Brown Sugar Ribs with Pineapple Relish image

3/4 cup packed brown sugar
2 tablespoons paprika
2 tablespoons kosher salt
2 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
2 cloves garlic, minced
2 oranges, juiced
2 racks baby back ribs (pork ribs), cut into 2-rib pieces
1 1/2 cups diced fresh pineapple
1/4 cup chopped fresh cilantro
1 tablespoon honey
1/2 teaspoon chili powder
Pinch kosher salt
1 jalapeño, seeded and diced
1 small red onion, diced
1 lime, zested and juiced

Steps:

  • For the ribs: Preheat the oven to 325 degrees F.
  • Mix together the brown sugar, paprika, salt, cayenne, pepper, garlic and orange juice in a large bowl. Add the ribs and toss until coated evenly.
  • Cut an aluminum foil sheet that is 18 inches wide and 24 inches long and place on top of a baking sheet. Tip the ribs mixture onto the foil along with any extra juices from the mixing bowl. Fold the foil ends over the ribs, followed by the sides, and then seal the foil tightly to completely enclose. Bake until very tender, about 2 hours.
  • For the relish: Meanwhile, add the pineapple, cilantro, honey, chili powder, salt, jalapeño, red onion and lime zest and juice to a medium bowl and mix everything together. Set aside.
  • Remove the ribs from the oven and preheat the broiler.
  • Carefully open the foil pack to expose the ribs. Arrange the ribs so that the meaty top sides of the ribs are upright and place them under the broiler to caramelize, about 5 minutes.
  • Transfer the ribs to a platter or board, top with the cold pineapple relish and serve.

1 large red onion, cut into ¼-in/6-mm slices
¾ cup (180 mL) soy sauce
¾ cup (180 mL) vegetable oil
½ cup (120 mL) apple cider vinegar
½ cup (120 mL) water
1 jalapeño chile, sliced
Habanero Vinegar
½ habanero chile, stemmed and seeded
⅓ cup (80 mL) white wine vinegar
Pineapple Glaze
Two 6 oz. (180-mL) cans pineapple juice
¼ cup (50 g) firmly packed brown sugar
Pineapple Salsa
½ pineapple, diced
1 small red onion, diced
3 small jalapeño chiles, diced
⅓ cup (55 g) diced red bell pepper
⅓ cup (8 g) chopped fresh cilantro
2 Tbsp. canola oil
Juice of 1 lime
Kosher salt
Jerk Spice Rub
2 Tbsp. garlic powder
2 Tbsp. onion powder
1 Tbsp. ground allspice
1 Tbsp. kosher salt
2 tsp. grated nutmeg
2 tsp. cascabel or ancho chile powder
2 tsp. ground cinnamon
2 tsp. ground cayenne pepper
1 tsp. freshly ground black pepper
Two 2-lb (910 g) racks baby back ribs

Steps:

  • To make the jerk marinade: In a medium bowl, combine the onion, soy sauce, oil, vinegar, water, and jalapeño. (To make ahead, refrigerate in an airtight container for up to 3 days.)
  • To make the habanero vinegar: In a food processor, com¬bine the habanero chile and vinegar and purée until smooth. Pour into a small bowl. (To make ahead, refrigerate in an airtight container for up to 1 month.)
  • To make the pineapple glaze: In a small saucepan, combine the pineapple juice and brown sugar. Bring to a boil over medium heat and cook until sauce is thick and reduced to about one-third, about 15 minutes. (To make ahead, refrigerate in an airtight container for up to 3 days.)
  • To make the pineapple salsa: In a medium bowl, combine the pineapple, onion, jalapeños, bell pepper, cilantro, oil, and lime juice. Season with salt. (To make ahead, refrigerate in an airtight container for up to 8 hours.)
  • To make the jerk spice rub: In a small bowl, combine the garlic powder, onion powder, allspice, salt, nutmeg, chile powder, cinnamon, cayenne, and black pepper in a small bowl.
  • Use a butter knife to pry the membrane off the bone side of the ribs. Once you get a piece of the membrane loose, grab it with a paper towel and pull it toward the other end of the slab to remove it. Rub the Jerk Spice Rub evenly over the ribs. Arrange the ribs in a 15-by-10-in/38-by-25-cm baking pan. Pour the Jerk Marinade over the ribs, turning to coat both sides. Cover baking pan with aluminum foil and refrigerate for at least 6 hours and up to 24 hours.
  • Remove ribs from marinade, letting the excess drip off. Transfer the ribs to a baking sheet and allow to come to room temperature, about 30 minutes. Brush with the Habanero Vinegar.
  • To cook ribs using a charcoal grill: Prepare grill for indirect cooking over medium heat. Place a shallow metal pan filled with water in the center of the grill and arrange the hot coals around it. Lightly oil the grill grates. Place the ribs on the grate directly above the water-filled pan, cover the grill, and cook until tender, 1 1/2 to 2 hours. Add coals as needed to maintain medium heat.
  • To cook ribs using a gas grill: Preheat the grill with all the burners on high. Lightly oil the grill grates. Place the ribs on the grate, turn off the burner directly under the ribs, and reduce the other burners to medium heat. Cover the grill and cook until tender, 1 1/2 to 2 hours.
  • After 45 minutes, brush the ribs with some of the Pineapple Glaze, and brush them two or three times before serving. Do not flip the ribs during cooking. When the ribs are done, they will be well browned and the meat will have shrunk back from the ends of the bones. Transfer ribs to a cutting board and let stand 5 minutes before cutting rack into individual ribs. Serve warm with the Pineapple Salsa.

