Moroccan Mechoui (Slow Roasted Leg of Lamb or Shoulder) image

Moroccan mechoui calls for slowly roasting a leg of lamb or whole shoulder until the meat is tender enough to be pulled easily off the bone.

1 whole leg of lamb (bone-in or shoulder)
4 tablespoons unsalted butter , room-temperature
3 or 4 cloves garlic , pressed
2 teaspoons kosher salt (or to taste)
1 teaspoon freshly ground black pepper (or to taste)
1 teaspoon cumin
1/2 teaspoon saffron threads , crushed
1/4 teaspoon turmeric
1 tablespoon olive oil
Salt for dipping, for garnish
Cumin for dipping, for garnish

Steps:

  • Gather the ingredients.
  • Trim excess fat from leg of lamb or shoulder, and make a dozen or more deep cuts into meat with tip of a sharp knife.
  • Combine butter with garlic, salt, pepper, cumin, saffron, turmeric, and olive oil. Spread mixture over entire leg or shoulder of lamb, working some butter into incisions made with knife.
  • Place lamb in a roasting pan, and proceed with one of the roasting methods below. Very Slow-Roasting Method: 7 1/2 to 9 Hours This is the preferred Marrakesh method. You can reduce the cooking time to 4 to 5 hours by using a 350 F/180 C oven temperature.
  • Preheat oven to 250 F.
  • Place lamb in a roasting pan and cover with foil, sealing edges tightly. Roast lamb, basting hourly and resealing foil each time, for 7 to 8 hours, or until juices run clear and meat is tender enough to pinch off the bone.
  • Small pieces of lamb, weighing less than 4 pounds might finish cooking in 6 hours. Larger pieces might take closer to 9 hours.
  • Remove foil and increase oven temperature to 475 F. Brown lamb, basting frequently, for 15 to 30 minutes, or until meat is well-colored.
  • Transfer lamb to a platter and allow it to rest for 10 minutes before serving. If desired, pour juices over and around lamb. Serve dishes of salt and cumin on the side for dipping. Traditional Roasting Method: 3 to 4 Hours When short on time, this method also works well, but the meat won't be quite as tender as the above method. The lamb will, however, have more of a crisp crust, which some Moroccans find desirable.
  • Heat oven to 475 F. Add 1/2 cup of water to pan, and roast lamb, uncovered, for 20 minutes.
  • Reduce oven temperature to 325 F and continue roasting lamb, basting occasionally, for 2 1/2 to 3 hours, or until meat is tender, juices run clear, and lamb has a dark, crisp crust.
  • Transfer lamb to a platter and allow it to rest for 10 minutes before serving. If desired, juices can be poured over and around lamb. Serve dishes of salt and cumin on the side for dipping. Fast Roasting Method: 1 to 2 Hours
  • Preheat oven to 475 F. Wrap exposed lower leg of the lamb in foil to prevent burning. Add 1/2 cup of water and a few tablespoons of olive oil to pan, and roast lamb, uncovered, for 1 to 2 hours, basting frequently, until lamb is well browned and juices run clear when a knife is inserted deep into meat.
  • If meat has browned before juices are clear, cover meat with loose foil to prevent further darkening.
  • Transfer lamb to a platter and allow it to rest for at least 10 minutes before serving. If desired, juices can be poured over and around lamb. Serve dishes of salt and cumin on the side for dipping.

How to grill a leg of lamb over indirect heat for tender, juicy meat. Flavor it before you grill it with a thick and fragrant leg of lamb marinade with rosemary, garlic, lemon, Dijon mustard and olive oil. Tips on cutting a bone-in leg of lamb.

3.5 to 4 lbs lamb leg, bone-in (about 3/4 lb less if boneless)
5-6 sprigs rosemary, more for garnish
3-4 cloves garlic
2 tbsp Dijon mustard
3 tbsp extra virgin olive oil
1 lemon, zest only
2 tsp kosher salt, plus more for seasoning
1 tsp pepper, plus more for seasoning

Steps:

