2 cups water
1 1/2 cups chicken stock
2 cups rice
1 cup chopped Italian parsley
1/2 cup chopped cilantro leaves
4 tablespoons minced garlic
1/4 cup freshly squeezed lime juice
2 tablespoons extra-virgin olive oil
Kosher salt, to taste
2 teaspoons freshly ground black pepper

Steps:

  • Add water, chicken stock and rice to a rice cooker. Cook until al dente.
  • Combine all other ingredients in a bowl.
  • Remove rice from cooker and toss, separating with fork. Once rice is separated, slowly add the blended mixture.
  • Rice can be served hot or cold.

The only other person I know of to use this technique to make fried rice is the food writer M.F.K. Fisher. It may seem as if the eggs would stick to the rice and vegetables, but they don't. You can make the fried rice without the pork. Although the recipe specifies short-grain rice, I prefer to make this with long-grain. Prep time includes marinating time.

1/4 cup soy sauce
1/4 cup oyster sauce
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 tablespoon sesame oil
1 lb pork tenderloin
1/4 cup sweet and sour sauce
4 tablespoons canola oil
1 tablespoon minced fresh ginger
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1 cup diced red onion
1/2 cup thinly sliced green cabbage
1/2 cup thinly sliced snap peas
1/2 cup peeled diced carrot
1/2 cup diced celery
1 tablespoon minced garlic
6 cups short-grain white rice, cooked and cooled
3 eggs, beaten
1/4 cup soy sauce
1/4 cup oyster sauce
1 tablespoon sesame oil
1/2 cup chopped green onion
2 tablespoons toasted sesame seeds

Steps:

  • Combine soy sauce, oyster sauce, ginger, garlic, and sesame oil in a medium bowl.
  • Add pork.
  • Cover and marinate for 1 hour in the refrigerator.
  • Heat grill to medium-high, and grill pork on both sides until done.
  • Heat remaining marinade to 165 degrees F and use to baste meat as it cooks.
  • When meat is almost cooked through, glaze both sides with sweet and sour sauce and let finish cooking while sauce caramelizes on meat.
  • Remove from grill and allow to stand for 10 minutes.
  • While pork is standing, heat oil in wok or large skillet on high heat until oil almost begins to smoke.
  • Add ginger and all vegetables except garlic.
  • Cook for 3 minutes, or until vegetables are cooked, then add garlic.
  • Before garlic browns, add rice and mix rapidly so rice does not stick to sides of wok or pan.
  • Pour beaten eggs over rice and vegetables.
  • Toss again rapidly until all egg is cooked.
  • Add the soy sauce, oyster sauce, and sesame oil and mix thoroughly.
  • Cut pork in 1/2" pieces and stir inches.
  • Garnish with green onions and sesame seeds.

GUY'S SPICY SPANISH RICE

1 red bell pepper
1 poblano pepper
1 jalapeno pepper
1 serrano pepper
1 ear corn, shucked
1 tablespoon canola oil
1 yellow onion, diced, about 1 cup
1/2 yellow bell pepper, seeded, ribs removed and diced
1 chayote squash, peeled, seed removed and diced
1 teaspoon salt
1 teaspoon freshly cracked black pepper
1/2 teaspoon cayenne pepper
6 cloves garlic, minced
2 cups basmati rice
5 cups chicken stock
1/4 cup roughly chopped Spanish olives
1/2 cup canned black beans, rinsed and drained
1/2 cup diced tomatoes
1/3 cup freshly chopped cilantro leaves

Steps:

  • Heat the grill or broiler to high.
  • Arrange the red bell, poblano, jalapeno, serrano and corn on the grill or under the broiler. Char, turning frequently, until the peppers have blistered and corn is starting to brown slightly. The smaller peppers will finish first, as they do, transfer to a small paper bag and close. Let the peppers sweat and cool, then remove the seeds and skin and dice. Cut the corn kernels from cob. Add the peppers and corn to a small bowl and stir to combine. Set aside.
  • In a large Dutch oven, heat the oil over medium-high heat. Add the onion, yellow bell pepper and chayote. Saute until just starting to caramelize. Season with salt, pepper and cayenne. Stir in the garlic and rice and saute for 3 to 4 minutes. Add the chicken stock, cover and cook for 10 minutes. Stir in prepared peppers and corn, the olives, black beans and tomatoes. Cook until the rice is tender, about 6 to 8 minutes.
  • Turn off the heat, add the cilantro and adjust seasonings, if necessary. Transfer to a serving bowl and serve immediately.

SPICY SHRIMP AND PINEAPPLE FRIED RICE

1 pound medium (21/25 count) shrimp, shells and tails removed, deveined, halved lengthwise, then crosswise
2 tablespoons Ginger-Garlic Paste, recipe follows
2 teaspoons sambal oelek (Asian chile-garlic sauce)
1/2 cup soy sauce
1 teaspoon cornstarch
3 large eggs
1 teaspoon soy sauce
Peanut oil
3 tablespoons peanut oil
1/2 medium yellow onion, diced
1/4 cup finely diced celery
1 tablespoon Ginger-Garlic Paste, recipe follows
2 tablespoons toasted sesame oil
4 cups cold cooked white rice
1/2 cup frozen peas, thawed
1/2 cup frozen shelled edamame, thawed
1 cup diced fresh pineapple
1 cup bean sprouts
1/4 cup soy sauce
2 tablespoons sambal oelek
3 scallions, chopped
1/2 cup garlic cloves, peeled
1/2 cup fresh ginger, broken into broken pieces
2 tablespoons canola oil

