GRILLED SWEET POTATOES WITH CHIPOTLE-HONEY SAUCE



Grilled Sweet Potatoes with Chipotle-Honey Sauce image

Prepared on the grill and paired with a spicy sauce, these sweet potatoes make a wonderful side with most any meal. Plus, they take only 20 minutes to make!

1 cup honey
4 chipotle chiles in adobo sauce (from 7-oz can), finely chopped
2 tablespoons adobo sauce (from can of chiles)
6 medium sweet potatoes
1/3 cup olive or vegetable oil
2 teaspoons kosher (coarse) salt

Steps:

  • Heat gas or charcoal grill. In small bowl, mix sauce ingredients; set aside.
  • Cut each sweet potato lengthwise into 4 or 5 slices; brush both sides with oil. Carefully brush additional oil on grill rack. Place potatoes on grill over medium heat; sprinkle with 1 teaspoon of the salt.
  • Cover grill; cook 8 to 10 minutes, turning once and sprinkling with remaining 1 teaspoon salt, until potatoes are tender. Serve with sauce.

These are so delicious it's hard to stop eating them. And the dip makes the entire recipe. I shouldn't have discovered this recipe. I could eat this all day long. Maybe it's because I used regular fat sour cream and mayonnaise. I don't know. Recipe courtesy of All You June 2013.

1/2 cup nonfat sour cream
1/2 cup reduced-fat mayonnaise
1/2 chipotle chile in adobo, seeds removed and chopped
1 tablespoon cilantro, chopped
2 tablespoons lime juice
1/2 teaspoon salt
salt
4 sweet potatoes (about 2 1/2 lbs, peeled and halved lengthwise and cut into 4 wedges)
2 tablespoons vegetable oil
1 1/2 teaspoons garlic salt

Steps:

  • Make dip: Puree all ingredients in a food processor until smooth, with red and green flecks still visible. Cover and chill.
  • Make sweet potatoes: Bring a large pot of salted water to a boil and add potato wedges. Cook for 5 minutes. Drain on a paper towel-lined tray and pat dry. Let cool.
  • Preheat grill to medium and oil grates.
  • Toss potato wedges with oil and sprinkle with garlic salt.
  • Grill potatoes, turning often, until just tender and slightly charred, 8 to 10 minutes.
  • Just before serving, taste dip and add additional salt if desired.
  • Serve potato wedges with dip on the side.

6 medium sweet potatoes (the dark orange ones)
1/3 cup olive oil
2 teaspoons salt
1 cup honey
4 chipotle chiles in adobo, finely chopped
2 tablespoons adobo sauce (from can of chilies)

Steps:

  • Heat grill to medium.
  • For sauce: mix honey, chopped chilies and adobo sauce in a small bowl. Set aside.
  • For potatoes: scrub potatoes and cut each one lengthwise into 4 or 5 slices.
  • Brush both sides with oil.
  • Place on grill and sprinkle with salt.
  • Cover and grill for 8-10 minutes, turning once and sprinkling the other side with salt.
  • Cook until tender.
  • Remove and place on a platter. Serve with sauce on the side.

2 pounds sweet potatoes, peeled and cut into wedges
3 tablespoons reduced-sodium soy sauce
2 tablespoons sherry or apple juice
2 tablespoons honey
2 tablespoons water
1 garlic clove, minced
1 tablespoon sesame oil

Steps:

  • Place sweet potatoes in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-7 minutes. , Place potatoes in a large bowl. In another bowl, combine the soy sauce, sherry or juice, honey, water and garlic; pour over potatoes and toss gently., Drain sweet potatoes, reserving soy sauce mixture. Arrange sweet potatoes in a single layer in a grill basket coated with cooking spray. Brush potatoes with oil. Grill, covered, over medium heat for 8-10 minutes or until tender, basting with reserved soy sauce mixture and turning occasionally.

2 large sweet potatoes, peeled and thinly sliced
3 tablespoons butter, melted
2 tablespoons ground cinnamon
⅓ cup honey
1 tablespoon vanilla extract

Steps:

  • Preheat grill for medium heat.
  • Arrange sweet potatoes in a 9x13-inch aluminum foil pan. Stir butter and cinnamon together in a bowl and drizzle over potatoes. Cover pan with aluminum foil.
  • Bake sweet potatoes on the preheated grill, stirring occasionally, for 15 minutes. Stir honey and vanilla extract together in a bowl and drizzle over sweet potatoes. Return aluminum foil to cover pan. Continue cooking on the grill until sweet potatoes are tender, about 10 more minutes.
