PRETZEL BREAD
Like a pretzel, this bread has a salty brown crust and a tender texture--perfect for sandwiches.

Steps:
- Heat milk and butter until warm (100 degrees to 110 degrees F); the butter will not completely melt. Combine with undissolved yeast and brown sugar in a large mixer bowl. Stir in salt and 2 cups flour, beat for 3 minutes. Gradually add enough remaining flour to make a soft dough. Knead on a floured surface until smooth and elastic, about 8 to 10 minutes. Place in a greased bowl, cover and let rise for 1 hour, or until doubled in size.
- Preheat oven to 400 degrees F.
- Combine boiling solution and bring to a boil. Punch dough down and divide into 2 equal pieces. Form each piece into a tight, smooth ball. Boil each loaf in the solution for 2 minutes, turning after 1 minute. Remove loaves from pot using a slotted spoon and place on a greased baking sheet.
- Brush with egg wash and cut a cross in the top. Bake for 15 minutes then reduce the temperature to 350 degrees F and bake an additional 10 to 12 minutes until the loaves are evenly browned. Remove from pan and cool on a wire rack.

GYPSY BURGER PRETZEL BREAD
The name and recipe came from my journey in the military. I wanted to incorporate flavors that are amazing and everyone in my family loves by using different techniques and textures.

- In a bowl add the ground turkey, pork, lamb and add rosemary, garlic powder, marjoram, white onions chopped and salt and pepper to taste. Make patties 6 oz each.
- Shred the cabbage and make a flour wash with water and flour. Cover the cabbage with the was and fry patties size cabbage.
- In a blender add the cream cheese, sour cream, dill, cucumber, olive oil, and garlic powder. Add salt and pepper to taste.
- Cover lightly with olive oil the vegetables and add feta cheese to the salad.
- Grill the inside of the pretzel bread.
- Put everything together. From top to bottom pretzel, sauce, fry cabbage, salad with feta cheese, patty and mozzarella cheese and bread. ENjoy.
PRETZEL DINNER ROLLS
YUMMY in my Tummy! Are these not the cutest lil buns? Who doesn't love a big ole vender pretzel??? When I came across this recipe I just had to try it, since I'd been looking for one for forever...To have a pretzel bun to put a burger on??? YUM! And of course just to nibble on. Triple D's, Guy, has visited a few diners...

- 1. Don't let this scare you! It's really easy! In a large mixing bowl combine warm water, yeast and sugar. Let stand 5 min or until foamy. Add flour, salt, butter and mix with dough hook until thoroughly combined and pulls away from sides and forms a ball of dough, you may need to add a little more flour, 1/2-1 cup. Cover with towel and set in warm place to rise for approx 1 hour or until doubled in size. Punch down dough and turn out onto lightly floured surface.
- 2. Line 1 baking sheets with parchment paper or foil sprayed lightly with cooking spray. Cut dough into 18 pieces (or 9 for a 'good' hamburger size bun, per the advice of Laurie Sanders a JAP member as well) Shape each piece into a ball. I flatten it between my palms and fold over a couple times then pull sides down and pinch together on bottom until a nice round ball shape is formed. Place pinched side down on sheets. At least 1" apart. Cover with plastic wrap then a towel and let rise 30 minutes or until doubled in size.
- 3. Preheat over to 425. Place racks in middle positions. In a large saucepan, bring water to a boil, add baking soda and lower heat to simmer. Put 3-4 rolls at a time into boiling water seam side down for 30 seconds, then turn over for another 30 seconds. Remove with a slotted spoon to a clean towel. Then place back onto prepared pan.
- 4. With a pastry brush, brush tops and sides of each roll with egg wash, being sure to coat all sides. Top each roll with pretzel salt (I used course sea salt). Then with a sharp knife cut a "X" into the top of each roll. Bake rolls in preheated oven for 15-20 minutes.(20-25 for the larger bun) or until buns reach an internal temp of 170ish
- 5. Eat as is, or serve with burgers,or make your buns long and serve with hot dogs or brats. Chicken breast with caramelized onions and a good honey mustard is great on these on these too. :o)

- In a large bowl, combine the eggs, tomato sauce, 1 cup pretzel crumbs, onion, salt, pepper and garlic powder. Crumble beef over mixture and mix well. Shape into eight 3/4-in.-thick patties. Coat with remaining pretzel crumbs., Grill patties, uncovered, over medium heat for 7-8 minutes on each side or until a thermometer reads 160°. Serve on buns.

- Melt butter in a large frying pan on medium heat; add onion and jalapeno. Cook, stirring occasionally, until onions and jalapenos are soft and slightly caramelized, about 10 minutes.
- In a medium saucepan, melt butter on medium heat. Sprinkle the flour over the melted butter and use a whisk to fully combine. Cook for about 1 minute.
- Place ground beef in a large bowl and add salt, pepper, and Worcestershire, and use your hands to combine. Form into 6-8 burger patties.
- Spread butter on the inside of the top and bottom of the pretzel buns, and place the buns butter side down in a frying pan or the grill. Toast on medium-high heat until the buns reach a golden brown color inside, about 1-3 minutes.