½ cup Burgundy wine
¼ cup barbeque sauce, plus more for basting
¼ cup cider vinegar
¼ cup hot pepper sauce
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
4 pounds country-style pork ribs
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • Stir wine, barbeque sauce, cider vinegar, hot pepper sauce, Worcestershire sauce, and mustard together in bowl until well mixed. Place ribs in a baking dish; pour Burgundy wine mixture over ribs and coat completely.
  • Mix onion powder and garlic powder together in a bowl. Dust ribs with powder mixture; let marinate 2 hours, turning once.
  • Preheat grill for medium-low heat and lightly oil the grate.
  • Grill ribs, covered, over indirect heat on the preheated grill for 45 minutes, turning once. Baste with barbeque sauce and grill until meat is tender, about 15 minutes, turning and basting frequently.

1 cup water, divided
1/2 cup reduced-sodium soy sauce
2 tablespoons lemon juice
2 tablespoons canola oil
1 tablespoon brown sugar
1 teaspoon garlic powder
1 teaspoon pepper
6 bone-in country-style pork ribs (1-1/2 inches thick and 14 ounces each)

Steps:

  • In a small bowl, combine 1/2 cup water, soy sauce, lemon juice, oil, brown sugar, garlic powder and pepper. Cover and refrigerate 1/2 cup mixture for basting. Pour remaining mixture into a large resealable plastic bag; add the ribs. Seal bag and turn to coat. Refrigerate for 8 hours or overnight., Drain and discard marinade; place ribs and remaining water in a 3-qt. microwave-safe dish. Cover and microwave on high for 20-25 minutes or until meat is tender., Drain ribs. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. PINEAPPLE GRILLED BBQ RIBS

This was my 1st attempt at making ribs years ago, and is still my most requested recipe with family and friends. And, it works great with Baby backs, Spares, and St. Louie's (I prefer the St. Louis). And the longer they marinate in the fridge the better. Most importantly, don't fret over exact measurements for this recipe...I eyeball it, and it always comes out great.

4 meaty pork rib racks, cut into 3-5 bone sections (depending on cut)
1 whole fresh pineapple
1 1/2 cups brown sugar
2 (18 ounce) bottles barbecue sauce (I prefer Sweet Baby Rays)
1 dash liquid smoke
1 orange, zest of, with remaining orange cut into 1/4-inch slices
1 tablespoon chili powder
1 tablespoon garlic powder
salt and pepper

Steps:

