Mini Grilled Gruyere and Ham Sammies with Cornichons image

Provided by Anne Burrell

Time 30m

Yield about 4 dozen mini sammies

Number Of Ingredients 6

2 cups cornichon pickles, plus 24, halved lengthwise
12 slices Pullman loaf, or other tight crumb white bread
1 1/2 cups Dijon mustard
12 thick slices Gruyere
6 slices ham
2 sticks unsalted butter, room temperature

Steps:

  • In a food processor, finely chop 2 cups cornichons until they are a coarse paste.
  • Spread one side of each piece of bread with Dijon. Top each piece of bread with a slice of Gruyere. Place the ham on half of the pieces of the bread and cheese. Spread the cornichon paste on the other half of the pieces of bread and cheese.
  • Preheat a griddle or saute pan.
  • Close the sandwiches and press to secure. Butter the outsides of all the pieces of bread.
  • Place the sandwiches on the griddle or pan and cook until the bread is golden brown, 3 to 4 minutes. Turnover and repeat this process.
  • When the sammies are golden brown and crisp on each side, remove them from the griddle and neatly cut the crusts off the bread. Cut each crustless sandwich into 8 neat mini sammies.
  • Top each mini sammie with a cornichon half and secure it with a toothpick.

GRILLED HAM AND CHIMAY CHEESE SANDWICHES WITH CARAMELIZED BELGIAN ENDIVE

Grilled Ham and Chimay Cheese Sandwiches with Caramelized Belgian Endive image

Chimay "À La Bière" cheese is a Belgian smooth semisoft cheese that is washed with Chimay beer. It has a pungent aroma and mild flavor. Look for it in specialty cheese shops or on amazon.com or igourmet.com, or try another cheese with a beer-washed rind, such as German Temptin cheese.

Provided by Mathieu Palombino

Yield Makes 4 servings

Number Of Ingredients 12

2 tablespoons canola oil
4 heads of Belgian endive, root ends trimmed and discarded, leaves separated
1 tablespoon sugar
1/2 cup Belgian white beer (such as Hoegaarden)
1/4 cup orange juice
8 5 x 3 x 1/2-inch slices country-style bread
Butter
8 thin slices country ham or prosciutto (about 8 ounces total)
8 ounces Belgian Chimay
"À La Bière" cheese or German Temptin cheese, thinly sliced
8 sour pickle spears
Whole grain brown mustard or whole grain Dijon mustard

Steps:

  • Heat oil in large nonstick skillet over medium-high heat until very hot. Add endive leaves and sauté until almost translucent and beginning to wilt, 1 to 2 minutes. Sprinkle sugar over and sauté until endive leaves begin to brown and edges are deep golden brown, stirring often, 2 to 3 minutes. Add beer and orange juice and boil until liquid is reduced to thick glaze and coats endive leaves, 3 to 4 minutes. Season to taste with salt and freshly ground black pepper. Let cool to room temperature.
  • Preheat oven to 350°F. Arrange bread on baking sheet. Spread 1 side of each bread slice lightly with butter. Turn 4 bread slices over, buttered side down. Divide ham and cheese among plain sides of 4 bread slices. Top with remaining bread slices, buttered side up.
  • Heat large nonstick skillet over medium heat. Add 2 sandwiches to skillet and cook until brown on bottom, 3 to 4 minutes. Transfer sandwiches to same baking sheet, browned side up. Repeat with remaining 2 sandwiches. Bake in oven until sandwiches are brown on bottom and cheese melts, about 5 minutes.
  • Place 1 sandwich on each of 4 plates. Spoon endive, 2 pickles, and mustard alongside each and serve.

Categories     Lunches

Time 20m

Number Of Ingredients 4

2 slices thick slices of artisan, crusty bread
85 grams of shaved black forest deli ham
4 slices of sharp / old brick style cheddar, broken into smaller pieces
1 tbsp butter

Steps:

  • Begin by getting your fry pan ready on the counter. Butter one side of the bread with 1/2 tbsp of butter. Place the bread butter side down in the fry pan.
  • Take half of the broken up peices of cheese and place them on top of the bread, trying to cover all the available places on the bread.
  • Take the ham and twist each peice loosely so it folds in a small mound. Continue to do this with each piece, stacking them next to each other to cover the top of the cheese.
  • Take the remaining cheese pieces and top the ham with the cheese.
  • Butter the top piece of bread with another 1/2 tbsp of butter and place it, butter side out, on top of the cheese.
  • Place the fry pan onto the stove over medium heat/low heat.Take your time grilling the bread as if you brown the bread too quickly, the cheese will not be melted. Keep an eye on the bottom piece and when it's nicely toasted, carefully flip the sandwich to the other side.
  • Placing a lid on the fry pan helps with melting the cheese slightly faster.
  • When the other side is nicely grilled to golden brown, remove the sandwich onto a plate. Let it rest for a few minutes as the cheese will be LAVA hot!! Cut in half after the wait time is done, and enjoy!

BRAISED ENDIVE WITH HAM AND GRUYèRE

Braised Endive with Ham and Gruyère image

My grandmother passed this recipe down to my mom and she then passed it on to me. It's a casserole of pure comfort. First, bitter endive is simmered until sweet, then wrapped in savory ham and smothered with a creamy nutmeg béchamel. Gruyère tops it off before it's baked until bubbly and golden.

Yield Serves 4

Number Of Ingredients 13

Endive
5 tablespoons unsalted butter
1/4 cup sugar
3 1/2 tablespoons kosher salt
8 large yellow Belgian endive, trimmed
8 ounces thinly sliced Black Forest ham
Béchamel
2 tablespoons unsalted butter
1/4 cup all-purpose flour
2/3 cup whole milk, warmed
1 tablespoon plus 1 teaspoon freshly grated nutmeg
1/4 teaspoon freshly ground black pepper
8 ounces Gruyère cheese, shredded (1 2/3 cups)

Steps:

  • To cook the endive, combine the butter, sugar, salt, and 10 1/2 cups water in a large pot. Bring to a boil, then reduce the heat to maintain a steady simmer. Add the endive, cover, and cook until very tender, about 45 minutes. A knife should be able to pierce through with no resistance. Use a slotted spoon to transfer the endive to paper towels. Reserve 1 1/4 cups cooking liquid. When cool enough to handle, squeeze out as much liquid as possible from the endive.
  • Wrap each endive with slices of ham. Arrange the endive in a shallow baking dish that holds them snugly; you don't want any space between the endive.
  • Preheat the oven to 400°F.
  • To make the béchamel, melt the butter in a medium saucepan over medium-low heat until golden. Add the flour and cook, whisking constantly, until the mixture smells nutty, about 2 minutes. Continue whisking and add the milk, then the reserved endive cooking liquid in a slow, steady stream. Bring the mixture to a boil while whisking. Continue whisking until thickened, about 5 minutes. Whisk in the nutmeg and pepper.
  • Pour the béchamel over the endive and spread to cover them evenly. Sprinkle the cheese evenly over the top. Set the dish on a rimmed baking sheet and bake until bubbly and golden brown on top, about 15 minutes. If you want the top more browned and crusty, broil for a minute or two after baking. Serve hot.
