Sweet and Sour Meatball Skewers image

These easy Sweet and Sour Meatball Skewers are made from frozen meatballs that are combined with fresh peppers and basted with an easy sweet and sour sauce.

32 frozen fully cooked 1-inch meatballs, thawed (1 lb.)
1 red pepper, cut into 1-inch squares
1 green pepper, cut into 1-inch squares
1/4 cup apricot jam
1/4 cup barbecue sauce

Steps:

  • Heat a grill to medium-high. Thread the peppers and meatballs alternately onto 8 skewers.
  • Microwave the jam in a small bowl for 15 seconds. Add the barbecue sauce and stir to combine.
  • Place the meatball skewers on the grill and brush with the sauce. Grill for 8-10 minutes, turning and basting with the sauce occasionally.
  • Serve warm.

A quick brush of a spirited prepared sauce on veggies and frozen meatballs and you've got a terrific kabob to cook fast on the grill.

1 large green bell pepper, cut into 12 pieces
8 thin wedges red onion
12 small fresh whole mushrooms
1/2 tsp (2 mL) seasoned salt
16 frozen cooked meatballs, thawed
3/4 cup (175 mL) purchased sweet and sour sauce

Steps:

  • Heat grill. In large bowl, combine bell pepper, onion and mushrooms. Sprinkle with seasoned salt; toss to coat.
  • Alternately thread meatballs, bell pepper, onion and mushrooms onto four 12 to 14-inch metal skewers.
  • When ready to grill, place kabobs on gas grill over medium heat on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 15 minutes or until meatballs are thoroughly heated and vegetables are crisp-tender, brushing generously with half of the sweet-and-sour sauce and turning frequently. Serve kabobs with remaining half of sauce for dipping.

1/2 Cup Ketchup
1/4 Honey
1 Tbsp. Lime Juice
2 Tbsp. Soy Sauce
1 Tbsp. Sriracha
1/4 Cup Flour
1 Cup Small Yellow Squash, Grated
1/2 Tbsp. Garlic Powder
1 tsp. Ginger
Salt
1 Egg
2 Bell Peppers
1 Red Onion
1 Tbsp. Olive Oil
1/2 Tbsp. Garlic Powder
Salt
Pepper
1 Tbsp. Lime Juice

Steps:

  • In medium bowl, place ground beef, flour, garlic powder, ginger, salt and egg. Prep squash by grating. Place shredded squash in between two paper towels and press dry, then add into meat bowl. Mix ingredients until completely combined. Form into meatballs and place in a second bowl. Mix marinade by combining all ingredients, Pour 2/3 of marinade over meatballs and allow to sit for 15 minutes. While meatballs are marinating chunk your vegetables to the size you would like for your skewers. Once everything is prepped, alternate placing meatballs and vegetables on the skewers. Grill for 15 minutes rotating skewers every 5 minutes.

1 egg
¼ cup dry bread crumbs
1 onion, diced
1 cup packed brown sugar
3 tablespoons all-purpose flour
1 ½ cups water
¼ cup distilled white vinegar
3 tablespoons soy sauce

Steps:

  • In a medium bowl, combine the ground beef, egg, bread crumbs and onion. Mix thoroughly and shape into golf ball-sized balls.
  • In a large skillet over medium heat, gently brown the meatballs and set aside.
  • In a large saucepan, combine the brown sugar, flour, water, white vinegar and soy sauce. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.

Steps:

  • Heat grill to medium-high heat.
  • Thread meatballs and peppers alternately onto 8 skewers.
