GRILLED BISCUIT SUNDAE WITH PEACHES AND BLUEBERRIES



Grilled Biscuit Sundae with Peaches and Blueberries image

One 16-ounce can refrigerated biscuits
2 tablespoons unsalted butter, melted
2 tablespoons demerara sugar
2 cups blueberries (about 10 ounces)
1/3 cup granulated sugar
1 tablespoon lemon juice
1/4 teaspoon kosher salt
Vegetable oil, for brushing peaches
2 firm, ripe peaches, pitted and halved
1 pint maple ice cream
Fresh whipped cream, for serving

Steps:

  • Brush 4 of the biscuits with the melted butter and sprinkle with the demerara sugar, then bake according to the package directions (save the remaining biscuits for another use). Remove from the oven and allow to cool.
  • Meanwhile, in a small saucepan, combine the blueberries, granulated sugar, lemon juice and salt. Bring to a simmer, then cook, stirring frequently and using the back of a wooden spoon to mash the berries, until the juice has thickened, 5 to 7 minutes. Remove from the heat and set aside to cool slightly.
  • Meanwhile, heat a grill pan or grill to high heat and oil the grates.
  • Brush the peaches with oil and add to the grill, cut-side down. Cook, without moving the peaches, until charred grill marks develop, 4 to 5 minutes. Flip the peaches, then cook until the peaches have heated through but still hold their shape, another 1 to 2 minutes. Remove from the grill and cut into bite-size pieces, then set aside.
  • Split the biscuits open and place on the grill cut-side down. Grill until grill-marked, about 2 minutes. Tear the biscuits into large chunks.
  • In parfait glasses, layer the biscuits chunks, a scoop of ice cream and blueberry sauce. Continue with another set of layers and finish with the grilled peaches and dollops of whipped cream.

Watermelon and feta is a combination we have come to know and love. But have you ever grilled watermelon? The sugars caramelize beautifully on a grill, which makes this summer melon taste even sweeter - if that is at all possible! Paired with a creamy dip of feta cheese and fresh herbs, this dish is the perfect combo of sweet and salty.

Neutral oil, for the grates if grilling outdoors
1 small seedless watermelon (3 to 4 pounds)
2 cloves garlic, peeled
One 7-ounce block good-quality feta, packed in brine, brine reserved (see Cook's Note)
1/4 cup nonfat Greek yogurt (see Cook's Note)
2 teaspoons packed fresh herbs, such as dill, mint or thyme leaves, plus more for serving
Honey, for serving
Freshly cracked black pepper

Steps:

  • Preheat a grill pan over medium-high heat. If using an outdoor grill, preheat over medium-high heat until a thermometer registers 500 degrees F; clean and lightly oil the grill grates. See Cook's Note.
  • Cut the watermelon in half lengthwise. Cut each half into 1-inch thick slices shaped like half-moons. Working in batches, grill the watermelon slices, uncovered, until just marked, about 2 minutes per side. Transfer to a rimmed baking sheet to cool slightly. Once cool enough to touch, cut the watermelon into triangles, leaving the rind intact to serve as a handle for dipping.
  • Pulse the garlic in a food processor until minced. Add the feta, yogurt , herbs and 2 tablespoons of the feta brine. Process until whipped and smooth, scraping down the sides as needed. Transfer to a small bowl. Top with a drizzle of honey, pepper and more herbs.
  • Transfer the grilled watermelon "dippers" to a platter and serve with the feta dip.

GRILLED PEAR SUNDAE

4 tablespoons unsalted butter
4 tablespoons brown sugar
2 tablespoons apple cider
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch kosher salt
2 pears, stemmed, cored, and sliced lengthwise 1/2 inch thick
Ice cream
Pecans, for topping
Whipped cream, for topping

Steps:

  • Preheat grill to medium.
  • In a small saucepan add butter, brown sugar, apple cider, cinnamon, ginger, and salt. Place onto grill until butter melts. Mix together until well combined.
  • Place pears directly onto grill for 2 to 4 minutes. Turn and cook on the other side. Brush both sides of the pears with the butter mixture to glaze. Immediately take pears off the grill after glazing and place on a plate.
  • Scoop ice cream into 4 serving bowls. Top with pears, pecans and whipped cream. Drizzle the remaining butter mixture on top and serve.

3 oz cream cheese, softened

2 tablespoons dark rum
1 teaspoon finely grated fresh lemon zest
1/2 teaspoon vanilla
1/8 teaspoon salt
1/3 cup cold heavy cream
1 (4 1/2- to 5-lb) wedge of watermelon, cut into 1-inch-thick slices and chilled
1 oz fine-quality bittersweet chocolate (from a 3-oz bar), shaved (1/4 cup)

Steps:

  • Blend cheeses, milk, sugar, rum, zest, vanilla, and salt in a blender until smooth, about 1 minute. Add cream and blend until just combined, about 5 seconds.
  • Freeze mixture in ice cream maker, then transfer to an airtight container and put in freezer to harden, at least 3 hours.
  • Put scoops of ice cream on watermelon slices and top with chocolate shavings.
