Turkey Pumpkin Chili is the perfect Fall dish made with ground turkey, tomatoes, canned pumpkin, white beans and spinach.

Number Of Ingredients 20

1 large yellow onion (diced (about 2 cups))
1 medium bell pepper (red, yellow, or orange, diced)
6 garlic cloves (minced (or 3/4 teaspoon garlic powder))
1⅓ pounds ground turkey or chicken (90 to 93 percent lean)
One 15-ounce can white beans (drained and rinsed)
One 28-ounce can diced tomatoes with liquid
¼ cup tomato paste (no salt added)
One 14-ounce can pumpkin puree
1 cup reduced-sodium chicken or vegetable broth
2 tablespoons chili powder
1 tablespoon cocoa powder
1½ teaspoons ground cinnamon (or 1 tablespoon pumpkin pie spice)
2½ teaspoons ground cumin
1 teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper (optional)
4 cups baby spinach leaves
Avocado (optional)
Sour cream or Nonfat plain Greek yogurt (optional)
Cilantro (optional)

Steps:

  • Liberally coat a large pot or Dutch oven with oil spray and warm over medium-high heat.
  • Add the onion and bell pepper and sauté, stirring occasionally, for about 7 minutes, or until the onion softens.
  • Add the garlic, stir everything together, and cook until fragrant, about 30 seconds.
  • Add the ground turkey or chicken. Use a spatula or large spoon to break up the meat as it cooks. Continue to cook about 6 to 7 minutes, until fully cooked.
  • Add the beans, diced tomatoes, tomato paste, pumpkin puree, broth, chili powder, cocoa powder, cinnamon (or pumpkin pie spice), cumin, black pepper, and optional cayenne pepper, and stir.
  • Reduce heat and simmer for 20 to 30 minutes, stirring occasionally.
  • Right before serving, add the spinach and mix throughout.
  • Enjoy the chili with desired toppings, such as avocado, nonfat plain Greek yogurt, cilantro, and salsa.

1 tablespoon vegetable oil
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped yellow bell pepper
1 clove garlic, minced
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
2 cups pumpkin puree
1 ½ tablespoons chili powder
½ teaspoon ground black pepper
1 dash salt
½ cup shredded Cheddar cheese
½ cup sour cream

Steps:

  • Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.

1 pound ground turkey
1 medium sweet yellow pepper, chopped
1 medium onion, chopped
3 garlic cloves, minced
2 teaspoons olive oil
2 cups chicken broth
1 can (15 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) pumpkin
1 can (15 ounces) tomato sauce
4 medium tomatoes, chopped
2/3 cup chili sauce
3 tablespoons brown sugar
1 tablespoon dried oregano
1 tablespoon dried parsley flakes
1 teaspoon dried tarragon
3/4 teaspoon salt
3/4 teaspoon pepper
Dash crushed red pepper flakes
Dash cayenne pepper

Steps:

  • In a Dutch oven, cook the turkey, yellow pepper, onion and garlic in oil over medium heat until meat is no longer pink, breaking turkey into crumbles; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 1-1/2 hours or until chili reaches desired thickness.

1 ½ cups chopped yellow onion (about 1 medium onion)
1 cup chopped poblano chile (about 1 large chile)
1 pound ground turkey
1 tablespoon minced garlic (about 3 garlic cloves)
1 tablespoon chili powder
2 teaspoons smoked paprika
2 teaspoons ground cumin
½ teaspoon dried oregano
½ teaspoon cayenne pepper (optional)
2 cups chicken broth
1 cup canned pumpkin (from 1 [15-ounce] can)
1 (15-ounce) can fire-roasted crushed tomatoes
1 (15-ounce) can pinto beans, drained and rinsed
1 (15-ounce) can navy beans, drained and rinsed
1 ½ teaspoons kosher salt
1 tablespoon fresh lime juice (from 1 lime)
Toppings: chopped fresh cilantro, tortilla chips, shredded Mexican cheese blend, sour cream

Steps:

  • Heat oil in a large Dutch oven over medium-high. Add onion and poblano; cook, stirring occasionally, until softened and lightly browned, 6 to 7 minutes. Add turkey, stirring to crumble; cook until no longer pink and starting to brown, about 5 minutes. Stir in garlic, chili powder, paprika, cumin, oregano, and cayenne (if using); cook, stirring constantly, until fragrant and turkey is coated in spices, about 1 minute.
  • Stir in broth, pumpkin, tomatoes, pinto beans, navy beans, and salt. Bring to a boil over medium-high. Reduce heat to medium-low and simmer, stirring occasionally, until thickened slightly, about 5 minutes. Stir in lime juice.

It's a great base with lots of options to spice it up depending on the crowd you're cooking for! I usually put everything together in the morning and let it simmer all day; cooking time can be adjusted to fit your needs.

Steps:
