1 lb ground sausage
1/3 cup chopped onion
1 tablespoon butter
3/4 cup milk
1 (3 ounce) package cream cheese
3 eggs
1 cup shredded cheddar cheese
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt (use less if the sausage is salty)
1/8 teaspoon pepper
1 (9 inch) deep dish pie shells, partially baked and cooled

Steps:

  • Preheat the oven to 375°.
  • In a heavy skillet over medium heat, crumble the sausage with a fork.
  • Sauté the sausage until completely cooked.
  • Drain off the fat, remove the sausage, and set aside.
  • Melt the butter in another skillet over medium heat.
  • Sauté the onions in the butter until tender.
  • Add the milk and heat until steam rises, but do not boil the milk.
  • Cut the cream cheese into small pieces, add it to the onion mixture, and remove the pan from the heat.
  • In a large bowl, beat the eggs, then add the cheddar, the onion mixture, the Worcestershire, salt, and pepper.
  • Mix thoroughly and pour this into the pie crust.
  • Top with cooked sausage, and bake for 30 minutes, or until set.

3 teaspoons olive oil
1 brown onion, coarsely grated
6 thin beef sausages
1 carrot, coarsely grated
2 zucchini, coarsely grated
1 cup grated tasty cheese
1/2 cup plain flour
1 1/2 cups milk
3 eggs

Steps:

  • Preheat oven to 160°C Grease a 4cm deep, 17.5cm x 24.5cm (base) baking dish.
  • Heat oil in a frying pan over medium heat. Add onion. Cook, stirring often, for 2 minutes or until soft. Remove to a bowl. Add sausages to frying pan. Cook for 6 minutes, turning, or until cooked through. Set aside to cool for 5 minutes. Thinly slice. Spoon sausages, onion, carrot, zucchini and cheese over base of baking dish.
  • Whisk flour and milk in a bowl until smooth. Add eggs, and salt and pepper. Whisk until well combined. Pour over sausages. Bake for 50 to 60 minutes or until set. Stand for 5 minutes before serving.

Found this in a 30 minute or less cookbook. I tried this, and have tweaked it a little, Quick dinner for the family.

1 lb bulk pork sausage
1 cup onion, chopped
3/4 cup green bell pepper, chopped
1/4 cup fresh mushrooms, chopped
3 teaspoons minced garlic
2 1/2-3 cups monterey jack cheese, divided
1 1/3 cups milk
3 eggs
3/4 cup Bisquick baking mix
3/4 teaspoon rubbed sage
1/2 teaspoon pepper

Steps:

  • In a large skillet, cook the sausage, onion, and bell pepper, mushrooms, and garlic over medium heat until sausage is no longer pink, drain.
  • Stir in 2 cups cheese, and transfer to a greased 9 inch deep dish pie plate.
  • In a small bowl, combine the milk, eggs, bisquik, sage, and pepper, and pour over sausage mixture.
  • Bake at 400 degrees for 20-25 minutes or until a knife inserted comes out clean.
  • Sprinkle the remaining 1/2 - 1 cup cheese and bake 1-2 minutes longer, or until cheese is melted.
  • Let stand 10 minutes before serving.

GROUND BEEF AND SAUSAGE PIE (PASTRY OR POTATO TOPPED)

This can also be topped with cooked mashed potatoes instead of the pastry, the filling can also be made in one 10-inch deep-dish pie plate topped with pastry instead of a casserole dish. If you are topping this with mashed potatoes then bake in a shallow baking dish instead of a casserole dish. Prep time does not include preparing the pastry. This is really good!

1 large prepared unbaked pastry shell
1 lb ground beef
1 lb Italian sausage, casings removed (or use 2 pounds ground beef)
seasoning salt
black pepper
1/4 cup grated parmesan cheese (or to taste)
1/2 teaspoon dried chili pepper flakes
1 large onion, chopped
2 tablespoons minced fresh garlic
2 large celery ribs, diced
2 carrots, peeled and diced
1 (10 ounce) can sliced mushrooms, drained
1 1/2 cups canned corn niblets, drained
1 tablespoon Worcestershire sauce
1 (10 ounce) can beef broth (undiluted) or 1 (10 ounce) can consomme (undiluted)
2 tablespoons very soft butter
2 tablespoons flour

Steps:

