½ cup chicken stock
¼ cup balsamic vinegar
¼ cup orange juice
1 teaspoon honey
1 tablespoon cornstarch
¼ cup chicken stock
1 cup fresh blueberries
2 teaspoons chopped fresh chives
4 (6 ounce) salmon steaks
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • Pour 1/2 cup chicken stock, vinegar, orange juice, and honey into a saucepan. Bring to a boil over high heat, then reduce heat to medium. Dissolve cornstarch in 1/4 cup of chicken stock, and stir into the simmering sauce. Cook and stir until the sauce thickens and turns clear, 1 to 2 minutes. Stir in the blueberries and chives, and keep warm over low heat.
  • Preheat grill to medium high-heat.
  • Brush salmon with oil, and season to taste with salt and pepper. Grill until the fish flakes easily with a fork, about 3 to 4 minutes per side. Serve with blueberry sauce.

Steps:

DH and I made this recipe the other night from Bon Appetit and absolutely loved it. DH was very skeptical and complained mighty heartily at the beginning about serving his salmon with a blueberry sauce. However, once the sauce was made and thickened up, you really would not have known that it was made from blueberries. We both agreed it was delicious.

1 tablespoon olive oil, plus additional for brushing
3/4 cup sliced shallot
1 garlic clove, thinly sliced
1/4 teaspoon coarse kosher salt, plus additional for seasoning
1/4 teaspoon chopped fresh thyme, plus additional for seasoning
1/8 teaspoon ground allspice, plus additional for seasoning
1 cup fresh blueberries
1/4 cup water
1 tablespoon balsamic vinegar
4 (7 ounce) salmon steaks, with skin each about 3/4 inches thick (can also use salmon fillets)
3 tablespoons thinly sliced of fresh mint, divided

Steps:

  • Heat 1 Tb oil in large skillet over medium heat. Add shallots; saute until softened, about 5 minutes.
  • Add garlic, 1/4 tsp coarse salt, 1/4 tsp thyme, and 1/8 tsp allspice. Stir until fragrant, about 30 seconds.
  • Add blueberries, 1/4 cup water, and vinegar. Stir to blend.
  • Mash berries with a potato masher or back of fork and cook until sauce thickens, stirring often, 3 to 4 minutes.
  • Season with freshly ground black pepper. Remove from heat. (*Sauce can be made 2 hours ahead. Let stand at room temperature. Rewarm before using.).
  • Brush grill rack with oil. Prepare BBQ (medium-high heat).
  • Brush salmon on both sides with oil;sprinkle with coarse salt, thyme, allspice, and black pepper.
  • Grill salmon until just opaque in center, 4 to 5 minutes per side. Transfer to plates.
  • Stir 2 Tb sliced mint into warm blueberry sauce. Spoon sauce over salmon and sprinkle with remaining 1 Tb mint. Serve immediately.

1 1/2 cups frozen organic blueberries
1/4 cup finely chopped onion
1 clove garlic, minced
1 teaspoon olive oil
2 tablespoons balsamic vinegar or cider vinegar
1 tablespoon packed brown sugar
1 teaspoon grated fresh ginger
1/2 teaspoon finely shredded lemon peel
Nonstick cooking spray
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Snipped fresh chives (optional)

Steps:

  • Thaw fish, if frozen, and blueberries. For sauce: In a small saucepan, cook and stir onion and garlic in hot oil about 3 minutes or until softened. Add blueberries, vinegar, brown sugar, ginger, and lemon peel. Bring to boiling; reduce heat. Simmer, uncovered, about 15 minutes or until sauce has thickened and reduced to 1 cup.
  • Meanwhile, rinse salmon; pat dry with paper towels. Lightly coat salmon with nonstick cooking spray; sprinkle with salt and pepper. Measure thickness of salmon.
  • Place salmon on the rack of an uncovered grill directly over medium coals. Grill for 4 to 6 minutes per 1/2-inch thickness of fish or until fish flakes easily when tested with a fork, turning once halfway through grilling.
  • Serve blueberry sauce over salmon. If desired, sprinkle with chives.
