3/4 cup honey mustard
3/4 cup teriyaki marinade
1 pork tenderloin (1 pound)
2 garlic cloves, minced
1 green onion, chopped

Steps:

  • In a small bowl, combine mustard and teriyaki marinade; pour 1 cup into a large resealable plastic bag. Add pork and garlic; seal bag and turn to coat. Refrigerate 6 hours or overnight. Cover and refrigerate remaining marinade., Prepare grill for indirect heat using a drip pan. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Drain and discard marinade from pork. , Place pork over drip pan and grill, covered, over indirect medium-hot heat for 25-40 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°), basting with reserved marinade and turning occasionally. Let stand 5 minutes before slicing. Sprinkle with onion.

Marinade:
3 T rice wine vinegar
2 T soy sauce
1 T brown sugar
1 t fresh ginger, grated
1 t garlic, minced
1/2 t black pepper
1 vidalia onion, sliced
1 lb pork tenderloin
1 granny smith apple, sliced thinly
1 avocado, chopped into small cubes
1 small cucumber, peeled and sliced thinly
4 oz crumbled blue cheese
1/3 c. pecans, chopped
Fresh mixed greens
Good quality prepared blue cheese dressing or vinaigrette

Steps:

  • Combine first 6 ingredients for marinade into a plastic bag. Add pork tenderloin and marinate in the refrigerator for 30 minutes. Meanwhile, preheat grill to 400 degrees. Saute onions until golden and soft, keep warm and set aside. Place pork tenderloin on grill and grill until medium, about 12 minutes. While pork is cooking, prepare large platter with salad items. First, place a large bed of mixed greens on the platter. Then, arrange cucumber slices, apple slices, and avocado. When pork is done, let rest for 5 minutes and slice. When ready to serve, add carmelized onions to salad, sprinkle chopped pecans, add the sliced pork and sprinkle blue cheese over entire salad. Serve blue cheese dressing and vinaigrette on the side.

TERIYAKI GRILLED PORK STEAKS

Plan ahead the steaks need to marinade for 8-24 hours (24 hours is even better!) I made these on my indoor grill they are very good, they could also be broiled in the oven and of coarse an outdoor grill. If you can fit a few more pork steaks in the marinade then go ahead! This marinade will also work well for pork tenderloins and cubed pork for kabobs.

7 pork loin steaks (about 3/4-inch thick)
1/2 cup vegetable oil
1/2 cup soy sauce
1/4 cup white wine or 1/4 cup red wine
1/2 cup molasses or 1/2 cup honey
1 tablespoon grated fresh ginger (can use more)
2 -3 tablespoons minced fresh garlic (or to taste)
1 teaspoon black pepper (or to taste)
2 large green onions, coarsley chopped

Steps:

  • In a bowl mix/whisk all ingredients together (the oil to black pepper) until well blended, add in green onions; pour the mixture into a large ziploc freezer bag.
  • Using a fork poke holes all over in the pork steaks.
  • Add steaks into the marinade and seal bag tighly, then turn to coat in the mixture.
  • Place the bag into a large bowl to prevent any leaks.
  • Cover and refrigerate for 8-24 hours turning occasionally.
  • When ready to cook remove pork steaks, scrape off any ginger, garlic and green onions.
  • Transfer pork to a large plate/s and discard the marinade, let the meat sit out on counter to almost room temperature before grilling or broiling (this might take a couple of hours, this is an important step it will relax the meat fibers to create a more juicy tender pork steak).

  • In a small bowl, combine teriyaki sauce mix and water until dissolved; set aside. Place flour in a large resealable plastic bag; add pork and shake to coat., In a large skillet, brown pork on both sides in oil until juices run clear. Add teriyaki sauce. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened. Serve with rice. ,

3 tablespoons lime juice

1 package (8.8 ounces) vermicelli-style thin rice noodles
DRESSING:
1/4 cup water
2 tablespoons lime juice

SALAD:
2 cups shredded lettuce
2 plum tomatoes, sliced
1 medium cucumber, julienned
2 medium carrots, julienned

  • In a large shallow dish, combine jalapeno, lime juice, fish sauce and brown sugar. Add pork; turn to coat. Refrigerate, covered, 3 hours or overnight., Drain pork, discarding marinade.
