This cooling Indian dish is perfect as an accompaniment to grilled meats. Curry leaves can be found at your local Indian store. If you can't find them, they can be omitted, but they do add a unique flavor and smell.

1 cup jasmine rice
2 cups water
1 tablespoon ghee (clarified butter)
1 dried red chile pepper, broken in half
1 teaspoon black mustard seeds
½ teaspoon ground turmeric
4 fresh curry leaves
1 pinch asafoetida powder
¼ cup milk
1 cup plain yogurt
salt to taste

Steps:

  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, 20 to 25 minutes.
  • Heat the ghee in a small skillet over medium heat. Add the broken chile pepper, and cook until fragrant, about 30 seconds. Stir in the black mustard seeds, and cook until they begin to pop, about 30 seconds more. Remove from the heat, and stir in the turmeric, curry leaves, and asafoetida powder.
  • Whisk the milk, yogurt, and spice ghee together in a large bowl until smooth. Fold in the rice until well mixed. Season to taste with salt, then allow to cool to room temperature before serving.

1 cup long-grain rice
2 cups water
1 teaspoon brown mustard seeds
2 teaspoons mung dal
nonstick cooking spray
1/2 teaspoon oil
1 serrano chili, minced
1 tablespoon gingerroot, minced
1/4 cucumber, peel, seed and mince
2 cups plain nonfat yogurt
1/2 cup nonfat milk
1 teaspoon salt
1/4 cup cilantro, minced

Steps:

  • Bring water to boil in saucepan and add rice. Return to boil, then reduce heat, cover and simmer until tender and water is absorbed, 20 to 25 minutes.
  • While rice is cooking, toast mustard seeds and dal in skillet sprayed with nonstick cooking spray and oil until mustard seeds begin to pop, 2 to 3 minutes.
  • Fluff rice with fork and stir in mustard seeds, dal, chile, ginger and cucumber.
  • Combine yogurt, milk and salt. Lightly stir into rice with fork.
  • Sprinkle with cilantro.

1 cup jasmine rice
1 1/4 teaspoons salt
1/4 cup cold milk
1/2 cup plain yogurt (preferably the Greek or acidophilus variety), lightly beaten with a fork or whisk
3-4 cherry tomatoes, quartered and lightly salted
1/4 cup finely chopped cilantro
2 teaspoons olive or canola oil
1/4 teaspoon urad dal (use yellow split peas or lightly crushed raw peanuts as a substitute)
1/2 teaspoon whole brown mustard seeds
2-3 dried hot red chilies
10 or so fresh curry leaves (optional)

Steps:

  • Combine the rice, 3 cups water, and the salt in a medium pan and bring to a boil. Cover tightly, turn heat to very, very low, and cook 25 minutes. Empty rice into a wide bowl and add the milk. Stir to mix and to cool off the rice a bit. Now add the yogurt and mix again. Add the tomatoes and cilantro and mix them together.
  • Put the oil in a small pan or frying pan and set over medium-high heat. When hot, put in the urad dal. Let it turn reddish. Put in the mustard seeds and chilies. As soon as the mustard seeds pop and the chilies darken, add the curry leaves. A second later, pour the oil and spices over the yogurt-rice mixture. Stir to mix.

Remove from heat; let stand, covered, 10 minutes. Spread rice evenly on a rimmed baking sheet; let cool to just slightly warmer than room temperature, about 20 minutes.
  • Divide rice evenly between 2 shallow bowls. Add 1/4 cup yogurt and 2 tablespoons milk to each bowl; gently stir until combined. Stir in salt to taste, and set aside.
  • Heat oil in small saucepan over medium until shimmering, about 3 minutes. Add urad dal and mustard seeds; cook, stirring constantly, 15 seconds (mixture will sizzle). Add chiles and, if using, curry leaves; cook, stirring constantly, until dal turns light brown and curry leaves become almost translucent, about 45 seconds. Immediately pour hot mixture (tadka) evenly over prepared yogurt rice.
