GREEK MARINATED OCTOPUS IN OIL AND VINEGAR

Greek Marinated Octopus in Oil and Vinegar image

This octopus marinated in an oil and vinegar mixture and served with a sprinkle of oregano is a favorite Greek appetizer or meze, side dish, or main dish.

Provided by Nancy Gaifyllia

Categories     Appetizer     Dinner

Time 6h20m

Yield 6

Number Of Ingredients 6

4 1/2 pounds octopus (fresh or frozen and thawed)
3 1/2 ounces cooking water from the pressure cooker
3 1/2 ounces wine vinegar (good quality)
2 tablespoons extra-virgin olive oil
Garnish: extra-virgin olive oil to drizzle
Garnish: ground Greek oregano (rigani)

Steps:

  • Gather the ingredientsl.
  • Under running water, remove and discard the ink sac, stomach, and eyes from the large head cavity of the octopus bodies. (if you're squeamish, wear rubber gloves). Remove the beak, at the bottom of the head where it joins the tentacles, with a sharp knife.
  • Place the whole octopus in a pot with enough boiling water to cover generously. When it resumes boiling, cook for 10 minutes.
  • Remove from heat, and drain. When cool enough to handle, rub the octopus with your hands under running water to remove the dark outer membrane. This comes off fairly easily, and if it doesn't all come off, that's all right.
  • Place the octopus in a pressure cooker or Instant Pot with enough water to cover. Bring to a boil, seal, and when pressure is reached, lower the heat and cook for 10 minutes. If using an Instant Pot, use quick pressure release, remove the octopus, and drain in a colander. Reserve the cooking water in the pressure cooker.
  • When the octopus is cool enough to handle, cut it into bite-size pieces.
  • Place the octopus pieces into a bowl with 3 1/2 ounces of reserved cooking water saved from the pressure cooker, 3 1/2 ounces of vinegar, 2 tablespoons of olive oil, and mix well. This should be enough to completely cover the octopus; if it doesn't, make a little more marinade.
  • Cover and refrigerate for at least 5 to 6 hours before serving.
  • To serve, remove the octopus from the marinade (which may become slightly gel-like), drizzle with more olive oil and sprinkle with oregano. As a side dish, marinated octopus goes well with fakes ( lentil soup ), perhaps some cauliflower, and Greek olives. As a meze (appetizer), it's perfect with ouzo.

  • Grill octopus until charred on all sides, 3 to 4 minutes per side.
  • Remove from heat, slice into pieces, and place on a serving platter. Drizzle with extra virgin olive oil, squeeze lemon over top, sprinkle with parsley, and season with salt and pepper to taste. Serve immediately.

OCTOPUS ALLA KARVOUNA (CHARCOAL-GRILLED OCTOPUS)

Octopus alla Karvouna (Charcoal-Grilled Octopus) image

Provided by Food Network

Categories     main-dish

Time 5h10m

Yield 4 servings

Number Of Ingredients 19

1 medium red onion
4 cups rice vinegar
4 cups granulated pure cane sugar
3 to 4 pounds raw Spanish octopus, frozen or fresh (thawed if frozen)
3 tablespoons baking soda
1 cup plus 2 teaspoons extra-virgin olive oil
1 cup dry white wine (save the cork for cooking)
1/4 cup whole black peppercorns
2 dried bay leaves
2 cloves garlic
2 lemons, halved, plus additional lemon wedges for serving
1 tablespoon kosher salt
1/2 tablespoon ground black pepper
8 ounces wild arugula
2 ounces cabernet sauvignon vinegar
2 ounces Picual olive oil
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme

Steps:

  • For the pickled red onion: Slice the red onion into 1/8-inch strips and place in a large, heat-safe container. Bring the rice vinegar and sugar to a boil, stirring on occasion, until the sugar is completely dissolved, then turn off the heat. Let the liquid cool for 5 minutes, then pour the mixture into the container with the onions and let cool to room temperature. Cover and refrigerate. When the onions turn bright pink and fluffy, they are ready (4 to 24 hours).
  • Octopus preparation: Spread out the octopus on a cutting board and cover completely with plastic wrap. Tenderize the octopus with a mallet, starting from the middle body extending down the tentacles. Transfer to a pan and lightly sprinkle the baking soda over both sides of the octopus, then let sit at room temperature for 1 hour.
  • Poaching liquid: In a 10-quart pot, add 1 cup extra-virgin olive oil, wine and wine cork, peppercorns, bay leaves, garlic, lemons and 6 to 8 cups water. (The water line should be around 1 inch above the octopus once dropped into the pot.)
  • Cooking the octopus: Bring the poaching liquid to just about a simmer, 180 to 190 degrees F. Rinse the resting octopus in the sink to remove the excess baking soda. Transfer the octopus to the pot and continue to simmer until the internal temperature reaches 175 degrees F, 60 to 70 minutes.
  • Breaking down the octopus: Place the octopus on a cutting board, and separate each tentacle from the body using a knife. Using the back of the knife, gently remove the gelatinous skin from each tentacle. (If your knife skills are limited, you can use paper towels and gently wipe the skin from the tentacles.)
  • Grilling the octopus: Light your back patio grill and bring it up to 450 to 500 degrees F. Lightly cover the octopus tentacle in 1 teaspoon extra-virgin olive oil, salt and pepper. Place on the grill and sear, 3 to 4 minutes per side. Pull off the grill and let rest for a few minutes. Meanwhile, build the accompaniment salad by tossing the arugula with some pickled red onions, the remaining teaspoon extra-virgin olive oil, salt and pepper.
  • Plating: On a clean cutting board, place the grilled octopus and slice the tentacles into 1-inch pinwheels. Arrange on a plate. Drizzle with some cabernet vinegar and Picual olive oil, then sprinkle with the herbs. To finish the plate, add a small handful of the dressed greens, and enjoy.

GRILLED OCTOPUS

Grilled Octopus image

Provided by Mark Bittman

Categories     appetizer, main course

Time 2h

Yield 4 to 6 servings

Number Of Ingredients 10

3 pounds cleaned octopus
1 bay leaf
4 thyme branches
20 peppercorns
1 teaspoon salt, plus to taste
1 head garlic, cut in half along its equator
3 lemons
3 tablespoons extra virgin olive oil
Freshly ground black pepper to taste
Minced parsley for garnish

Steps:

  • Combine octopus, bay leaf, thyme, peppercorns, 1 teaspoon salt, garlic and 1 lemon, cut in half, in saucepan along with water to cover. Turn heat to medium, cover, and bring to boil. Adjust heat so that liquid simmers slowly, and cook until octopus is tender, for 30 to 90 minutes, depending on whether you're using two smaller octopuses or 1 larger one (check for doneness with point of sharp knife). Drain, discarding everything but octopus. (You can prepare this 24 hours in advance up to this point; cover, and refrigerate octopus.) Set aside.
  • Start charcoal or wood fire, or preheat gas grill; fire should be quite hot. Grill rack about 4 inches from heat source. Cut octopus into large serving pieces, brush it with half the olive oil, and sprinkle it with salt and pepper. Grill it quickly until outside browns but inside is not dried out. Cut remaining lemon into wedges.
  • Brush octopus with remaining olive oil. Serve with lemon wedges, hot or at room temperature, garnished with parsley.
