- In small bowl, combine eggs and pepper, whisking to beat well.
- In a 10-inch nonstick skillet, melt butter over medium heat, rotating pan to coat bottom.
- Add egg mixture.
- As eggs begin to cook, gently lift edges with a spatula and tilt pan so uncooked portion flows underneath.
- Cook for 3-4 minutes, or until just set.
- Sprinkle cheese, bacon, sausage and ham evenly onto half of omelet.
- Fold omelet in half.
- Cook for 1 minute, or until cheese is melted.
- Serve immediately.

WALK AWAY FOOLPROOF OMELET WITH DAD'S FILLING

- Whisk the eggs in a bowl with 1 tablespoon water.
- Heat an 8- to 10-inch skillet over medium heat. Add the butter and heat until melted and frothy, about 30 seconds. Add the hot dog and brown for 1 minute. Add the onions and cook for 1 more minute. Add the eggs and swirl around the skillet. Season with salt and pepper. Add the cheese on top of the egg.
- Place the lid on the skillet, turn off the heat and walk away. Make some coffee, have an orange juice, make your toast, read the news, etc. Return in 5 to 7 minutes; the cheese should be melted and the eggs set. Roll up the omelet, place on a plate and serve. Enjoy!

- Have a serving plate ready. In a medium bowl, whisk eggs until frothy. Season with salt and pepper; whisk in scallions and/or herbs, if using.
- Heat butter in an 8-inch nonstick skillet over medium-high, tilting to coat pan; after foaming subsides, whisk eggs again, and add to skillet.
- Cook, stirring quickly with a heatproof rubber spatula, until eggs begin to thicken, about 30 seconds. With spatula, pull edges of omelet in toward center, tilting pan so uncooked eggs flow to edges of pan and underneath omelet. Cook until just set but still loose, 15 to 30 seconds (omelet will continue to cook once removed from heat).
- Sprinkle with filling. Using spatula, loosen omelet from skillet on all sides; shake pan to ensure it is completely released. Tilt pan toward serving plate; with spatula, working from side of skillet that's tilted up, fold 1/3 of omelet over the center.
- Simultaneously slide and roll omelet onto plate so that it folds over on itself again and lands seam side down. Brush or dab lightly with butter; serve immediately.

Steps:
- Saute green onions and 1 tsp parsley in butter until soft, being careful not to let butter brown.
- Add crabmeat, tossing lightly so as not to break up lumps.
- Season to taste and add lemon juice.
- Prepare basic omelette.
- When eggs begin to set, add crabmeat mixture and turn down heat.
- When omelette is set, fold two sides toward center, over filling.
- Garnish with the remaining parsley.

- Make the ground meat filling: Heat the olive oil in a medium skillet over medium heat and cook the onion, stirring, until softened, 7 to 8 minutes. If using ready carve meat, chop it. Add either the chopped ready carve or ground meat, if using instead, to the onion. Add the tomato and spices, season with salt and pepper, and cook the mixture over low heat, covered, until the meat has absorbed all the pan juices, about 7 minutes for the ready-carve, 20 for the ground meat. Remove and let cool slightly.
- Beat the eggs well in a small bowl. Combine the water with the flour and stir until smooth. Stir into the eggs. Season with salt.
- Have the ground mixture ready and nearby. Heat the olive oil or butter over medium heat in a large nonstick or cast-iron skillet. Pour in half the egg mixture and let it spread to a neat circle.
- As soon as the egg begins to set (the top should still be a little wet), place half the filling in the center and, using a spatula, roll up the omelet so that it forms a cylinder. As soon as the egg browns a little on the outside, remove from the skillet and repeat with the remaining egg mixture and filling. As you do this, keep the prepared omelets covered and in a warm oven. Serve immediately.
