Cinnamon-sugar mixture in shaker
Powdered sugar in shaker
1/3 cup plus 1 tablespoon solid vegetable shortening, in all
1/3 cup sugar
1/3 cup Steen's Pure Cane Syrup
1/3 cup boiling water
1 egg, beaten
1/2 teaspoon baking powder
3/4 teaspoon ground cinnamon
1 teaspoon salt
1 1/2 cups flour
3/4 teaspoon grated nutmeg
1/2 teaspoon baking soda
Sugar-cinnamon topping:
1/3 cup light brown sugar
2 teaspoons cinnamon
3 tablespoons flour
3 tablespoons solid vegetable shortening
1/3 cup roasted pecan pieces
Whipped cream in pastry bag with star tip
Fresh mint sprigs

Steps:

  • Preheat oven to 350 degrees. Grease a 9-inch cake pan with 1 tablespoon of shortening. In a mixing bowl, cream 1/3 cup of shortening, sugar and syrup together. Add the water and mix well. Mix in the egg. Add the baking powder, cinnamon, salt, flour, nutmeg, and baking soda, beating until smooth. Pour the batter into the prepared pan and bake for about 35 minutes or until the cake sets. For the topping: In a mixing bowl, combine the sugar, cinnamon, flour, shortening, and pecans together, mix well. Spread the topping evenly over the baked cake and return to the oven. Bake for 20 minutes, or until the topping melts. Remove from the oven and serve warm. Garnish with whipped cream, mint, cinnamon-sugar mixture, and powdered sugar.

1/2 cup butter, slightly softened at room temperature, more for buttering pan
2 cups flour, more for pan
1/2 cup sugar
2 cups cane syrup, preferably Steen's, more for serving
2 eggs
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup buttermilk
2 teaspoons vanilla extract (optional)
1/2 cup coarsely chopped toasted pecans, for serving
whipped cream, for serving

Steps:

  • Heat oven to 350 degrees.
  • Thickly butter and flour a tube pan, large loaf pan or 13-by-9-inch baking pan.
  • In a mixer, cream butter and sugar together until fluffy.
  • Mix in syrup and eggs.
  • In a bowl, combine flour, salt and baking soda.
  • Add half of this mixture and half the buttermilk to syrup mixture and mix.
  • Repeat, then mix in vanilla, if using.
  • Pour batter into prepared pan and bake 45 to 60 minutes, until springy to the touch.
  • Cool in pan on rack.
  • Serve in slices or squares, with a dollop of whipped cream, a sprinkling of chopped nuts and a drizzle of cane syrup on top.

1 large egg
1 cup Karo syrup
1 cup whole wheat flour
1 cup all-purpose flour
1/4 teaspoon salt
2 tablespoons butter, melted
1 cup boiling water
1/2 teaspoon baking soda
1 cup pecan halves

Steps:

  • Preheat oven to 350°F. Place a 9-inch round metal baking pan in the oven to heat.
  • Beat egg in a large heatproof mixing bowl. Add syrup, white whole-wheat flour, all-purpose flour and salt; mix well to blend. Stir in butter.
  • Combine boiling water and baking soda in a bowl, then pour into the batter; stir just to combine.
  • Carefully coat the preheated pan with cooking spray. Pour the batter into the pan. Top with pecan halves.
  • Bake the cake until a knife inserted in the center comes out with a few crumbs attached to it, 30 to 32 minutes. Cool in the pan on a wire rack for 30 minutes. Serve warm with whipped cream, if desired.

1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 1/2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
1/3 cup sugar
2 eggs (unbeaten)
3/4 cup whole milk
1/2 cup vegetable shortening
1 cup cane syrup (Steen's)

Steps:

  • Combine dry ingredients.
  • Then in a mixing bowl add milk, eggs 1 at a time, shortening & cane syrup.
  • Beat gently only till all ingredients are mixed together (do not overbeat!).
  • Pour batter into bundt pan, tube pan or deep cake pan & bake at 350°F for 30-35 minutes.