  • Set oven to 350 degrees.
  • Grease a round or oval baking dish.
  • In a large skillet brown the ground beef and Italian sausages with dried chili flakes, onion, garlic, celery, Worcestershire sauce and carrots until the ground beef is no longer pink (about 10 minutes) drain fat.
  • Add in grated Parmesan cheese, sliced mushrooms and corn; mix to combine.
  • Add in the broth or consomme; simmer for 15 minutes.
  • Season with salt and black pepper to taste.
  • In a small cup whisk together 2 tablespoons soft butter with the flour and add into the simmering mixture; stir with a wooden spoon until thickened.
  • Transfer the mixture to prepared baking dish.
  • Top with prepared pastry leaving 1-inch overhang, turn the edges under and press firmly to the inside of the dish, then flute.
  • Cut slits in the top to allow steam to escape.
  • Bake for about 35-40 minutes or until the pastry is browned and the pie is bubbley.
  • Let sit 15 minutes before serving.

16 fresh pork sausage links (about 1 pound)
1/2 medium green pepper, chopped
1/2 medium sweet red pepper, chopped
1 tablespoon canola oil
3 cups cooked long grain rice
4 to 5 medium tomatoes, peeled and chopped
1 package (10 ounces) frozen corn, thawed
1 cup shredded cheddar cheese
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon dried basil
1 cup soft bread crumbs
2 tablespoons butter, melted

Steps:

  • Place sausages on a rack in a baking pan. Bake at 350° for 15 minutes or until lightly browned and no longer pink. Cut into 1-in. pieces; set aside. , In a large skillet, saute peppers in oil for 3 minutes or until crisp-tender. Transfer to a 3-qt. baking dish. Add the sausages and the next eight ingredients. , Combine bread crumbs and butter; sprinkle over top. Bake, uncovered, at 350° for 30-40 minutes or until heated through.

This is an old Italian family recipe that has been handed down for three generations. Recipe makes 2-10" pies.

3 lbs bulk sweet Italian sausage
3 lbs ricotta cheese
7 eggs
8 tablespoons grated parmesan cheese
1 lb grated mozzarella cheese
1/3 cup fresh parsley, chopped
5 cups all-purpose flour
1/2 cup margarine, room temperature
8 eggs
1 egg, beaten

Steps:

  • To make filling-.
  • In a large pan, brown sausage meat until no longer pink. Place in colander and rinse with water to remove excess fat. Drain well and cool.
  • In a large bowl, mix ricotta and eggs until well blended. Add grated cheese, mozzarella and parsley. Add cooled sausage meat. Mix well and set aside while making crust.
  • To make crust-.
  • Mix flour, margarine and 8 eggs until dough is formed. Knead a few minutes until dough is smooth and elastic. Divide dough into four pieces. Roll out each piece large enough to fit a 10" pie plate. Fill pie shells with sausage filling and cover with top crust. Seal top and bottom crust with beaten egg; pinch and seal crust. Brush top of pies with beaten egg and bake at 350F for 50 minutes. Pie should be deep golden brown.
  • This pie tastes best served at room temperature or chilled. (Do not re-heat in microwave, pie becomes watery).

1 3/4 cups flour, plus
2 tablespoons flour

4 scallions, thinly sliced

Steps:

  • Preheat oven to 400 degrees.
  • Using a blender, mix the milk and eggs for 10 seconds.
  • Blend in the flour and salt for 2 minutes and let rest.

1 lb italian sausage, sweet
1 medium onion, chopped
1 medium garlic cloves, crushed
10 oz fresh spinach
1/4 tsp oregano
5 eggs, beaten slichtly
1/2 c country dijon mustard
2 9-inch pie crusts
1/4 c parmesan cheese, grated

Steps:

  • 1. In large skillet, cook sausage, onion and garlic until sausage is crumbly.
  • 2. Drain, reserving 1 tablespoon drippings.
  • 3. Place mixture in large mixing bowl.
  • 4. To drippings in skillet, add spinach.
  • 5. Cook, covered, 2 minutes or until wilted.
  • 6. Cool slightly.
  • 7. Chop.
  • 8. Add to sausage mixture.
  • 9. Mix in oregano, eggs and mustard.
  • 10. Pour in pastry-lined pie shell.
  • 11. Sprinkle with cheese.
  • 12. Top with pastry.
  • 13. Cut vents.
  • 14. Bake in preheated 400 oven 35 minutes or until browned.