Steps:

  • For the shrimp: In a large bowl, combine the shrimp with the soy sauce, Ginger-Garlic Paste, sambal and cornstarch. Mix well to coat the shrimp. Cover and refrigerate for 15 minutes.
  • For the egg crepes: In a bowl, whisk together the eggs, soy sauce and 1/4 teaspoon water. Set a medium nonstick skillet over medium-low heat and coat it lightly with peanut oil. Pour in half the egg mixture and swirl the pan so the egg coats the bottom. Cook over low heat until firm, then carefully turn with a spatula and finish cooking on the other side, about 45 seconds per side. Transfer the egg crepe to a plate to cool. Repeat with remaining egg mixture. When the crepes are cool enough to handle, stack, roll and slice them into thin julienne strips. Set aside until ready to use.
  • For the fried rice: Set a large wok or large nonstick skillet over high heat and swirl in 1 tablespoon of the peanut oil. Add the marinated shrimp and stir fry until slightly pink, about 2 minutes. Transfer the shrimp to a plate and set aside. Reduce the heat to medium and add the remaining 2 tablespoons peanut oil. Add the onions, celery and Ginger-Garlic Paste and stir fry until softened and fragrant, about 3 minutes. Add the sesame oil and the rice and stir fry until hot and a little crispy, about 2 minutes, breaking up the rice with a wooden spoon as you go. Fold in the peas, edamame, pineapple and bean sprouts and continue to stir fry until the vegetables heated through, about 2 minutes more. Stir in the soy sauce and sambal. Fold in the cooked shrimp and the sliced egg crepe. Transfer to a serving platter and garnish with chopped scallions.
  • Pulse the garlic and ginger in a food processor. With the processor running, stream in the canola oil and process to a paste. (You'll need 3 tablespoons of the paste for the above recipe. Refrigerate remaining paste for up to a week.)

GUY'S RIGHTEOUS RIBS

12 lbs pork spareribs, st louis style-cut
1 cup light brown sugar
1 tablespoon kosher salt
2 teaspoons kosher salt
4 teaspoons chili powder
4 teaspoons garlic powder
4 teaspoons onion powder
4 teaspoons paprika
2 teaspoons cumin
1 teaspoon white pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cloves

Steps:

  • Preheat oven to 275 degrees F.
  • Begin by trimming the ribs of any excess fat or sinew. Remove the thin membrane from the back of the ribs and discard. Make the rub by combining the brown sugar, salt, chili powder,garlic and onion powder,paprika, cumin, white and cayenne pepper and cloves in a mixing bowl.
  • Set out large sheets of foil9one set for each slab). Place one rack on each sheet and divide the dry rub between each slab. Rub the mixture into the ribs on both sides, and then fold the foil over to form a sealed pouch around each rack. At this stage make sure each rack is meat-side down. Place each pouch on a roasting tray and bake in the oven for 2 hours.
  • After 2 hours, open up the foil and peel back so the ribs are exposed. Carefully turn the meat over so the meat side is on top.
  • Brush the top and bottom of the racks with a generous amount of Root Beer BBQ sauce or whatever sauce you wish. Cook racks for 1 1/2 more hours with the foil open. When done, the ribs will be tender and the meat will have shrunk back from the bones. Remove from oven, cut into portions, serve with extra BBQ sauce.

3 tablespoons oil, divided
1 egg, beaten
1 cup onion, chopped
1 red pepper, chopped
1 tablespoon garlic, minced
1 tablespoon red curry paste
1 lb boneless pork, cut into small pieces
2 tablespoons fish sauce
1 teaspoon brown sugar
4 cups cooked rice, cooled
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh basil, chopped

Steps:

  • In a large skillet or wok, heat one tablespoon of oil over a medium high heat. Add egg and cook until barely set. Scramble into small pieces and set aside.
  • Add remaining oil, onion, red pepper, garlic and Red Curry. Stir-fry until onion is translucent and curry dissolved.
  • Add pork, Fish Sauce and sugar. Stir-fry until pork is no longer pink. If using leftover pork, stir fry until hot & sugar dissolved.
  • Add Jasmine Rice and reserved egg to skillet. Toss lightly to combine and stir-fry until rice is heated through. Mix in cilantro or basil, and serve.

This is a fried rice that I have been making for a long, long time. You can add whatever you want to this basic recipe. We like it as is, but you may add chicken, shrimp, pork, or beef. Also, you may add scallions instead of onions, two eggs instead of one, grated carrots or zucchini or more mushrooms. You may add canned bean sprouts or sliced green pepper if you want. It is so versatile. If you add a lot of extras, you may need more soy sauce and brown sauce. This is the basic recipe.

2 cups cooked rice (white or brown)
1 large onion (diced)
3 large mushrooms (diced)
1 egg (scrambled)
1 cup pork or 1 cup beef

Steps:

  • Measure leftover rice and set aside.
  • In a large pan put a little oil and add the chopped onions; cook on low heat till just about done; push aside.
  • Add the chopped mushroom and cook just a couple of minutes.
  • Any extras you may add at this time--frizzle a little.
  • Add the beaten egg and scramble till done and then chop up in the pan till fine.
  • Add the soy sauce and brown sauce and stir well.
  • Add the meat.
  • Heat through and serve.
