion, finely chopped
2 tablespoons flour
1 tablespoon oil
1 pinch red pepper
salt, one pinch
melted butter (for drizzling over top)
sour cream

Steps:

  • Be sure to wash the potatoes before doing anything with them.
  • Take the one uncooked, peeled potato. Grind in a meatgrinder.
  • Cook the other potatoes in salted water. Drain, cool, peel and grind them also in the meat grinder.
  • Combine cooked potatoes with fresh potato and egg.
  • Brown finely chopped onion in oil. Combine with flour and stir. Season with salt and red pepper. Mix with the potatoes.
  • Bring at least a quart of salted water to a simmmer. Drop in spoonfulls of the batter. Cook at a slow boil for 8-10 minutes. Remove with a slotted spoon to a colander. Do not overcrowd the cooking water.
  • To serve, put on a plate and drizzle with butter. Pass with sour cream. It can also be served with fried mushrooms to go with meat dishes.

The first time I tried to make them, I didn't realize they were supposed to be small, like gnocchi or spaetzle, and I made them the size of golf balls - we still laugh about it! My kids can eat a whole bowl by themselves - a nice side dish with roast pork.

3 peeled and grated potatoes
1 whole egg
1 pinch salt
1/2-3/4 cup flour
3 -4 pieces bacon, cut in small pieces

Steps:

  • Mix all of the above ingredients together,except bacon, adding just enough flour to make a doughy consistency.
  • Bring a large pot of water to a rolling boil and add 1 teaspoon of salt to the water.
  • Smear potato mixture on a small saucer and flick about one inch pieces into the boiling water.
  • Start with just a few pieces - if they break apart, you need to add more flour to the mixture. If they stay together in the boiling water, cook until they float to the top, then cook another 3-4 minutes.
  • Drain well and put into a casserole.
  • Cook bacon pieces in a small frying pan until crisp, then dump grease and bacon over the top of the kluski - toss to coat.
  • Serve warm with pork and applesauce.

2 (28 ounce) cans Italian plum tomatoes
fresh whole basil
1 -1 1/2 lb hot sausage (ring)

Steps:

  • In large skillet, saute sliced onions and peppers in olive oil until transparent.
  • Add salt, pepper and garlic powder to taste.
  • Chop and blend in a blender, 2 cans of the plum tomatoes, one can at a time.
  • Add whole basil to the sauce.
  • Stir blended tomatoes into skillet of peppers and onions.
  • Prepare sausage "ring" by poking holes in sausage with a fork.
  • Boil sausage "ring" in a large pot of water for approximately 10 minutes.
  • Drain and cut the sausage into 4-inch pieces.
  • Brown the sausage pieces lightly in a frying pan, then add to the sauce.
  • Cook on medium to low heat for about an hour until the sauce acquires a good taste.
  • For a sweeter taste, you may add sugar to the sauce.
  • You can also add provolone or mozzarella cheese - melted of course - to top off your sandwich on sausage rolls.

4 cups mashed potatoes, cold

Steps:

  • Cook potatoes and drain well. Press through a ricer and place in a large bowl. Cool.
  • Combine flour and salt in a large bowl. Mixing well. Make a well in the center of flour and add eggs, one at a time, mixing well until all the eggs are mixed well.
  • Add the riced potatoes and mix until all ingredients are blended real well. If necessary add some water to make the dough pliable if too stiff, this will depend on how much flour you add. (I have found that 4 cups will make a very wet dough, so I add 1/4 cups of flour at a time until the dough feels just right. This is done by feel.****do not make the dough too stiff****.
  • Roll out dough in portions at a time onto floured surface, rolling out into a long log about 1-inch thick.
  • Cut logs into 3/4-inch pieces, rolling slightly to even out.
  • Drop into rolling salted boiling water and cook until paluski float to the top, allowing them to simmer a few minutes. Remove with a slotted spoon and place in a large bowl.
  • Have some melted butter ready to drizzle over the paluski to coat them.
  • You can sauté some onions in butter and toss in with them.

4 1/3 cups flour
1 teaspoon yeast
1 teaspoon sugar
2 teaspoons salt
2 1/2 cups water
2 1/3 cups white chocolate chips

Steps:

  • Place the flour, yeast, sugar and salt in a small bowl, and mix with an electric mixer.
  • Mix on medium-low speed for 1 minute. Add water, and mix another 12 minutes on medium or second speed. Add the chips and mix for an additional 2-3 minutes or until the chips are well distributed throughout the dough.
  • Take dough out of the bowl and lightly knead into a ball. Let rest for 15-20 minutes.
  • Preheat oven to 450 degrees.
  • Cut the dough into 4 portions and knead into the desired form. (Note: These looked like French bread loaves when we saw them on the rack, ready to bake.).
  • Place the loaves on a baking pan lined with parchment paper and bake for approximately 20 minutes or until nicely browned.
