Had some ripe avocados left over. They were extras from guacamole the previous weekend. So I gave this quick and extremely easy recipe a shot on the grill, and the wife and kids loved it. Fresh ones are good too. Use paprika instead of the chipotle and chili powder for less spicy. Canola oil can be substituted for olive oil if desired.

¼ cup olive oil, or as needed
1 pinch ground chipotle pepper, or more to taste
1 pinch chili powder, or more to taste
4 avocados, halved and pitted

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Whisk olive oil, ground chipotle pepper, and chili powder together in a bowl; brush over the entire surface of the cut-side of each avocado.
  • Grill avocados, cut-side down, on the preheated grill until grill-lines begin to form on the avocado flesh, about 5 minutes.

  • Whisk 2 tablespoons each lemon juice, tahini and hot water, 1 grated garlic clove, 1/2 teaspoon honey and a pinch each of salt and pepper in a bowl. Brush 2 pitted, peeled and quartered avocados with olive oil; season with salt and pepper. Grill over medium-high heat, flipping, until charred, 30 seconds per side. Top with the tahini sauce and parsley.

2 ripe avocados
1 tablespoon freshly squeezed lime juice
1 tablespoon olive oil
1/2 teaspoon kosher salt

Steps:

  • Gather the ingredients. Clean the grates . Prepare a medium-high (400 F to 425 F) indirect gas or charcoal grill fire.
  • Slice the avocados in half lengthwise. Remove the pit, and immediately cover the flesh with fresh lime juice.
  • Brush a small amount of olive oil onto the surface of each avocado and sprinkle with salt.
  • Oil the grates and place the avocados cut side down over indirect heat on the grill.
  • Grill with the lid open for 4 to 6 minutes until the avocado becomes slightly tender when gently squeezed with tongs. The skin should be crisp and the flesh will have grill marks.
  • Remove from the grill. Serve with a more lime juice and salt, if desired.

6 firm avocados
Salt and freshly ground black pepper
1 tablespoon grapeseed oil
3 tablespoons balsamic vinegar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 teaspoon Dijon mustard
1/4 cup packed fresh flat-leaf parsley leaves, plus a few small sprigs for garnish
3 garlic cloves, lightly crushed with the side of a knife blade and quartered
3/4 cup olive oil

Steps:

  • Preheat the grill.
  • Quarter the avocados and remove the seed. Season with salt and pepper, to taste, and brush with grapeseed oil. Grill the avocado slices over indirect heat, leaving undisturbed for the first 2 to 4 minutes or so to let the seasonings integrate into the surface and to allow the caramelization process to begin. Then, flip the avocados, remove from grill and let rest.
  • Through the feed opening of a running blender add, 1 at a time, the vinegar, salt, black pepper, mustard, parsley, and garlic. Leaving the blender running add the olive oil through the feed opening in a slow thin stream.
  • Serve the grilled avocado with enough of the dressing to coat and garnish with fresh parsley sprigs.

  • Quarter 6 firm avocados; season with salt and pepper and brush with grapeseed oil. Grill over medium-high heat, turning, until marked all over, about 3 minutes.
  • Combine 3 tablespoons balsamic vinegar, 1 teaspoon Dijon mustard, 1/4 cup fresh parsley, 3 garlic cloves (crushed and quartered), 1/2 teaspoon salt and 1/8 teaspoon pepper in a blender. With the blender running, add 6 tablespoons olive oil and puree until smooth.
  • Drizzle the dressing over the avocados and garnish with more parsley.

ROQUAMOLE

I have practically had to sit on my hands to stop myself writing about this before now. Naturally I know Roquefort does not come from Mexico, but it melds deliciously with avocado so I couldn't resist, no more, I hope, will you. And although I have called this incredible dip roquamole, I think it may be better made with a less illustrious bleu. St. Agur out of a wedge-shaped packet is the cheese I keep in the fridge so that I am ever-ready to make this. You don't need to serve blue corn tortilla chips with this; you don't have to serve any kind of tortilla chip with this: though both do add to the luscious eat-me quality here. But I'm also very keen on a huge platter of dippable bits: radishes, carrot batons, sugar snaps, you name it. For me, this can be a dip with drinks, a quick treat for lunch or a greedy solitary dinner. The only meal I've yet to eat it at is breakfast. I think it's just a question of time....

1 cup crumbled Roquefort or St. Agur
1/4 cup sour cream
2 ripe avocados

1/4 cup jarred sliced pickled green jalapenos

  • Crumble or mash the blue cheese with the sour cream in a bowl. Mash in the avocados. If they are ripe, a fork should be all you need. Roughly chop the sliced jalapenos and stir them into the mixture along with the finely sliced scallions. Arrange in the center of a plate or dish, dust with paprika and surround with tortilla chips. Dive in.

