1 small banana, sliced
1/2 cup fat free sour cream
3 tablespoons reduced-fat peanut butter
4 teaspoons Splenda sugar substitute (or to taste)
2 teaspoons unsweetened cocoa powder
8 ounces ice cubes, crushed

Steps:

  • Place sliced banana in freezer for 10 minutes or until slightly firm.
  • Process all ingredients in a blender until smooth, stopping to scrape down sides.
  • Serve immediately.
  • Makes 2, 8 oz servings or 1, 16 oz drink.

My husband made this for me one Sunday morning. I make it all the time now. Great pick-me-up when you have an energy leakage. Make sure you have lots of milk on hand when you eat this!

2 slices whole wheat bread
1 large ripe banana
2 tablespoons honey, to taste
1/4 cup peanut butter, to taste

Steps:

  • Toast bread to your liking.
  • Divide peanut butter and spread on toast.
  • Drizzle honey over the peanut butter.
  • Cut bananas length wise and lay across peanut butter.
  • Heat in microwave for 10 seconds.
  • Enjoy with a glass of milk.
  • Note: I usually half this if I'm eating alone-it is pretty filling.

4 large flour tortillas
1/2 cup chunky peanut butter
4 bananas, lightly mashed
1/4 cup honey
1/2 teaspoon ground cinnamon
2 teaspoons butter

Steps:

  • Spread peanut butter and mashed bananas over the center third of each tortilla.
  • Drizzle with honey and sprinkle with cinnamon. Roll up tortillas, folding ends under to seal.
  • Melt butter in a heavy nonstick skillet over medium heat. Saute filled tortillas 2-3 minutes per side or until golden.

Warm bananas, gooey marshmallows, melted chocolate and coconut - all grilled to perfection! What could be better? Try this dessert after any meal. It's a definite crowd pleaser for adults and kids.

4 bananas, unpeeled
4 tablespoons mini marshmallows
4 teaspoons mini chocolate chips
4 teaspoons coconut

Steps:

  • Cut 4 12-inch sheets of heavy duty foil. Set aside.
  • Heat your grill. if using one of Kenyon's many grill options you'll want a medium heat (4 bars).
  • With a sharp knife, make a deep lengthwise cut along the inside curve of each banana, being careful not to cut all the way through.
  • Open slit to form pocket.
  • Crimp and shape 1 sheet of foil around each banana, forming boats. Once foil is shaped, set aside again.
  • Holding each banana with the pocket slits facing up, fill each with 1 tablespoon marshmallows, 1 teaspoon coconut and 1 teaspoon chocolate chips.
  • Return each banana to its foil boat and seal the top of the foil, leaving 2 to 3 inches of headspace.
  • Place bananas on the grill and cover for 4 to 5 minutes per side or until the marshmallows soften.
  • If you would like, add extra toppings like nuts or whipped cream, after you have removed the bananas from the grill.
  • serve warm and enjoy!

1 banana (peeled, split into three section, SEE NOTE)
2 slices bread (1.5cm thick Italian style or equivalent gluten free)
1 tablespoon crunchy peanut butter (light)
1 teaspoon honey
1/8 teaspoon cinnamon (a pinch)
honey (extra to drizzle) (optional)

Steps:

  • NOTE - to split banana three ways, peel and gently place thumb on the tip of the banana and push down through the middle of the banana, it will split into three.
  • Preheat griller/broiler to medium.
  • Cut the banana in half crossways (creating 6 pieces).
  • Place the bread slices on a baking tray, place under the griller/broiler and cook for 1 to 2 minutes or until one side is toasted.
  • Spread the peanut butter on the untoasted side of each slice.
  • Top with the banana (3 pieces per slice) and brush pieces with the honey.
  • Place back under the griller/broiler for 2 minutes or until banana is lightly browned.
  • Sprinkle with cinnamon and drizzle with extra honey if desired.
  • Serve.
