PEACH AND ROASTED RED PEPPER SALSA



Peach and Roasted Red Pepper Salsa image

A dazzler of a salsa, savory and sweet all at the same time.

Number Of Ingredients 8

2 tablespoons rice vinegar
1 tablespoon fresh lemon juice
2 tablespoons minced cilantro
1 teaspoon honey
Kosher salt and freshly ground pepper (to taste)
1 red pepper (roasted and diced)
2 cups finely diced peeled ripe peaches (see recipe intro)
¼ cup chopped onion

Steps:

  • In a medium-sized bowl combine the vinegar, lemon juice, cilantro, honey, salt and pepper. Add the bell pepper, peaches and onion and gently toss together. Cover and chill salsa up to 4 hours.

Grilled Peach and Red Bell Pepper Salsa image

Yield Makes about 2 1/4 cups

Number Of Ingredients 7

2 tablespoons olive oil (preferably extra-virgin)
2 tablespoons finely chopped fresh basil
1 tablespoon finely chopped fresh mint
1 garlic clove, pressed
2 large firm but ripe peaches (about 1 pound), halved, pitted
1 large red bell pepper, quartered, seeded
1 tablespoon cider vinegar

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler. Mix oil, basil, mint and garlic in small bowl. Season to taste with salt and pepper. Lightly brush cut side of peaches with half of oil mixture.
  • Grill or broil peaches, cut side only, until light brown, watching closely to avoid burning, about 2 minutes. Cool peaches. Grill or broil pepper, peel side only, until charred, about 8 minutes. Place pepper in paper bag; let stand 10 minutes. Peel pepper. Cut peaches and pepper into 1/2-inch pieces. Transfer to medium bowl. Add vinegar and remaining half of oil mixture. Season salsa to taste with salt and pepper, toss gently to blend. (Can be prepared 2 hours ahead. Cover and refrigerate.)

Serve this summery salsa over grilled chicken breasts, lamb chops, or flank steak for an infusion of spicy sweetness.

1/2 recipe Grilled Peaches
1 cup plum tomatoes, diced and seeded
1 jalapeno, minced (seeds and ribs removed for less heat, if desired)
1/2 cup fresh basil, chopped
2 tablespoons fresh lime juice
Coarse salt and ground pepper

Steps:

  • Prepare Grilled Peaches; using a paper towel, rub off skins, and cut peaches into 1/4-inch pieces.
  • In a medium bowl, combine peaches, plum tomatoes, jalapeno, fresh basil, and fresh lime juice; season with coarse salt and ground pepper. Serve with tortilla chips or on top of grilled fish or chicken, if desired.

Fresh peaches with creamy avocado, bell pepper, onions, and jalapeno make a great summertime salsa. Use as a topper for grilled fish or chicken, or just dip tortilla chips in it. Not a fan of avocados? The salsa is just as great without it. The longer it can marinate, the better it is.

2 fresh peaches - peeled, pitted, and diced
1 jalapeno pepper, seeded and minced
½ red onion, minced
½ red bell pepper, minced
¼ cup chopped fresh cilantro, or to taste
2 cloves garlic, grated
½ lime, juiced
½ lemon, juiced
salt and ground black pepper to taste
1 avocado - peeled, pitted, and diced

Steps:

  • Gently mix peaches, jalapeno pepper, red onion, red bell pepper, cilantro, garlic, lime juice, and lemon juice in a bowl; season with salt and black pepper.
  • Cover bowl with plastic wrap and refrigerate at least 30 minutes. Fold avocado into the salsa to serve.

  • Gently rub peaches with a terry cloth towel to help remove peach fuzz, then rinse under cold water.
  • Dice peaches, tomato, onion, bell pepper, jalapeño, and cilantro and add to a medium bowl. Add lemon juice juice, salt and pepper, gently toss to combine. Adjust lime and salt. Add optional chipotle powder, starting conservatively with a ¼ teaspoon.
  • Taste, and and adjust according to preferences. You want a delicious balance between sweet, salt, lime and heat.
  • Serve with chips, in tacos, or over fish or grilled chicken. This Peach Salsa would be a nice addition to Burrito bowls too. Or you could even make bruschetta out of it!