1 tablespoon finely chopped shallots (about 1/2 small shallot)
1 tablespoon vegetable oil, plus more for the grill or grill pan
1 tablespoon rice vinegar
2 teaspoons finely grated fresh ginger (about a 1-inch piece)
1 teaspoon white miso paste
1 teaspoon toasted sesame oil
1/2 teaspoon sugar
2 medium, firm-ripe avocados
Kosher salt and freshly ground black pepper
1/4 cup loosely packed fresh basil leaves, torn, for garnish
4 lemon wedges, for serving

Steps:

  • Whisk together the shallots, vegetable oil, vinegar, ginger, miso, sesame oil and sugar in a small bowl; set the marinade aside.
  • Halve the avocados lengthwise, remove the pits and score the interior of each half in a 1/2-inch crosshatch pattern. Set the halves, cut-side up, on a rimmed baking sheet, and sprinkle with some salt and pepper. Spoon the marinade into the avocado cups, dividing evenly (about 1 tablespoon per avocado half), and let stand for 5 minutes while it soaks in. Spread the marinade (with a pastry brush or the back of a spoon) over the entire cut surface of the avocados and gently into the crosshatch cuts.
  • Meanwhile, heat a grill or a grill pan to medium-high. Lightly oil the grill grates or grill pan. Grill the marinated avocado halves, cut-side down, for 2 minutes, gently loosen with a spatula, then continue grilling until the avocados show grill marks and the marinade is fragrant and caramelized, about 2 minutes more. Flip the avocados to their skin side, sprinkle with some salt and pepper and grill for 1 minute. Transfer to individual serving plates, and garnish each with some of the basil and a lemon wedge.

8 ripe avocados, halved, peeled and pitted
1/4 cup olive oil
2 lemons, juice of
1/2 cup olive oil
3 tablespoons garlic, finely minced
3/4 cup basil leaves, thinly sliced
1/2 cup sour cream
1/2 cup parmesan cheese, freshly grated

Steps:

  • Preheat grill or grill pan to medium high heat.
  • Place peeled and pitted avocado halves in a bowl. Drizzle with 1/4 cup olive oil and lemon juice (to prevent oxidation), and sprinkle with a good amount of salt and pepper.
  • Douse a paper towel with some olive oil, then swipe it across the grill so the avocados won't stick.
  • Place avocados on the grill, cut side down and grill for 1 full minute.
  • Meanwhile, preheat a saute pan and add the 1/2 cup of olive oil and minced garlic. Saute until the garlic turns a light brown.
  • Add basil and saute until wilted and transfer to a large glass or ceramic bowl.
  • Take the avocados off the grill and add to the bowl. Mash together well with a fork.
  • Add sour cream and stir. Then add the Parmesan cheese and stir.
  • Serve immediately with chips or crackers.

4 avocados, sliced in half and pitted
1/4 cup olive oil
Kosher salt and freshly cracked black pepper
1/2 cup corn and bean salsa, store-bought or homemade
Hot sauce, for garnish

Steps:

  • Preheat a grill on medium heat to 425 degrees F.
  • Brush the inside of the avocado halves with the olive oil. Place the avocado halves cut-side down on the grill for 1 minute and 30 seconds. Turn the avocado halves 90 degrees to get cross grill marks and cook for another 1 minute and 30 seconds.
  • Remove from the grill and season with salt and pepper. Put about 1 heaping tablespoon of salsa into the center well of each avocado half. Garnish with hot sauce and serve.

1/4 cup bottled picante sauce
1/4 cup monterey jack cheese

salad greens (optional)

Steps:

  • Stir together olive oil and lime juice. Brush avocados all over with olive oil mixture. Sprinkle cut sides of avocados with salt.
  • For charcoal grill, grill avocado halves, cut side down, on the rack of an uncovered grill directly over medium coals for 5 minutes or until browned. Turn avocado halves, cut side up. Fill centers of avocado halves with the 1/4 cup picante sauce and shredded cheese. Cover grill and grill about 5 minutes more or until cheese begins to melt. (For a gas grill, preheat grill. Reduce heat to medium. Place avocado halves on grill rack over heat. Cover and grill as above).
  • Remove avocados from grill. Sprinkle tops of avocado halves with snipped cilantro. If desired, serve on a bed of salad greens with additional picate sauce and sour cream.