  • Make the marinade for the lamb leg - very finely chop the rosemary leaves, mince the garlic and press onto it with the flat side of the knife, zest the lemon. Combine all three with the olive oil, Dijon mustard and salt and pepper. Mix well.
  • Trim any excess fat from the leg of lamb, leaving a good fat cap on top. Score the fat cap in a diamond pattern until you just reach the meat. Apply the marinade paste all over the lamb, rub it in the scored parts. Place onto a plate, season with salt and pepper and cover*. Marinate refrigerated from 4 hours to overnight.
  • Bring the leg of lamb to room temperature (about 30-40 minutes of the counter) and preheat a charcoal** grill to 325F. No need to scrape off the marinade paste - it will help form a flavorful crust.
  • Place the leg of lamb directly onto the grill rack, over indirect heat, fat cap facing up. Turn it over/reposition it every 20 minutes or so to expose all surfaces to the indirect heat and the grill rack. Do so last for the side with the fat. Maintain a constant grill temperature and grill until a meat thermometer inserted in the thickest part registers 135 F for medium-rare. If you'd like a section of the lamb leg to be cooked medium (as seen in the pictures) grill the meatiest side of the leg until the temperature there is 140-145F. *** Allow the lamb to rest onto a board for 10-15 minutes before you carve it. You may loosely tent it with foil to keep it warm.

2 pounds (2 pints) plain yogurt (regular or low-fat)
1/2 cup good olive oil, plus more for brushing grill
1 lemon, zested
1/2 cup freshly squeezed lemon juice (3 lemons)
3/4 cup fresh whole rosemary leaves (2 large bunches)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 (5-pound) butterflied leg of lamb (9 pounds bone-in)

Steps:

  • Combine the yogurt, olive oil, lemon zest and juice, rosemary, salt, and pepper in a large non-reactive bowl. Add the lamb, making sure it is covered with marinade. Marinate in the refrigerator, covered, overnight or for up to 3 days.
  • Bring the lamb to room temperature. Prepare a charcoal grill with hot coals. Scrape the marinade off the lamb, wipe the meat with paper towels, and season it generously with salt and pepper. Brush the grill with oil to keep the lamb from sticking, and grill on both sides until the internal temperature is 120 to 125 degrees for rare. This will take 40 minutes to 1 hour, depending on how hot the grill is.
  • Remove the lamb to a cutting board, cover with aluminum foil, and allow to rest for 20 minutes. Then slice and serve.

1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
4 garlic cloves, minced
1 tablespoon dried oregano (preferably Greek), crumbled
2 teaspoons salt
1 teaspoon black pepper
1 (4 1/2- to 5-lb) butterflied boneless leg of lamb, trimmed of fat
3 10- to 12-inch metal skewers

a large (2-gallon) heavy-duty sealable plastic bag; 3 or 4 (10- to 12-inch) metal skewers

Steps:

  • Combine oil, lemon juice, garlic, oregano, salt, and pepper in sealable plastic bag. Add lamb and seal bag, pressing out air. Turn bag to coat lamb, then put bag in a shallow baking pan and marinate, chilled, turning bag over occasionally, at least 8 hours.
  • Bring lamb to room temperature, about 1 hour, before grilling.
  • Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas); see Grilling Procedure.
  • Remove lamb from marinade (discard marinade) and run 3 or 4 skewers lengthwise through lamb about 2 inches apart. Grill on a lightly oiled grill rack, covered only if using gas grill, turning over occasionally and, if necessary, moving around on grill to avoid flare-ups, until thermometer registers 125 to 128°F, 8 to 14 minutes total for medium-rare.
  • Transfer lamb to a cutting board and remove skewers. Let lamb stand, loosely covered with foil, 20 minutes. (Internal temperature will rise to 135°F while meat stands.) Cut across the grain into slices.

4 cloves garlic, chopped fine
2 tablespoons fresh rosemary leaves, chopped fine

1 boneless leg of lamb, 5 to 6 pounds, butterflied

2 handfuls pecan shells, or wood chips, soaked in water

Steps:

  • Combine the garlic, rosemary and olive oil in a bowl. Season the lamb with salt and pepper, then massage with the garlic and rosemary mixture and put the meat in the bowl. Cover and allow to marinate in the refrigerator for at least 30 minutes.
  • Allow it to come to room temperature, approximately 30 minutes. Meanwhile, build a fire in your grill, leaving 1/3 of the cooking area free of coals.
  • When the fire is hot, sprinkle the pecan shells or wood chips over the fire and place the lamb fat side down. Sear each side of the lamb for approximately 4 minutes each, then remove the lamb to the side of the grill without coals and roast, covered, for approximately 30 to 40 minutes.
  • Tent in foil for 10 to 15 minutes, and serve.