  • wash the rough outside skin of the pineapple and slice off the bottom and leaves. Cut the skin off in 1/2"-3/4" slices. Set the remaining pineapple aside.
  • In a large stock pot (15 qt is best), add the pineapple skin slices, 1 cup brown sugar,2 cups BBQ sauce, the orange slices, dash of liquid smoke, and the rib sections.
  • Add enough water to the pot to cover the ribs completely, and bring to a boil. Reduce heat and simmer ribs for 40 minutes. Don't overcook them.
  • Remove ribs from pot and set aside to cool.
  • While ribs cool, make a rub from the orange zest, remaining brown sugar, chili powder, garlic powder, and salt and pepper to taste.
  • When ribs are cool enough to handle, apply rub to both sides of meat. Place ribs in a plastic freezer bag, and allow to marinate for 3 or 4 hours (or longer if you prefer).
  • After marinating time, add 1 cup of BBQ sauce to the bag and coat ribs. Allow them to come to room temperature in the bag.
  • In the mean time, slice the remaining pineapple into 1/2" thick rings and brush with BBQ sauce. I occasionally add a tsp of honey to the BBQ sauce for grilling --
  • Heat BBQ grill to 300 degrees. Place ribs on grill, and brush with BBQ sauce, turning frequently and basting with sauce, about 20 minutes, being careful not to let sauce burn. Reduce heat if necessary.
  • During the last 8 minutes of cooking, add the pineapple slices to the grill, turning once and allowing them to carmelize and brown with grill marks.
  • Remove ribs and pineapple to a serving platter and enjoy.

1/2 small pineapple, peeled, cored and sliced into 1/2-inch-thick rings
1 red bell pepper
1 tablespoon canola oil
1/2 small jicama, peeled and finely diced
1 small red onion, finely chopped
2 red chile peppers (such as Thai bird or Fresno), stemmed and finely diced
3 tablespoons rice vinegar
2 tablespoons extra-virgin olive oil
3 tablespoons finely chopped fresh basil
Kosher salt and freshly ground pepper

Steps:

  • Preheat a grill to high. Brush the pineapple and bell pepper with canola oil; grill, turning, until the pineapple is golden brown on both sides and the pepper is slightly charred, about 6 minutes.
  • Let the bell pepper cool, then peel, seed and dice. Dice the pineapple and place in a bowl. Add the bell pepper, jicama, red onion, chiles, vinegar, olive oil and basil; season with salt and pepper and toss.

3-4 country style ribs (boneless)
1 cup italian dressing
3 slices fresh ripe pineapple
1/4 cup chopped fresh cilantro
1/4 cup diced red onion
1 tbsp fresh lime juice
1 tsp lime zest
2 tsp minced serrano or jalepeño pepper
1 clove garlic, finely chopped
2 tbsp olive oil

Steps:

  • Marinate ribs in a large plastic zip bag with the italian dressing for at least one hour. Preheat grill to approximately 400. Slice the lower 2 inches off the fresh pineapple, slice off from remaining fruit three 1/2" slices. Core/skin them, then grill for approx. 5 minutes per side. Some charring is ok, but don't burn them. Remove from the grill, dice, and place in a bowl with remaining ingredients. Watch the cilantro, as a little goes a long way! Remove ribs from marinade and remove excess from the meat. Grill at least 5-7 minutes per side until done (use thermometer, as they are usually pretty thick). Arrange on a plate and spoon on liberal amounts of salsa. Side note: Try serving with rice pilaf or country style smashed potatoes (skin on). You may vary the heat and associated flavor from the peppers by experimenting with different varieties.

1 tablespoon chili powder
1 1/2 tablespoons light brown sugar, packed
3/4 teaspoon garlic powder

Pineapple Salsa*:
3 slices pineapple, cut crosswise about 1/2-inch thick, trimmed OR 3 slices canned pineapple, drained
1 jalapeno pepper, halved lengthwise, seeds and veins removed

*Or substitute any store-purchased fruit salsa.

Steps:

  • In a shallow bowl, combine chili powder, brown sugar, garlic powder, onion powder, and salt. Sprinkle both sides of pork with spice mixture.
  • Prepare a grill to medium-high heat and lightly oil the grate. Grill pork until internal temperature reaches 160 degrees F, 4 to 5 minutes per side. Grill pineapple (if using fresh) and jalapeno until lightly charred, 2 to 3 minutes per side. Remove chops from grill and let rest 5 minutes.
  • Meanwhile, dice pineapple and finely dice jalapeno. In a medium bowl, combine pineapple, jalapeno, and lime juice. Season to taste with salt.
  • Bell peppers or zucchini, cooked on the grill with the rest of the meal, would be an easy and flavorful side dish. Grill-warmed tortillas would be nice, too. You can also make the recipe using bone-in center rib chops or boneless chops. You can make the salsa with grilled peaches, nectarines or mangoes. If you like, add chopped onion or cilantro to the salsa. Likewise, feel free to play with the rub ingredients to make the mixture your own.
