GRILLED SEA BASS
This is a truly flavorful dish with a lovely plate presentation. My mom and I experimented and made this for lunch. It came out so good I promptly went to the fish market so I could make it for my dinner guests that night. YUMMY!

Steps:
- Preheat grill for high heat.
- In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
- In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.
- Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.

FRIED FISH (PESCADA FRITA)

Steps:
- Wash, and marinate fish for 1 hour in lemon juice, salt and pepper. Dip fish in flour and shake off excess. Heat together butter and cooking oil. Fry fish over heat and turn when browned. Place on absorbent paper and sprinkle with chopped parsley. Serve it plain or with Shrimp Sauce or with lemon wedge and potatoes fried in butter.

GRILLED SNOOK OR SEA BASS (PEIXE NA CHAPA)

- Wash the fish inside and out. Marinate with olive oil, salt and pepper, putting aside 2 tablespoons olive oil. Place on grill for 30 minutes or in a hot over 425 degrees for 20 min. Then, turn heat down to finish cooking. To see if the fish is done try with a fork near the center. It can be easily loosened from the bone. When flesh is cooked, sprinkle thyme on top with 2 tablespoons olive oil. Leave on the grill until ready to serve.

SEAFOOD (FRUTOS DO MAR)

- Rinse the fish and marinate in lemon juice, salt and pepper, halibut, salmon, shrimp, scallops, clams, mussels, octopus, and squid. Heat 8 tablespoons olive oil. Fry onions, tomatoes, garlic, bay leaf, coriander, cilantro, and green peppers. Add 2 tablespoons hot sauce. Add the octopus first as it takes a long time to cook. When nearly tender add the squid, clams, mussels and shrimp. In a second large frying pan, add 2 tablespoons olive oil and fry the halibut, salmon, and scallops. When all the fish is well done, combine is a large serving dish being careful not to break up the halibut and salmon. Serve hot over Brazilian rice. NOTE: Often served in Brazil with Angu (Polenta, see Accompaniments chapter) made with mandioca flour.

Steps:
- Prepare grill for medium-direct heat.
- Grease the center of a 20 x 18 inch sheet of heavy duty aluminum foil with margarine.
- Arrange 2 slices each of red onion and lemon over the margarine.
- Sprinkle with one tablespoon of almonds and half of the green onions.
- Arrange the fillets in a single layer over the onions, lemon and almonds.
- Top with remaining red and green onions, lemon and almonds.
- Sprinkle lightly with salt, pepper and paprika.
- Fold the long sides of the foil together in locked folds.
- Fold and crimp short ends; seal tightly.
- Place the packet directly on the cooking grate.
- Grill, covered, for 11 to 15 minutes, or until the fish is firm and opaque, and just begins to flake.

SHRIMP BAHIA STYLE (CAMARãO à BAIANA)

- Very typical. Clean and prepare shrimp. Marinate for 30 min with lemon juice and crushed garlic clove. In a large frying pan heat cooking oil and add grated onion. Add shrimp. When shrimp are golden, add 2 tablespoons chopped cilantro. Sprinkle with pepper and cook until the shrimp turn pink. In the blender beat tomatoes without seeds, and a dash of hot sauce and add to shrimp mixture. Taste to see if more salt or hot sauce is needed. Serve over white rice.
