1 cup rice, regular or instant, cooked according to package directions
Cooking spray
2 pounds large or jumbo shrimp, peeled and deveined
Salt and freshly ground black pepper
2 tablespoons freshly chopped cilantro leaves
1 cup orange juice
2 tablespoons fresh lime juice
2 teaspoons minced fresh ginger
2 teaspoons cornstarch
1/2 teaspoon garlic powder

Steps:

  • Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of shrimp with salt and black pepper. Place shrimp on hot pan and cook 2 to 3 minutes per side, until bright pink and cooked through. Sprinkle shrimp with cilantro.
  • Meanwhile, in a small saucepan, whisk together orange juice, lime juice, ginger, cornstarch, and garlic. Set pan over medium heat and bring to a simmer. Simmer 2 minutes, until mixture thickens. Season, to taste, with salt and black pepper. Transfer sauce to a serving bowl. Serve 2/3 of the shrimp with the rice and dipping sauce on the side. Reserve remaining shrimp for wraps, if desired.

1 teaspoon white sugar
2 dashes hot pepper sauce (such as Tabasco®), or to taste

2 (12 fluid ounce) cans or bottles beer
1 lemon, juiced
2 tablespoons seafood seasoning (such as Old Bay®)
12 dashes hot pepper sauce (such as Tabasco®), or to taste
1 tablespoon chopped garlic
½ teaspoon cayenne pepper
½ teaspoon ground black pepper
3 pounds raw shrimp, or to taste

Steps:

  • Stir mayonnaise, lime juice, Dijon mustard, sugar, and hot pepper sauce together in a bowl until smooth; season with salt and pepper.
  • Cover bowl with plastic wrap and refrigerate mustard sauce for at least 2 hours.
  • Mix beer, lemon juice, seafood seasoning, hot pepper sauce, garlic, cayenne pepper, and black pepper together in a saucepan; bring to a boil and add shrimp. Cook shrimp just until they are bright pink on the outside and the meat is no longer transparent in the center, about 2 minutes; drain immediately.

1 tablespoon vegetable oil
2 garlic cloves, crushed
1/2 teaspoon fresh ground black pepper
24 large shrimp, peeled and deveined
8 large scallions, trimmed to 8inch lengths
skewer, soaked in water
1 ripe mango (~12 oz)
8 ounces canned pineapple chunks in juice
1/3 cup chopped red bell pepper
1/4 cup thinly sliced scallion
2 tablespoons honey
2 tablespoons fresh lemon juice
1 teaspoon grated lemon peel
1/8 teaspoon hot red pepper sauce

Steps:

  • Start fire in grill (or turn on broiler).
  • In small bowl, stir oil, garlic, and pepper to mix. Set aside.
  • Arrange shrimp on skewers.
  • Place shrimp skewers on hot grill rack, brush with oil mixture, cook 1-2 min on each side until pink and cooked through.
  • Cook scallions 2-3 min, without turning, until lightly charred and tender.
  • PINEAPPLE-MANGO RELISH:.
  • Peel mango, and cut into 1/4inch chunks. Drain pineapple.
  • Combine all in medium sized bowl.
  • Toss thoroughly to mix.

1 lb large shrimp, peeled and tails on
1 large papaya, 2-inch bite size pieces
1 medium onion, cut in quarters 2-inch bite size pieces
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup dark rum
1/4 cup orange juice
1 tablespoon lime juice
1 tablespoon vegetable oil
1 teaspoon garlic, minced
1/2 teaspoon ground ginger
1/2 teaspoon red pepper flakes (to taste)
2 cups jasmine rice
1 1/2 cups water
1 cup unsweetened coconut milk
2 teaspoons cilantro, chopped
salt
pepper

Steps:

  • Marinade -- Mix the rum, citrus juice, olive oil, garlic, ginger and red pepper flakes in a large baggie and shake well to combine the flavors. Add the shrimp and marinade 2-3 hours. NO longer. The last 30 minutes add the pieces of onion and papaya.
  • Skewer -- I like to use bamboo, but use anything you like. I don't find it necessary to soak the bamboo other than just a minute or two. The shrimp is so quick cooking, just a quick soak or rinse if fine for me. Alternate shrimp, papaya onion and just keep going. Don't over crowd the skewer. That way each item cook all the way through. Season with salt and pepper. Any leftover marinade I just reheat in the microwave and then use to brush on the skewers as they grill.
  • Grilling -- After making your skewers, let them set and come to room temp before grilling. They can be grilled outside, charcoal or gas or can be done inside on a grill pan. NOW -- make the rice --
  • Rice -- Bring the water, coconut and salt to a boil and add the rice. Most recipes will take about 15 minutes to cook covered. Just follow the recipe on the package. Each rice brand can take different times. Once light and fluffy add the cilantro and any salt and pepper is needed.
  • Serve the skewers over the coconut rice. I love to serve this with simple sauteed sugar snap peas. A little butter, red pepper flakes, salt and pepper. 3-4 minutes and serve. But use any veggie you enjoy. Bok Choy pan seared is also great with this.

My version of a recipe found online. I love grilled pineapple and this went great with my toasted coconut rice pilaf and spice rubbed grilled chicken! The shrimp was tender and juicy! If using wooden skewers make sure you soak them in cold water for at least 30 minutes. You could add some crushed red pepper or hot sauce to the marinade for some kick:-0

1 1/2 lbs florida key west shrimp, peeled and deveined
1 cup fresh pineapple, cut into chunks
1 red bell pepper, cut into chunks
1 red onion, quartered
2 tablespoons fresh key lime juice
2 tablespoons olive oil
2 tablespoons honey or 2 tablespoons agave nectar
1 tablespoon garlic, minced
3 -4 green onions, diced white and light green parts only
2 teaspoons soy sauce

Steps:

  • Arrange shrimp, pineapple chunks, bell pepper and onion on wooden skewers and place in a flat bottom glass casserole dish.
  • In a small bowl, combine lime juice, oil, honey, garlic, green onions and soy sauce, whisking until honey is dissolved, reserving one ounce for basting during cooking.
  • Pour the remaining marinade over shrimp skewers. Cover and refrigerate for 1 hour.
  • Place skewers on grill about 6 inches from coals or gas flame. Cook for 3 to 4 minutes on each side until shrimp are opaque and pineapple begins to brown; baste with reserved marinade before turning.

  • Add the lime zest, lemon zest, salt, pepper, and garlic to the bowl of a food processor. Pulse a few times until the garlic is broken into little bits, then add the basil, cilantro, parsley, chives, and thyme. run the motor for about 5 seconds to get everything moving, then slowly stream in the olive oil until everything is well combined.
  • Transfer marinade to a zip-top bag with the shrimp, seal the bag, then squish everything around until the shrimp are all fully coated. Marinate in the refrigerator for at least 1 hour, or up to overnight, turning the bag every so often to make sure the shrimp are marinating evenly.
  • When ready to cook, preheat a grill to medium-high heat. If using wooden skewers, be sure to let them soak in warm water for at least 30 minutes prior to cooking so they don’t catch fire. Remove shrimp from the marinade, then place 3-4 of them on each skewer.
  • Grill shrimp for about 2-3 minutes on each side, depending on size, or until they’re slightly charred on the outside and pink / opaque throughout. Be careful not to overcook, as the shrimp will turn rubbery and tough. Garish with any leftover herbs and a few lemon and lime wedges. Serve immediately.
