HONEY GLAZED GRILLED PINEAPPLE

1/4 cup honey
Juice of 2 limes (depending on how juicy the limes are)
1/2 teaspoon ground cinnamon
1/2 pineapple, cut into 3/4-inch thick rings, core removed
3/4 cup vanilla ice cream

Steps:

  • In a baking dish, mix together the honey, lime juice, and cinnamon. Place the pineapple slices in the glaze and let marinate 2 hours, turning occasionally.
  • Preheat a grill pan over medium heat.
  • Place the pineapple slices on the preheated grill. Grill on both sides until the glaze caramelizes and grill marks form, about 2 minutes per side.
  • To serve: Place the pineapple slices on individual plates and top with a scoop of ice cream. Drizzle the remaining honey syrup over the top.

2 Tbsp. brown sugar
1/4 tsp. ground cloves
1 fresh pineapple, peeled, cored and cut into 8 slices
1/4 cup KRAFT Honey Mustard Dressing

Steps:

  • Heat grill to medium-high heat.
  • Combine first 3 ingredients.
  • Place pineapple on grill grate; brush with butter mixture. Grill 10 to 12 min. or until pineapple is golden brown on both sides, turning frequently.
  • Serve topped with dressing.

  • Blend all ingredients together with a wisk. (Honey will mix in a better if it is slightly warm). Store in the refrigerator.

12 slice(s) cantaloupe
1/4 cup(s) purple onion, thinly sliced-separated into rings
2 cup(s) pineapple chunks
2 cup(s) endive, torn
2 cup(s) lettuce leaves
1 tablespoon(s) ginger
2 tablespoon(s) honey
1 tablespoon(s) pineapple juice
1/3 cup(s) pineapple juice
1 tablespoon(s) nonfat mayonnaise
1/3 cup(s) nonfat mayonnaise
- vegetable cooking spray
2 - pork tenderloin
1 tablespoon(s) dijon mustard
2 tablespoon(s) honey
1/4 cup(s) sliced almonds, toasted

Steps:

  • Combine the first 3 ingredients in a small bowl.
  • Trim fat from pork and brush honey mixture over pork.
  • Coat barbeque grill rack with cooking spray and place on grill over medium-hot coals or heat.
  • Place pork on rack and cook 18 minutes or until meat thermometer registers 160 degrees, turning pork occasionally.
  • Cut into 1/4 inch thick slices and set aside.
  • Combine salad dressing and next 4 ingredients in a container of an electric blender; cover and process until smooth.
  • Divide pork, lettuces, pineapple, onion, and cantaloupe evenly among 6 serving plates.
  • Top each salad with 2 teaspoons almonds.
  • Serve each with 2 1/2 tablespoons dressing.

A quick an easy salad dressing. This is wonderful over grilled pork or a green salad with fresh citrus; as well as grilled chicken and seafood. The pineapple juice is just from a can of sliced pineapple (unsweetened), and I will use the pineapple as a garnish, often grilling it. Fresh ginger and the honey dijon mustard really makes a difference in this dressing.

1/2 cup mayonnaise
1/2 cup pineapple juice, unsweetened
2 tablespoons honey dijon mustard (if you don't have honey dijon mustard, use 2 tablespoons dijon and 1/2 tablespoon honey)
2 teaspoons fresh ginger, grated
1/4 cup orange juice
1/4 cup pineapple juice

Steps:

  • Option -- You can use a mix of orange juice and pineapple rather than all pineapple if you think pineapple is too sweet. I happen to love it with the mustard and ginger. But you can mix the two if you prefer.
  • Dressing -- Just add all the ingredients and whisk well to combine. Chill at least 30 minutes.
  • Serve -- ENJOY! Serve over your favorite greens, pork, chicken, or seafood.
