This is delicious, and I have made it many times since. We have used many types of fish as well as halibut, which I prefer.

- Preheat grill for medium heat and lightly oil the grate.
- Stir butter, lemon juice, onion powder, parsley, dill, sugar, salt, and pepper together in a bowl; spread evenly over the halibut steaks.
- Cook on preheated grill until the fish flakes easily with a fork, 5 to 6 minutes per side.

HALIBUT WITH BROWN BUTTER, LEMON AND SAGE
This is a simple method for cooking firm, white-fleshed fish on the stovetop from start to finish. If halibut is not available, use thick flounder fillets, snapper, grouper or large sea scallops. The flavor of sage permeates the quick, easy pan sauce and the buttery bread crumbs provide crunchy texture.

- Season fish on both sides with plenty of salt and pepper.
- Pour oil into a large, heavy skillet (preferably cast iron or nonstick) and set over medium-high heat. When oil is hot (but not smoking), swirl to evenly coat the pan, then add fish in a single layer. Let cook undisturbed for 3 to 4 minutes, until first side is nicely browned. Adjust the heat as needed to produce a steady sizzle and prevent scorching.
- Flip and cook fish for about another 3 minutes, until just done. (To test for doneness, use a fork to gently probe the flesh: it should flake easily.) Transfer cooked fish to a warm platter or serving plates.
- Make the sauce: Place skillet back on the stove over medium-high heat. Add butter and sage leaves. Cook butter, swirling the pan, until foamy and just beginning to brown, about 1 minute. Turn off heat and stir in lemon juice.
- Spoon butter sauce and sage leaves over fish. Sprinkle with bread crumbs and parsley. Serve immediately, with lemon wedges.

- Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. In shallow glass or plastic dish or resealable food-storage plastic bag, mix lemon juice, 1 tablespoon oil, the salt, pepper and garlic. Add fish; turn several times to coat with marinade. Cover dish or seal bag and refrigerate 10 minutes.
- Remove fish from marinade; reserve marinade. Cover and grill fish 4 to 6 inches from medium heat 10 to 15 minutes, turning once and brushing with marinade, until fish flakes easily with fork. Discard any remaining marinade.
- Sprinkle fish with parsley and lemon peel.

- In a medium sauté pan, heat the olive oil over medium-low heat, add the sliced garlic and cook until golden and crispy, about 4 to 5 minutes. Remove the garlic with a slotted spoon onto a paper-towel-lined plate. In batches, add a few sage leaves to the hot oil and fry until just crisp. Remove with a slotted spoon and place on the paper-towel-lined plate. Reserve the oil. Season the garlic and sage with salt.
- Brush the halibut with the garlic-and-sage-scented olive oil. Heat a grill pan to medium-high heat. Grill each side of the fish for 3 to 5 minutes and season with salt and pepper. Remove and top with the reserved garlic and sage chips.

GRILLED HALIBUT SANDWICHES WITH CHORIZO MAYO
The Chorizo Mayo sends this sandwich outta bounds. I even love it as a dip with my Spicy Seasoned Plaintain Chips! Also the halibut is delicious cooked on the grill or in a saute pan with a little oil.

- To a small saute pan, add 1/2 cup of the canola oil and the annatto seeds. Turn the heat to medium and allow the annatto seeds to color the oil, stirring often, 2 to 3 minutes. Strain and reserve the oil.
- To a food processor, add the green onions, garlic, lime juice and zest, jalapeno, cilantro, cumin, chile flakes and some salt and pepper. Turn the food processor on and stream in the annatto-colored oil plus the remaining 1/2 cup canola oil. Process until thoroughly combined.
- Put the halibut fillets into a resealable bag and pour in the marinade. Place in the refrigerator and marinate for 20 minutes before grilling.
- Preheat the grill to medium-high heat. Remove the halibut from the marinade and place on the hot grill, 5 to 8 minutes per side.
- Butter the insides of the ciabatta rolls and place them buttered-side down on the grill, then flip. Grill the rolls until both sides are lightly toasted and crispy around the edges. Smear the inside bottoms and tops of bread with the Chorizo Mayo. On the bottom slice of bread, put a layer of pickles and red onions. Place the halibut on the onions, then top with some tomato, cabbage and the top bun. Repeat for the remaining sandwiches.
- Kosher salt and freshly ground black pepper
- Remove the chorizo from the casing. Heat the canola oil in a nonstick pan over medium heat and add the chorizo, breaking it up into small pieces with a wooden spoon as it cooks. When the sausage has browned, and the fat had rendered and the oil in pan is red, about 7 minutes, then remove from the heat and cool.
- In a mixing bowl, combine the chorizo and oil from the pan with the mayo, garlic and scallions. Season with the cilantro, lemon zest and juice and some salt and pepper. Place in the fridge until ready to use.
HALIBUT, GRILLED, WITH RED CURRANT GARLIC SAUCE
This is my original recipe. It is so easy you won't believe how good it is. Beautiful white halibut, lightly smoky from the BBQ, with a sauce of red currant jelly and garlic. Feel free to add a bit of finly chopped jalapino if more heat is your taste. If you can't find red currant jelly, seedless red raspberry works well, but will be sweeter. You can easilly substitute Orange Roughy. Cod is much cheaper, and will work, but use a fish basket to grill it, as it will fall apart.

- Prepare BBQ. Preheat if using a gas BBQ. Or prepare charcoal with some mesquite chunks.
- Place jelly, garlic slices, and jalapino if desired, into a microwave safe cup. Microwave 30 sec, leave in microwave.
- Rinse and completely dry fish fillets, brush with EVOO on both sides.
- Place the fish on your grill. It should cook about 5-7 minutes on each side.
- Halibut and Orange Roughy won't exactly "flake", but if you can pull the grain apart with a fork, it is done. If using Cod, it will flake easily when done.
- Place fish on plates, remove your sauce from microwave, remove the garlic slices, and drizzle sauce over and around fish.
- NOTE: This is very nice served on a bed of rice pilaf, drizzling the sauce over all.

- Combine marinade ingredients in a bowl, place fillets in marinade, ensuring they are completely covered,refrigerate 2 hours.
- Vegetables:.
- Heat 1 tablespoon oil in a wok or pan, add garlic, ginger and chili stir-fry until fragrant, Add capsicum, stir-fry until capsicum is tender.
