FRIED CATFISH AND GREEN TOMATO KABOBS



Fried Catfish and Green Tomato Kabobs image

Oil, for frying
1 cup sweet chili sauce
2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 teaspoons hot sauce
1 1/2 pounds catfish fillets, cut into 2-inch cubes
2 medium-sized unripe tomatoes, cut into wedges
1 large Spanish onion, cut into wedges
3 cups cornmeal
2 tablespoons Cajun seasoning
20 slices bacon

Steps:

  • Heat the oil in a tall, narrow stockpot to 350 degrees F.
  • In a large mixing bowl, combine the chili sauce, soy sauce, Worcestershire sauce and hot sauce. Add the catfish cubes, tomatoes and onions and toss to coat.
  • In a shallow, wide dish, combine the cornmeal and Cajun seasoning.
  • To assemble the kabobs: First skewer through one end of a bacon slice and then a cube of catfish. Wrap the bacon around and then skewer a wedge of tomato. Wrap the bacon around again, skewer a wedge of onion and then wrap the bacon and skewer one last time. Repeat with the remaining skewers and ingredients.
  • Roll the kabobs in the cornmeal mixture, drop in the oil in batches and cook until golden brown, about 3 minutes. Remove to a paper-towel-lined plate and repeat with the remaining skewers.
  • Serve on the stick!

1 pound skinless swordfish
1 pound skinless salmon
24 cherry tomatoes
1 cup lightly packed fresh basil
1/2 cup olive oil
1 clove garlic
Salt and pepper

Steps:

  • Heat grill to high. Cut swordfish and salmon into 24 cubes (about 1 1/2 inches each); thread against the grain on 8 skewers, alternating with tomatoes.
  • In a blender, puree basil, oil, and garlic until smooth. Season with salt and pepper. Reserve half.
  • Brush kabobs with half of basil oil; season with salt and pepper. Grill until fish is opaque, 6 to 10 minutes, turning occasionally. With a clean brush, coat kabobs with reserved basil oil. Serve immediately.

1 tablespoon packed brown sugar
1 teaspoon paprika
1/2 to 1 teaspoon ground ancho chile pepper
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/8 to 1/4 teaspoon cayenne pepper
1 pound uncooked shrimp (16-20 per pound), peeled and deveined
3 medium peaches, each cut into 8 wedges
8 green onions (light green and white portion only), cut into 2-inch pieces
Olive oil-flavored cooking spray
Lime wedges

Steps:

  • Mix brown sugar and seasonings. Place shrimp, peaches and green onions in a large bowl; sprinkle with brown sugar mixture and toss to coat. On four or eight metal or soaked wooden skewers, alternately thread shrimp, peaches and green onions., Lightly spritz both sides of kabobs with cooking spray. Grill, covered, over medium heat or broil 4 in. from heat 3-4 minutes on each side or until shrimp turn pink. Squeeze lime wedges over kabobs.

2 jalapeno peppers, seeded and finely chopped
2 tablespoons white wine vinegar
3 teaspoons salt, divided

1 to 1-1/2 teaspoons ground cumin
1 to 1-1/2 teaspoons ground coriander
3/4 to 1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
4 catfish fillets (6 ounces each)

Steps:

  • For salsa, in a large bowl, combine the tomatoes, onion, jalapenos, vinegar and 1 teaspoon salt. Cover and refrigerate for at least 30 minutes., Combine the paprika, chili powder, cumin, coriander, cayenne, garlic powder and remaining salt; rub over catfish. 1/3 cup orange marmalade
1 teaspoon finely chopped fresh rosemary leaves
1/4 teaspoon salt
1/2 lb dark-orange sweet potatoes, peeled, cut into 8 pieces
2 tablespoons water
1/2 lb pork tenderloin, cut into 1-inch pieces
1 small zucchini, cut into 8 slices

Steps:

  • Heat gas or charcoal grill. In 1-quart saucepan, heat marmalade, rosemary and salt to boiling, stirring frequently. Remove from heat; set aside.
  • In 1-quart microwavable bowl, place sweet potato pieces and water. Cover loosely with microwavable paper towel. Microwave on High 2 to 3 minutes, stirring once, just until potatoes are tender (do not overcook). Drain sweet potatoes; rinse with cold water.
  • On each of four 10- to 12-inch metal skewers, carefully thread pork, sweet potatoes and zucchini (with cut side facing out) alternately, leaving 1/4-inch space between each piece.
  • Cover and grill kabobs over medium heat 8 to 10 minutes, turning once and brushing with marmalade glaze during last 3 minutes, until pork is no pink in center.

3 tablespoons lemon juice
12 uncooked jumbo shrimp (about 3/4 lb.), peeled and deveined
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. Peel and cut potatoes into 1-inch cubes (about 24 cubes). Toss with 2 tablespoons oil, rosemary and 1/2 teaspoon chili powder. Transfer to a greased 15x10x1-in. baking pan. Roast 20-25 minutes or until almost tender, stirring occasionally. Cool slightly., Meanwhile, in a small bowl, whisk lemon juice and the remaining oil and chili powder until blended. Reserve 2 tablespoons marinade for basting. Add shrimp to remaining marinade and toss to coat.
