Pot Roasted Guinea Fowl With Calvados Cream and Apples image

a delia smith recipe featured in the dec 2009 sainsburys magazine, i collect cook books, ive got her how to cook and i still go back to it cos although i can make you vegan cupcakes, setain, roast pheasant, barley and porcini muchrooms and risottos, i always forget how long to cook my egg for, she makes it perfect every time. this was published in mag as an alternative at xmas

1 free range guinea fowl (plump)
1 tablespoon butter
2 tablespoons calvados
2 shallots (peeled and finely chopped)
1 garlic clove (chopped)
3 cox's apples (medium sized unpeeled)
175 ml dry cider
1 teaspoon sage (chopped, plus a few extra left whole)
150 ml double cream (or creme fraiche)
salt
pepper

Steps:

  • heat butter in a large deep saucepan (that has a tight fitting lid for later) on medium heat until it starts to foam, season bird and and brown in hot butter turning the bird using a cloth to protect your hands.
  • at this stage when bird is sitting upright again, warm calavdos in a ladle over a direct heat, turn flame out and set to light the warm calvados using a long match and pour over the guinea fowl.
  • when flames have died down add shallots and garlic anmd keeping heat low let them soften whilst you prepapre apples .
  • remove cores form apples and cut into 1cm rings, asd you slice them add to the pan tucking them all around.
  • now pour in the cider, add teh chopped sage and some seasoning, put on tight lid and let it cook very gently for one hour.
  • When the bird is cooked remove and take to carving board and cover, simmer apples til liquid has almost evaporated, then add the cream the apples giving it a good shake, then turn heat off.
  • crave guinea folw and arrange on serving platter, spoon the apples and a few sage leaves to garnish.

I found this recipe as a comment on a blog that was describing how to ripen green bananas. Sometimes they are just TOO green so I plan on trying this soon. The poster went by "Kat" But then I noticed she had THREE cups of oil so I looked this up online (my Spanish skills came in handy!) and adjusted it a little. yield and time is approximate

2 lbs bananas, bright green unripe -about 10 green bananas (the greener the better)
2 large onions, sliced into thin rings
1/2 cup white vinegar
3 -4 garlic cloves, crushed
10 -12 olives, green (stuffed with pimiento if desired)
1/2 teaspoon salt
10 -12 whole black peppercorns
3 -4 bay leaves
1 cup olive oil or 1 cup light olive oil
salt and pepper

Steps:

  • Cut the banana with a knife by cutting off the ends of the bananas and making a cut alond the outside curves of the banana skins, but DO NOT remove the skins.
  • Place the bananas in boiling water and add 1 to 2 tablespoons of salt and 2 teaspoons of oil to make them peel easier. Boil the bananas for approximately 20 minutes on medium-low heat. If you boil them too long they will come apart.
  • While the bananas cook, make the Escabeche sauce by placing all the rest of the ingredients into a pot. Stir them well and place on medium heat until the mixture gets hot. Then reduce the heat to low and cook for approximately 1 hour. (Other recipes said to cook only until the onions got soft.) Remove from heat and set aside to cool to room temperature.
  • The banana is done when you lightly stab it with a toothpick and it is tender but firm. Peel off the skins and cut the bananas in 1 inch size rounds and put them in a glass or "Tupperware" bowl. Add the sauce to the bananas. Stir and mix well. Cover them and let them cool off. After they cool off place them in the refrigerator for 2 hrs or longer -- the longer the better. Serve and eat.

  • Peel and slice the bananas at a slight bias about a 1/2 inch thick. Bring a large pot of heavily salted water to a boil. You should be able to taste the salt in the water. Lower the heat of the water to a rolling boil. Add the sliced green bananas and boil until fork-tender, about 10 minutes. Fill a large bowl with ice water and set aside.
  • After 5 minutes or so, check the bananas for softness. When they are ready, strain the bananas and place them in the ice water to cool and stop cooking. Strain the bananas again d place them in a non-reactive bowl.
  • While the bananas boil prepare the escabeche marinade. In a medium sized non-reactive pot combine vinegar, olive oil, garlic, onions, and bay leaf, and peppercorn. Bring to a simmer and cook until the onions are tender about 15 mins.
  • Fill the water bowl up again with ice water. Once the onions are soft hold the bottom of the pot in the ice water and stir the escabeche to quickly cool.
