GRILLED ZUCCHINI AND SUMMER SQUASH SALAD WITH BASIL-PARMESAN DRESSING

Steps:
- Prepare barbecue (medium heat). Place zucchini and crookneck squash on large baking sheet; brush all over with 3 tablespoons oil. Sprinkle with salt and pepper. Grill vegetables until tender and brown, turning occasionally, about 10 minutes. Transfer to plate and cool.
- Cut vegetables diagonally into 1-inch-wide pieces. Place in large bowl. Add basil, Parmesan cheese, balsamic vinegar and remaining 2 tablespoons oil and toss to blend. Season to taste with salt and pepper and serve.
BASIL PARMESAN HAMBURGERS
I got a part of this recipe online somewhere, but then I changed it so much that I can officially call it my own now creation! :) They came out very juicy and delicious. Great way to use up those fresh herbs in your garden!

- Combine egg, onion powder, basil, parsley, ketchup, Parmesan cheese, garlic, pepper, salt, olive oil and bread crumbs in a large mixing bowl. Add ground beef, mixing well, but be certain not to over-mix. Shape into eight 3/4 inch thick patties.
- Preheat grill for high heat. Place burgers on grill and reduce heat to medium. Cook for 14 to 18 minutes. When done, remove from grill and serve warm with buns and condiments of choice.

CREAMY PARMESAN DRESSING
A great salad dressing with a nice tangy flavor. The taste compliments lasagne, spaghetti, and other similar Italian dishes. Tonight I tried some leftover sauce on a salad of baby spinach and romaine with crumbled albacore tuna--it was fabulous.
