QUICK GRILLED PORK WITH LEMON AVOCADO SALAD



Quick Grilled Pork with Lemon Avocado Salad image

This butterflied pork tenderloin is grilled to perfection and then topped with a quick and easy lemon avocado salsa. This dinner is ready in under 30 minutes and is full of flavor!

Number Of Ingredients 6

Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
1 1/2 ripe avocados (peeled and diced)
1 cup halved or quartered grape tomatoes
1 tablespoon fresh lemon juice
3 green onions (sliced thin)
kosher salt and pepper to taste

Steps:

  • Preheat grill. Slice tenderloin down the middle lengthwise, leaving one long side connected so you can open it up like a butterfly. (Don't stress if you accidentally cut it all the way through. Just grill the two pieces!)
  • Spread a little vegetable oil over the hot grill using tongs with an oil-soaked paper towel. (Towel should not be dripping with oil or it can cause high flames.)
  • Place prepared tenderloin on the hot grill and cook about 5-7 minutes on each side, until the center has reached at least 150 degrees F. Remove cooked meat to cutting board.
  • Gently stir all salad ingredients together. Serve within an hour (before avocado starts to brown).

Grilled Avocado with Salsa image

4 avocados, sliced in half and pitted
1/4 cup olive oil
Kosher salt and freshly cracked black pepper
1/2 cup corn and bean salsa, store-bought or homemade
Hot sauce, for garnish

Steps:

  • Preheat a grill on medium heat to 425 degrees F.
  • Brush the inside of the avocado halves with the olive oil. Place the avocado halves cut-side down on the grill for 1 minute and 30 seconds. Turn the avocado halves 90 degrees to get cross grill marks and cook for another 1 minute and 30 seconds.
  • Remove from the grill and season with salt and pepper. Put about 1 heaping tablespoon of salsa into the center well of each avocado half. Garnish with hot sauce and serve.

Hot Chile Grilled Pork Rounds with Avocado-Mango Salsa over Couscous image

1 cup diced ripe mango
1 cup diced ripe California avocado
2 tablespoons minced red onion
2 tablespoons fresh lime juice
2 tablespoons freshly chopped cilantro leaves
1 tablespoon finely chopped and seeded jalapeno pepper
1/4 teaspoon ground cumin
Salt and freshly ground black pepper
2 cups reduced-sodium chicken broth
1 (10-ounce) box couscous
12 ounces cooked sliced pork tenderloin rounds (1/2-inch thick rounds)
1 tablespoon hot chili oil

Steps:

  • In a medium bowl, combine mango, avocado, onion, lime juice, cilantro, jalapeno, and cumin. Mix well. Season, to taste, with salt and black pepper.
  • In a saucepan, bring chicken broth to a boil. Add couscous, stir and cover. Remove from heat. After 5 minutes remove cover, fluff with a fork.
  • Meanwhile, set a stove-top grill pan over medium-high heat to preheat. Brush both sides of pork slices with hot chili oil and season with salt and black pepper. Add slices to hot pan and cook 1 to 2 minutes per side, until golden brown.
  • Serve pork over couscous with salsa spooned on top.

This spectacularly simple green sauce may be the perfect summer condiment. It requires no cooking, only takes 10 to 15 minutes to make, looks gorgeous, and tastes amazing with anything grilled and most things that aren't. Spoon over grilled pork tacos, grilled meats, or serve with chips.

6 ounces fresh tomatillos - husked, rinsed, and halved
1 tablespoon thinly sliced serrano chiles, or to taste
1 large ripe avocado - halved, seeded, and flesh scooped out of peel
¼ cup packed cilantro leaves
½ lime, juiced
salt to taste

Steps:

  • Place tomatillos into a food processor. Add serrano pepper, avocado, cilantro, and lime juice. Season with salt to taste. Process until smooth; adjust seasoning. Transfer to a serving bowl.

2 1/2 tablespoons coarse salt
1 tablespoon ground allspice
1 tablespoon cayenne
3 (3/4-pound) pork tenderloins
1 tablespoon oil
Accompaniment:Pineapple-Avocado Salsa

Steps:

  • Preheat oven to 400°F.
  • Stir together salt, allspice, and cayenne. Pat pork dry and sprinkle spice rub all over pork, pressing to adhere.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown pork, 1 tenderloin at a time, on all sides, about 1 minute each. Transfer as browned to a large roasting pan and arrange 2 inches apart.
  • Roast in middle of oven until an instant-read thermometer inserted diagonally 2 inches into center of each tenderloin registers 155°F, 20 to 25 minutes. Let pork stand 5 minutes before slicing.
