1/2 cup low-fat Greek yogurt
1/4 cup plain kefir
1 tablespoon chopped fresh dill
1 tablespoon extra-virgin olive oil
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper
1 head radicchio
2 tablespoons olive oil
1/4 teaspoon kosher salt
2 small heads romaine lettuce
1/3 cup crumbled Gorgonzola dolce cheese

Steps:

  • For the dressing: Whisk together the yogurt, kefir, dill, oil, garlic powder, salt, onion powder and cayenne in a medium bowl. Allow to sit for 1 hour in the refrigerator to let the flavors mingle.
  • For the salad: Preheat a grill pan over medium-high heat.
  • Cut the radicchio into 8 wedges, then drizzle with the olive oil and sprinkle with salt. Place the wedges on the grill and cook until slightly browned and wilted, about 2 minutes per side. Place the wedges on a platter.
  • Meanwhile, quarter the romaine and nestle it in between the wedges of radicchio. Dollop the dressing around the platter and crumble the Gorgonzola over the top.

2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon dried mixed herbs
½ teaspoon coarse sea salt
cracked black pepper to taste
1 tablespoon extra-virgin olive oil
2 hearts of romaine, halved lengthwise
2 vine-ripened tomatoes, diced
½ cup diced cucumber
½ cup diced red onion
½ cup crumbled feta cheese
10 halved Kalamata olives

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Whisk oil, balsamic vinegar, and mixed herbs in a small bowl. Add salt and pepper.
  • Place romaine halves cut-sides up on a work surface. Drizzle with oil and sprinkle with salt and pepper.
  • Grill romaine, cut-sides down until slightly caramelized, 2 to 3 minutes.
  • Plate grilled romaine cut-sides up. Top with tomatoes, cucumber, onion, feta cheese, and olives. Drizzle with dressing and serve.

4 strips bacon
1 tablespoon brown sugar
1 teaspoon steak seasoning
3 tablespoons balsamic vinegar
1 tablespoon hot honey
1 tablespoon chopped fresh parsley
1 teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper
1 small red onion, very thinly sliced
1/2 pint cherry tomatoes, halved
1/2 head iceberg lettuce, cut into 4 wedges, leaving the stem intact
1/4 cup blue cheese dressing
1/2 cup crumbled blue cheese

Steps:

  • Preheat the oven to 350 degrees F. Line a sheet tray with nonstick aluminum foil.
  • Place the bacon on the lined sheet tray. Sprinkle on the brown sugar and steak seasoning. Bake until crispy, 15 to 20 minutes. Allow to cool enough to touch, then chop into bite-sized pieces. Set aside.
  • In a medium bowl, whisk together the balsamic and honey, parsley and thyme. Season to taste. Add the onion and tomatoes. Let sit until the tomatoes are slightly darker in color and the onions have softened slightly, 25 to 30 minutes.
  • Place the wedges on plates. Top each with the onion and tomato mixture and any remaining liquid. Drizzle the wedges with the blue cheese dressing and top with the crumbled blue cheese and the bacon pieces. Serve immediately.

BARBECUE BACON WEDGE SALAD WITH GRILLED CORN



Barbecue Bacon Wedge Salad with Grilled Corn image

1 tablespoon olive oil
1 ear corn, shucked
1/4 cup barbecue sauce
2 tablespoons apple cider vinegar
1 tablespoon dark brown sugar
1/2 pound slab bacon about 1 inch thick, halved lengthwise
1 head iceberg lettuce, quartered into wedges
1 cup cherry tomatoes, halved
Kosher salt and coarsely ground black pepper
Blue Cheese Dressing (recipe follows)
2 tablespoons Ryan's Pickled Red Onions (recipe follows)
1/2 cup mayonnaise
2 tablespoons buttermilk
1 tablespoon white vinegar
1/4 teaspoon sugar
Dash hot sauce
Kosher salt and freshly cracked black pepper
1/4 cup crumbled blue cheese
1 medium red onion, thinly sliced
1 tablespoon whole black peppercorns
1/4 cup apple cider vinegar
1/4 cup white vinegar
2 tablespoons sugar
2 teaspoons kosher salt

Steps:

  • For the corn: Preheat the broiler. Line a baking sheet with foil.
  • Rub the oil on the corn on the prepared baking sheet. Broil the corn, turning every few minutes, until charred on all sides, about 10 minutes. Remove the corn and let it cool slightly, then cut the kernels from the cob and set aside; discard the cob.
  • For the bacon: Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mix the barbecue sauce, vinegar and sugar in a small bowl. Put the bacon on the prepared baking sheet and brush with a layer of the sauce. Bake, flipping and basting with more sauce every 10 minutes, until the bacon is cooked through and juicy and the sauce is sticky and dark, 45 to 55 minutes. Cut the bacon in half crosswise to yield 4 pieces.
  • To assemble the salad: Arrange the wedges of lettuce on a large platter. Add the tomatoes, corn and bacon around the wedges. Season the lettuce and tomatoes with salt. Top with coarsely ground pepper. Spoon the dressing over the lettuce wedges and top with the pickled onions. Serve immediately.
  • Mix the mayonnaise, buttermilk, vinegar, sugar and hot sauce in a medium bowl. Season with a pinch each of salt and pepper, then fold in the blue cheese, leaving a few lumps of cheese.
  • Place the onions and peppercorns in a jar. Whisk the vinegars together with the sugar, salt and 1 cup water in a medium bowl until the sugar is dissolved. Pour over the onions and refrigerate for 2 to 3 hours. The pickled onions will keep about 2 weeks in the fridge.

  • For marinated cucumber and tomatoes: In a medium bowl add vinegar, 1 tbsp olive oil, dried oregano with generous pinch of salt, and black pepper. Mix well. Add diced cucumber, and tomato. Toss well. Set aside.
  • For the Grilled Romaine Wedges: Preheat a grill or grill pan to medium heat. Slice each romaine lengthwise into two wedges. (You can also cut into 4 wedges per romaine. See Note 6.)
  • Brush the cut sides of the romaine with the olive oil. Sprinkle with salt. Place the romaine on medium-low side of grill, cut-side down and cook until grill marks form and are slightly charred, 2 to 3 minutes. (See Note 1)
  • Arrange grilled romaine wedges on platter cut-side up. Drizzle the romaine with Ranch dressing. (See Note 2 for recipe) Top with marinated cucumber, tomato, scallion and crumbled blue cheese. Drizzle some buffalo hot sauce on top for extra kick. (optional) Serve and enjoy!
