GRILLED BREAKFAST PIZZA WITH SAUSAGE GRAVY



Grilled Breakfast Pizza with Sausage Gravy image

All the classic flavors of a Southern breakfast-on a pizza! Make the sausage gravy indoors, and then turn your outdoor grill into a pizza oven.

Number Of Ingredients 10

1 tablespoon vegetable oil, plus more for the pizzas and grill grates
1 pound bulk breakfast sausage
2 tablespoons all-purpose flour, plus more for dusting
2 1/2 cups whole milk
Kosher salt and freshly ground pepper
1 pound frozen pizza dough, thawed
8 ounces sharp white Cheddar, shredded (about 3 heaping cups)
4 large eggs
2 scallions, thinly sliced
Hot sauce, for serving

Steps:

  • Prepare an outdoor grill for medium heat. Line a baking sheet with parchment paper.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the sausage, and cook, stirring and breaking up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Remove from the heat, and use a slotted spoon to transfer the sausage to a plate.
  • Reserving 2 tablespoons of drippings in the skillet (drain or add oil as needed), return it to medium-high heat. Whisk in the flour, and cook, whisking frequently, until the mixture becomes loose and turns a light tan color, 1 to 2 minutes. Slowly whisk in the milk, 1/2 teaspoon pepper and 1/4 teaspoon salt. Simmer, whisking frequently, until the sauce has thickened to the consistency of thin gravy, 6 to 8 minutes. Return the cooked sausage to the skillet, and stir. Remove from the heat, cover and set aside.
  • Divide the pizza dough into 4 balls. Dust a clean flat work surface with flour, and roll each ball into an 8-inch circle. Transfer the dough circles to the prepared baking sheet, and brush both sides with oil.
  • Lightly oil the grill grates. Grill the crusts until they start to puff and distinct grill marks appear on the underside, about 1 minute. Flip. Evenly divide the Cheddar among the crusts, leaving a small well in the center of each. Immediately crack 1 egg into each well. Grill, covered, until the whites have completely set and the Cheddar has melted, 8 to 10 minutes.
  • Meanwhile, reheat the sausage gravy if needed. Remove the pizzas from the grill, and drizzle each with a couple spoonfuls of warm gravy. Garnish with the scallions. Serve immediately with hot sauce and any remaining gravy served on the side.

Breakfast heavy hitters sausage and home fries are piled on grilled pizza dough along with cheddar and sage to create a pie that holds all the awesomeness of a morning meal in every bite.

For the dough
4 1/2 cups unbleached bread flour, chilled
1 3/4 teaspoons salt
1 teaspoon instant yeast
1/4 cup olive oil
1 3/4 cups ice cold water
Semolina flour or cornmeal for dusting
Olive oil for brushing
For the toppings
Home fries, cut into 1/4 dice
6 gilled breakfast sausage patties, crumbled
8 oz sharp cheddar cheese, grated
3 tablespoons roughly chopped fresh sage

Steps:

  • To Make the Dough: In the bowl of an electric mixer, whisk together flour, salt, and yeast. Add in oil and water and mix on low speed with paddle attachment until combined. Switch to dough hook and knead on medium speed until dough clears sides, but sticks to the bottom of the bowl, 5-7 minutes. Turn dough out onto lightly floured surface and divide into 6 equal pieces. Transfer to a parchment paper lined baking sheet, brush lightly with olive oil, cover, and place in refrigerator for at least 1 day, up to 3.
  • To grill the pizza: Remove dough from fridge 1 1/2 hours before lighting the fire. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate for indirect cooking. Clean and oil the grilling grate.
  • Stretch dough out to a long oval or rectangle on a surface dusted with semolina flour or cornmeal. Lightly brush dough with extra-virgin olive oil and place on hot side of grill, oiled side down. Cook until bottom is browned and crisp and top side starts to bubble, 1-2 minutes. Remove dough to plate, cooked side up.
  • Sprinkle pie with home fries, crumbled cooked sausage, cheddar cheese, and sage. Place pizza on cool side of the grill and cover. Cook until cheese is melted and dough is cooked through, 4-7 minutes. Remove from the grill, slice, and enjoy. Repeat with remaining dough, there should be enough toppings for up to 6 small pies.

This is a fun breakfast that I've made with some of my grandkids. I usually let them 'build' their own. You can add or subtract anything that you'd like - sometimes we've added pineapple, pepperoni, green onions, etc.

2 ounces turkey sausage, sliced
1/4 cup sliced mushrooms
1 pizza crust, prebaked 6-inch
1/2 cup bell pepper, red and green, sliced
3 large eggs
1/2 cup mozzarella cheese, shredded

Steps:

  • Place pizza shell on medium-heat flat grill or grooved grill for 3 minutes on each side.
  • Sauté sausage and mushroom together. Remove from pan and keep warm.
  • While pizza shell is heating, place peppers in pan and cook for 1 minute. Add eggs and scramble together. Cook until eggs are almost set.
  • Arrange cooked egg/pepper mixture on pizza shell; garnish with mushrooms and sausage. Sprinkle with cheese and place under broiler for 1 minute.

These breakfast sandwiches taste like they came straight off the griddle at the diner with the bonus of the smokiness from the grill. And since the entire sandwich is prepared on a pizza stone, there's barely any cleanup. If you need another reason to try it, the bacon gets really crispy in half the time it would take on the stove. Be sure to have the eggs cracked, bacon ready to go and English muffins buttered before starting to cook so the process moves smoothly.

2 tablespoons butter, at room temperature
2 English muffins, split
2 slices American cheese
2 large eggs
Kosher salt and freshly ground black pepper
4 slices bacon
Hot sauce, for serving

Steps:

  • Place a grill-safe pizza stone (see Cook's Note) that is at least 14 inches in diameter on a grill. For gas grills with 3 or more burners: Turn all the burners to high heat and close the lid. Let the stone heat until the internal temperature of the grill is 500 degrees F, about 15 minutes. For charcoal grills: Fill a chimney starter with enough charcoal for high heat, then light it (be sure to consult the grill manufacturer's guide for the best results for high-heat cooking). Close the lid and let the stone heat until the internal temperature of the grill is 500 degrees F, about 30 minutes.
  • Butter the cut side of all 4 English muffins halves. Place 1 slice of cheese on each of the 2 bottom halves. Crack the eggs into a small bowl and sprinkle the top with 1/4 teaspoon salt and a few grinds of pepper; don't beat the eggs.
  • Place the bacon in the center of the stone, away from the edges to avoid too much fat running into the grill. Close the lid and cook until the bacon starts to shrink and crisp on the bottom, 3 to 4 minutes. Open the lid and flip the bacon.
  • Place the 2 bottom muffin halves on the stone, cheese-side up. Place the 2 top muffin halves on the stone, buttered-side down. Carefully pour the eggs onto an empty part of the stone (it should be hot enough to seize the whites right away; if they run a little too much, use a rubber spatula to stop it). Close the lid and cook until the bacon is extra crispy, the cheese has melted, the egg whites are set, and the yolk is still runny, 3 to 5 minutes.
  • If using a gas grill, turn it off. Transfer the 2 bottom muffin halves to plates. Break each slice of bacon in half and place 4 pieces on top of the cheese on each bottom half. Using a spatula, separate the eggs and place on top of the bacon. Drizzle with hot sauce, if desired. Cover the sandwiches with the 2 top muffin halves.
