Grilled lamb chops are an elegant and easy-to-make main course. Treat yourself to these delicious chops that are seasoned with rosemary, thyme and garlic. This recipe can be readily adjusted for one, two or more servings.

8 lamb chops, about 1 inch thick
2 tablespoons chopped fresh rosemary
1 tablespoons chopped fresh thyme
2 cloves garlic, minced (about 1 teaspoon of minced garlic)
2 tablespoons pure olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • In a small bowl, combine rosemary, thyme, garlic and olive oil.
  • Arrange lamb chops in a non-reactive dish. Pour marinade over chops and turn to coat. Cover dish with plastic wrap. Refrigerate 30 minutes or up to 6 hours.
  • Remove lamb chops from marinade and drain. Let stand 20 minutes or until room temperature.
  • Meanwhile, preheat grill to medium-high heat.
  • Season lamb chops with salt. Arrange lamb chops on grill and cook 4 minutes or until nicely seared. Turn chops over and cook 4 minutes or until seared. Cook, 4 more minutes or until an instant read thermometer inserted horizontally into the thickest part of the lamb chop registers 135˚F for medium-rare and 150˚F for medium. (see Notes)
  • Remove lamb chops from the grill. Tent with foil and let rest for 3 minutes.
  • Season to taste with salt and pepper. Serve hot.

For an easy dinner tonight, make Giada De Laurentiis' Grilled Lamb Chops, marinated in fresh garlic, rosemary and thyme, from Everyday Italian on Food Network.

2 large garlic cloves, crushed
1 tablespoon fresh rosemary leaves
1 teaspoon fresh thyme leaves
Pinch cayenne pepper
Coarse sea salt
2 tablespoons extra-virgin olive oil
6 lamb chops, about 3/4-inch thick

Steps:

  • In a food processor fitted with a metal blade add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and pulse into a paste. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.
  • Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.

¼ cup distilled white vinegar
2 teaspoons salt
½ teaspoon black pepper
1 tablespoon minced garlic
1 onion, thinly sliced
2 tablespoons olive oil
2 pounds lamb chops

Steps:

  • Mix together the vinegar, salt, pepper, garlic, onion, and olive oil in a large resealable bag until the salt has dissolved. Add lamb, toss until coated, and marinate in refrigerator for 2 hours.
  • Preheat an outdoor grill for medium-high heat.
  • Remove lamb from the marinade and leave any onions on that stick to the meat. Discard any remaining marinade. Wrap the exposed ends of the bones with aluminum foil to keep them from burning. Grill to desired doneness, about 3 minutes per side for medium. The chops may also be broiled in the oven about 5 minutes per side for medium.

8 lamb loin chops (3 ounces each )
1/2 teaspoon pepper
1/4 teaspoon salt
3 tablespoons Dijon mustard
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh thyme
3 garlic cloves, minced

Steps:

  • Sprinkle lamb chops with pepper and salt. In a small bowl, mix mustard, rosemary, thyme and garlic., Grill chops, covered, on an oiled rack over medium heat 6 minutes. Turn; spread herb mixture over chops. Grill 6-8 minutes longer or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).
