PIZZADILLA (GRILLED PIZZA SANDWICH)

I was watching TV the other day, and I saw a commercial for something called a Papadilla. What follows is my attempt to make one of these things. What this relatively fast and easy procedure allows you to do is make a single portion of what's very, very close to pizza in a pan on top of the stove in just a few minutes, without ever having to turn on the oven. Serve your pizzadilla with a side salad topped with Parmigiano-Reggiano cheese.

20 ounces prepared pizza dough
2 tablespoons olive oil, divided, or as needed
1 cup pizza sauce, divided
8 ounces mozzarella cheese, divided
½ cup cooked Italian sausage, or to taste
½ cup cooked mushrooms, or to taste
½ cup cooked red onions, or to taste

Steps:

  • Divide dough into 4 equal pieces. Roll each piece into a 1/8-inch thick circle on a lightly floured surface.
  • Heat a pan over medium-high heat and brush with oil. Add 1 piece of dough and reduce heat to medium. Cook for 2 minutes and flip. Spread 1/4 of the sauce over the dough. Sprinkle 1/4 of the mozzarella cheese and some sausage, mushrooms, and red onion on top, leaving about 1/2 inch of dough around the outside. Press gently into the middle of the dough with a spatula to make a crease; fold in half.
  • Brush crust with a little more olive oil and flip over. Repeat on the other side and continue cooking until both sides of the pizzadilla are as browned and crisp as you like.
  • Repeat with remaining pizza dough and toppings. Cut each pizzadilla in half and serve.

8 slices Italian bread
3 tablespoons Land O Lakes® Butter softened
1/2 cup pizza sauce
8 (3/4-slices) slices Land O Lakes® Deli American
1 cup (5 ounces) thinly sliced pepperoni
2 tablespoons chopped fresh basil leaves
2 cups salad greens

Steps:

  • Spread 1 side of each bread slice with about 1 teaspoon butter.
  • Spread 1 tablespoon pizza sauce onto 1 bread slice, buttered-side down. Top with 1 slice cheese, 1/4 pepperoni, 1 1/2 teaspoons chopped basil leaves, 1/2 cup salad greens, 1 slice cheese and 1 bread slice, buttered-side up.
  • Heat 12-inch skillet or griddle over medium heat.
  • Place 2 sandwiches into skillet; cook, turning once, 6-8 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.
  • Place remaining pizza sauce in bowl. Microwave 10-30 seconds or until heated through. Slice each sandwich in half. Serve sandwiches with warm pizza sauce for dipping.

pepperoni slice
2 tablespoons butter, divided

Steps:

  • For each sandwich butter outside of bread.
  • Lay in pan, butter side down.
  • On top of bread, spread pizza sauce, 1 ounce of mozzarella cheese, thin pepperoni slices and more pizza sauce.
  • Add another slice of bread, buttered side up.
  • Cook until brown on both sides and cheese melts.

  • Spread about 2 teaspoons pizza sauce on one side of each slice of bread. Top four slices with the salami, cheese and green pepper. Top with remaining bread; brush the outside of bread with butter. Grill sandwiches on a hot griddle or in a skillet over medium heat until both sides are golden brown and cheese is melted.

1 tablespoon grated Parmesan
1/2 teaspoon Italian seasoning
Pinch crushed red pepper
2 slices bread
1 tablespoon plus 1/4 cup marinara sauce, warmed
2 slices mozzarella
2 slices provolone
2 ounces pepperoni
1 mini sweet pepper, sliced thin
1 to 2 tablespoons black olives
4 fresh basil leaves

Steps:

  • In a small bowl, mix together the butter, Parmesan, Italian seasoning and crushed red pepper. Brush one side of each slice of bread with this mixture.
  • Heat a nonstick skillet over medium heat. Lay one piece of the bread, butter-side down, in the skillet. Spread 1 tablespoon marinara sauce on the bread and layer on the mozzarella, provolone, pepperoni, pepper slices, olives and basil leaves. Top with the second slice of bread, butter-side up. Toast in the skillet, flipping as needed, until the bread is golden and the cheese has melted, 4 to 5 minutes.
  • Remove from the skillet and slice in half. Serve with the remaining 1/4 cup marinara on the side.
