A favorite for the bbq. Taken in a magazine from Quebec (Coup de Pouce) There is 1 hour for the marinade time.

1/2 cup plum sauce
1/3 cup pineapple juice
2 tablespoons fresh ginger, grated or 1 teaspoon ground ginger
2 tablespoons rice vinegar or 2 tablespoons cider vinegar
1/2 teaspoon salt
4 (1/3 lb) pork chops (about 1 1/2 lbs/750 g in total)
8 pineapple slices

Steps:

  • In a bowl, mix together plum sauce, pineapple juice, ginger, rice vinegar and salt.
  • Set aside 1/4 cup of the sauce and put it in the fridge.
  • Pour the remaining sauce in a shallow glass pan. Add the pork chops and turn them to coat well. Cover with saran-wrap and let marinate in the fridge for 1 hour. (You can prepare the pork chops until this step and cover them and put in the fridge until the next day).
  • Preheat the bbq to medium heat. Ligthly oil the grill and put the pork chops and baste with the marinade. Close the cover and cook for about 10 minutes or until that the pork chops are browned but lightly pink inside. (turn the pork chops and baste with marinade at mid cooking).
  • While the pork chops are cooking, put the pineapple slices on the grill of bbq and cook for about 2 minutes on each side or until that they have marks. Serve the pork chops with pineapple slices.

1 tablespoon vegetable oil
2 1/2 teaspoons ground cumin
1/2 teaspoon black pepper
1 1/2 teaspoons salt
4 (1-inch-thick) bone-in rib pork chops (about 2 1/4 lb total)
1/2 pineapple, peeled, cored, and cut into 1/4-inch dice (1 1/4 cups)
1/2 cup finely chopped red onion
1 fresh serrano chile, minced, including seeds
1 tablespoon fresh lime juice

Steps:

  • Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas); see Grilling Procedure
  • Stir together oil, cumin, pepper, and 1 teaspoon salt in a small bowl, then rub all over pork chops, transferring chops as coated to a tray. Stir together pineapple, onion, chile, lime juice, and remaining 1/2 teaspoon salt in another bowl.
  • Lightly oil grill rack and grill pork chops (covered only if using a gas grill), turning over once, until just cooked through, 6 to 9 minutes total. Transfer to a clean platter and let stand 5 minutes. Serve with pineapple salsa.

1 can (8 ounces) sliced pineapple
1/2 cup reduced-sodium soy sauce
3 tablespoons lemon juice
2 teaspoons brown sugar
2 teaspoons Sriracha chili sauce or 1 teaspoon hot pepper sauce
2 garlic cloves, minced
2 boneless butterflied pork chops (1/2 inch thick and 5 ounces each)
1 teaspoon sugar
1/4 teaspoon ground cinnamon

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a large resealable plastic bag, combine the soy sauce, lemon juice, brown sugar, chili sauce, garlic and reserved pineapple juice; add pork chops. Seal bag and turn to coat; refrigerate for at least 2 hours., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill pork chops, uncovered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving., Meanwhile, combine sugar and cinnamon; sprinkle over both sides of pineapple rings. Grill for 1-2 minutes on each side or until browned. Serve with pork.

1/2 cup packed brown sugar
1/2 cup Italian salad dressing
1/4 cup pineapple juice
3 tablespoons soy sauce
6 bone-in pork loin chops (1-inch thick and 7 ounces each)
1 can (20 ounces) sliced pineapple, drained

Steps:

  • In a 2-cup measuring cup, combine the brown sugar, salad dressing, pineapple juice and soy sauce. Pour 2/3 cup into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate for at least 3 hours or overnight. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Grill, uncovered, over medium heat for 4 minutes on each side or until a thermometer reads 145°. Remove from heat and keep warm. Place pineapple slices on grill. 1 (20 ounce) can pineapple slices, in juice
1/2 cup brown sugar
1/2 cup Italian dressing
1/4 cup pineapple juice
3 tablespoons soy sauce

Steps:

  • Drain pineapple, reserving 1/4 cup of the juice for marinade.
  • Combine all marinade ingredients; use 2/3 cup to marinate pork, and reserve the rest for basting.
  • Let meat marinate for at least 3 hours.
  • Grill pork chops on medium heat for 8 minutes on each side.
  • Grill pineapple for a total of 5 minutes.
  • Baste both pork and pineapple with reserved marinade.

1 (8 ounce) can pineapple rings, juice drained and reserved
¼ cup brown sugar
¼ cup soy sauce
¼ teaspoon garlic powder
4 pork chops
1 pinch ground black pepper

Steps:

  • Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. Place the pork chops into the marinade, squeeze out any air in the bag, seal it, and refrigerate overnight. Reserve the pineapple rings.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the chops from the marinade, shaking off excess, and grill until browned, the meat is no longer pink inside, and the meat shows good grill marks, 5 to 8 minutes per side. Brush several times with marinade and let the marinade cook onto the surface of the meat. Discard excess marinade. While the meat is grilling, place 4 pineapple rings onto the grill, and allow to cook until hot and the slices show grill marks; serve the chops topped with the grilled pineapple rings.
